The Best of the (Mid)West! The Spring 2024 Collection launches today, March 27! The boys are back with another wonderful edition of Proof Positive. This week they review Starlight Cart T Huber Cigar Batch. Another fantastic unique bourbon experience. In 2013, the family achieved their goal, and Starlight Distillery became one of the first artisan distilleries in the state producing bourbon. The expansion involved implementing a new 13,000-square-foot stillhouse, adjacent to their original production area. It was in this warehouse that Carl T Bourbon was born, named after the Huber family's patriarch and a lover of the spirit himself. Carl T. and his spouse, Marcella, are the reasons that the family legacy continues into the seventh generation of ownership and distilling.

Starlight Distillery is located at Huber's Orchard & Winery in beautiful Starlight, IN. Their plans for the distillery started in the mid-'90s and they were inspired by their ancestors who once distilled fine brandies in this area in the early 1800s.Producing brandy is no small task and being the first to walk through this process in the State of Indiana was not without its share of frustration. Their master distiller, Ted Huber, and his co-owner Greg Huber spent about 2 years researching and working with our legislators in Indianapolis to pass important legislation that would allow us to produce both wine and brandy. Once this legislation was passed the lighter side of distilling began in the rolling hills of Starlight, IN!Although the first product has been released, they find ourselves busily working to release the next products which include an apple and pear brandy. There were also several products that we produced by infusing their brandy and wines together over the course of the last four years. Those products include our Blueberry Port, Raspberry Infusion, Peach Nectar, Apple, and Pear Infusion. These products have been very popular for them and have been competitive in many dessert wine competitions.

Ted represents the sixth generation of the family owned business that was founded in 1843. His sons Christian and Blake are carrying on the tradition, too. Distilling runs deep in the family's history, and Starlight was officially founded in 1998. In this episode, Ted reflects on early memories of ACSA and offers some insight into his family business.

These two picks from Malloy's finest are a shining example of up and coming Starlight Distillery. They are going to be doing great things in the future I can tell. While the Straight Bourbon is good, the Port Finish knocks it out of the park. Delicious whiskies, on their own, these would also do really well in an Old Fashioned cocktail. Cheers!
