When it comes to choosing where to operate a business, location is often the most important criterion. But if you ask chef Peter Hemsley of upscale seafood restaurant Aphotic, it is beyond that in San Francisco. Just 19 months ago, the chef opened Aphotic in a cavernous, inky black space near the intersection of Folsom and Third streets in SoMa. By the end of the year, it will be closed. Hemsley is adamant that it wasn't the food or even the $215 price tag on the 11-course tasting menu that caused the restaurant to fold. He blames the city. “If I could have found a better location, I would have,” Hemsley told The Standard. “But it's expensive and hard, and, for those who can't, the lesson is: Don't invest in San Francisco, because you won't make it.”
This week, Pat Cobe, senior menu editor of Restaurant Business, and Bret Thorn, senior food & beverage editor of Nation's Restaurant News and Restaurant Hospitality, discussed national food holidays. In a nutshell, they're not huge fans of promotions like National Chicken Wing Day or National Tequila Day, but they do acknowledge that promotions around them can be effective marketing tools and traffic drivers, which are particularly important these days as costs rise and guest counts decline. Pat discussed her recent visit to La Palapa, a Mexican restaurant that has been in New York City's East Village at least for a couple of decades. She gave top marks to the margaritas, guac and churros, enjoyed everything else, and was pleased to see that the restaurant was busy. Bret is continuing to explore his new neighborhood of Sheepshead Bay in Brooklyn, New York, including Wheeler's, a bar and restaurant that, like La Palapa, has been around for decades and serves large portions of perfectly fine food. They also discussed New York Restaurant Week, which is actually a month long this year, and shared strategies for the best ways to capitalize on it (in short, don't cheap out; put your best foot forward). Then Bret shared clips from his conversation with Trevin Hutchins, beverage director of Aphotic, a seafood restaurant in San Francisco, where he offers a very ambitious beverage program, including house-distilled gin that has seaweed as its main botanical. Hutchins also offers a non-alcoholic beverage pairing for the restaurant's tasting menus for which everything is made in-house, and he went into detail about the process for putting that together.

Aphotic is an adjective that means ‘having no light.' Our word of the day combines the Greek prefix ‘A,' meaning ‘without' with ‘photic' (FOE tick) meaning ‘light.' Frequently used in nature, aphotic describes a thing or place that has no light. We were hoping to get some great pictures on our underwater dive. But unfortunately, the aphotic conditions simply made it too dark for that to happen.

I had the pleasure of meeting Damon face-to-face in Berlin at Tresor.Berlin (OFFICIAL) a couple of weeks ago, and am very excited to hear what he's going to bring to our ears. Originally from Philly, Damon is the creator of TechnoFist and is one of the co-creators of SEQUENCE in Washington DC. Damon Bradley, a resident of central Maryland, USA, was born and raised in South Philadelphia. It was here that he was first exposed to the beginnings of house music on Saturday nights on the legendary 105.3 FM WDAS R&B and classic soul radio station back in 1989. A few years later, while searching for new sounds, he stumbled on ambient, techno, and trance nearly simultaneously during the summer of 1993, on Drexel University’s WKDU 91.7 FM. During these formative years, Damon instantly fell in love with the sounds of Josh Wink, Sven Vaeth, Oliver Lieb, The Orb, Joey Beltram, Steve Roach, Aphex Twin, and just about anything released on the Harthouse, Strictly Rhythm, and R&S music labels. He returned to his techno roots in 2010 and started DJ’ing techno in 2015 in Washington DC. Damon’s musical influences span a very broad spectrum from ambient to industrial techno, groovy and soulful house, and melodic progressive trance. Currently, he’s focused on exposing the boundaries of techno to as many people as possible, and he does this using the TechnoFist group and TechnoFist podcast he created in 2013 and 2015, respectively. He curates both new and classic techno on TechnoFist which now has over 2,200 members, mostly from New York, Washington DC, and various European cities. Jason Roberts, born in 1970 Sussex England he is the man behind Seven Below Zero. At an early age Jason took an interest in art both drawings and paintings, his influence being his mother. Also he started to take an interested in music mainly electronic music. Not being a great performer at school leaving at just sixteen years old. Jason sort out work with various temporary agency and found work. Not being content with everyday life in Sussex Jason joined the British Army at the age of seventeen and commenced his training later that year. Jason was one of the eighteen recruits out of seventy six that finished the training course. Being offered a choice of three postings abroad Jason decided to opt for a combat tour which lasted two years. He continued his time in the military and looked at this as a life learning experience. Changing his attitude toward life in general and upon leaving the military Jason returned to Sussex. Being fortunate enough to find employment he worked for a large international company and specialized in logistics. In 2002 he found himself taking a boat across the channel and headed toward France to help his mother find a house there. To this day he is still there and what a journey it had been. Jason started to write poetry and was published in the UK and over time his love of music inspired him to try making music himself. The progression from art, poems to music just seemed natural. Jason was spotted by an Italian record label early on but during time the record label seemed to just become stagnant. So back to being an independent artist Jason got back to work on some new projects. After experimenting with some drum and bass style tracks Jason slipped into experimenting with more ambient and cinematic tones. His style is a mix of cinematic, ambient soundscapes and random synthesizers. Upbeat drums and random drum samplings wrap up his tracks. During 2018 Jason’s fan base started to increase generating over seven thousand fans on his facebook page. During 2019 whilst working on a twenty four track album he was rewarded with over ten thousand radio plays via an online music community. A lifelong musician and composer, NYC-based Auspex deals in dark, metallic sounds and dance floors driven to bedlam. Our next podcast episode comes from an artist who is no stranger to the Erratic series and is a good friend of ours, CHANSKI. He's been featured several times before (last one being 2 years ago), and for this occasion he has graciously submitted the recording from his latest DJ set - an event that took place in our own home turf of Brooklyn, hosted by the Aphotic crew, with Claudio PRC as the main headliner. Tim has been very busy in the studio lately playing with different sounds and gear, carving and finessing his own way. His latest endeavor is a fantastic extended EP, titled "Music For The Ancient", where a few of his tracks are peppered throughout this mix. Needless to say, we were there in that dark Brooklyn warehouse when this show went down and his entire set was as per usual... smooth and beautiful. Sysense started doing this type of thing when he was sixteen and was having a very difficult time in his life and was contemplating taking his life. He remembers walking into a dance club in Houston, Tx and hearing The Smith’s – How Soon Is Now and watching the people on the dance floor react and move to what the Dj was doing. Sysense was amazed at how much fun the people were having and seeing the smiles that were across their faces. At that moment Sysense knew what he wanted to do .He wanted to make people happy and have them forget their problems even if for just a little while. Sysense went out and bought turntables, some records, and started teaching him self how to blend the songs together. Sysense knew nothing about what I was doing and could not beat-match to save his life. Thankfully, he had met a Dj that took him under his wing and began teaching him the basics of beat-matching, blending, and the proper use of a mixer. Sysense then started listening to mix tapes of other Dj’s to get more of a understanding of what was happening and the journey they were trying to convey through music. Sysense remembers that he would practice all the time, recording everything that he did on whatever medium there was available at that time, tape machine, reel to reel, and the old trusty VCR, which was his favorite recording method of them all. This allowed him to hear the good along with bad (and there was more bad then good) and to hone his skills even more. Sysense was now ready to take his message to the masses and let them be part of his journey. He started playing live at a little bar/club that had a small but loyal following of electronic music. The people were very forgiving of his mistakes and allowed Sysense the room to grow his skills even more. Sysense continued to spin at that bar and for that owner for about 10yrs and Sysense thanks him to this day for being patient and giving him the opportunity. The rest of the story is pretty much ancient history, as Sysense now looks forward to taking the next steps to bring his message and journey to even more people around the globe. And a quick final note from Sysense: I hope that over the years I have done what I intended to do, and also maybe helped someone along the way just as the music and that Dj did for me so many years ago. The term – Last Night A Dj Saved My Life – is true in every aspect for me. I hope that we can keep spreading the vibe of love and good music around the world and beyond.
