Brew Ha Ha's Summer vacation continues with this repeat episode all about Anchor Brewing's history, featuring Mark Carpenter. This episode was originally recorded and published on May 2, 2019. Today on Brew Ha Ha Steve Jaxon gets the whole story from Mark Carpenter about Anchor Brewing, its history and historical context, its production and its role in American brewing. (We were expecting guests from San Francisco's Fort Point Beer Co. but they are stuck in traffic and will reschedule.) Mark Carpenter (l) and the Anchor team in the '70s. Mark Carpenter started working at Anchor Brewing in 1971 after he met its owner Fritz Maytag. He was looking for a more interesting and rewarding line of work and found that at Anchor. Mark retired a few years ago and Anchor's new brewmaster is Ramon Tamayo, who was also on the show recently. Warm or Cold Beer? Right now, Mark is tasting a Shadow of a Doubt Imperial Porter from Russian River Brewing Co. It's warm but it's fine, Mark says that if a beer is good it should be good at room temperature too. "In warm countries they drink cold beer, in cold countries they drink warm beer." The beer is named after the Alfred Hitchcock film Shadow of a Doubt which was filmed in Santa Rosa in 1943. Mark talks about the Fort Point, an interesting brewery, says Mark. They do a Kölsch. All over Germany, the towns had their own styles of beer. Then Lager beer was invented and they all switched to that. But Kolsch is a surviving local beer from the city of Cologne (called Köln in German). An Imperial Porter means it's a black beer. Compared to a Stout, a Porter is sweeter. It also has nice flavors. "Imperial" means it is higher in alcohol, this is 10%. The Story of Anchor Brewing Co. So without our expected guests, Steve invites Mark to tell the whole Anchor Brewing story which starts with what a city San Francisco was in the last 1960s. They were protesting the Vietnam War and there was an abundance of great music at venues like the Fillmore. Mark remembers the background of the city where people were looking for ways to do something more inspiring than his "normal" job. Mark would visit any American city and visit its breweries. He visited Coors in Colorado and Pabst in Wisconsin and took brewery tours. Steve is from Detroit and asks if Mark visited Stroh's there, but he hasn't. Stroh's called itself "fire brewed" which was a common European process in the late 1800s where beer was heated in copper kettles heated by fire, not steam. Mark says that steam applies less heat than a gas flame which gives some caramel color and flavor that steam does not. Stroh's was the only beer in America that was fire brewed. Stroh's today is owned by Pabst but it's not the same and is not fire brewed anymore. The Importance of Good Luck Mark always says he was lucky to get the job at Anchor. It was the smallest brewery in America at the time. They worked hard to build their reputation. Before they had volume sales, they only brewed once a month but sales steadily increased. Mark gives Fritz Maytag credit for having great business vision for the brewery, from the time he acquired it in 1965. Fritz had heard that the brewery would be closing and he went to visit it. He saw magic and potential and wound up buying it. He would say that he paid "less than you pay for a good car." It was a nineteenth century brewery. There was no refrigeration. It was a very crude little brewery and Fritz invested money into it. Fritz wanted to make sure that people knew Anchor not just for Anchor Steam Beer. At first they had Anchor Steam Dark which simply had caramel coloring added. Fritz wanted to develop the Porter to replace that to do it right. They even started distilling in 1993.

This week I travel to @brickandbarrel and sat down with the owner Karl Spiesman and the head brewer Cara Baker. We focused on the traditional aspects of craft beer, namely their love of English beer styles. We discussed the difference in the Cleveland craft beer scene from the time they opened in 2014 until now. While we were discussing this amazing industry of craft beer, we sampled some phenomenal beers as well. We started with a Helles that was to die for. Next, we sampled a hybrid that included the Helles, Riesling wine, and tart cherries that was absolutely amazing. The hits kept coming as we drank an ESB next that was spot on. We followed that up with their flagship West Coast IPA called Bitter Chief. Finally, we closed the interview with an delicious Imperial Porter. An entrepreneur from a young age, Don got started in business by building and selling computers at the age of 14, but his road to success was not without its challenges. Despite his love for teaching and learning, Don was not great at school and became involved in a gang. Although he never finished high school (or college), he credits his independence and drive to becoming a successful business owner. In addition, Don also shares with us his views on education and solving social issues as well as how he is implementing more racially diverse hiring practices in his own organization. Prost! In this episode: In true entrepreneurial spirit, Don always wanted to be the one calling the shots; He would rather be the one making the mistakes than dealing with the mistakes of others. Independence and drive is at the heart of entrepreneurship, especially combined with an active mind. Your own drive will only take you so far, but your own drive plus being pushed by others can take you to a whole different world. Teaching independent thinking and rewarding drive is better in the education system than just teaching kids how to start a business. Don't use hard work as an excuse for bad choices. Overcoming a deficiency in a business by working harder is not solving the problem and your machine may still be broken. You are over taxing yourself, employees and business and not leaving yourself time to actually work on the business. Affect something rather than be affected by it. Give a shit and solve the problem. If we focus on our own emotional satiation and catharsis, we're just kicking the can down the road and not actually solving the problem. We can solve social problems using the creative process the same way we do in business and science. In hiring, applicant pools must reflect the broader societal demographics, and it's the responsibility of business owners and hiring managers to connect with organizations that support minority candidates. Episode Notes Episode 78: VIP Vanilla Imperial Porter by Great North Aleworks in Manchester, NHIt’s the Two Minute Beer Review!I’m Andrew Burkum and it’s that time again where we take on that massive craft brew aisle to find the hidden treasures waiting for us there. This week we’re taking a look at VIP Vanilla Imperial Porter by Great North Aleworks in Manchester, NH. Will this one take us on a limo ride to beer stardom? Let’s find out!VIP pours nice and solid black with a pretty, creamy head capping it off. The scent is strong with this one. It’s full of malt, molasses with just a touch of freshly roasted coffee. Oddly enough, the team and I couldn’t detect any of the signature vanilla in the scent of the beer. But what about the taste? This one hits nice and hard up front with coffee and cocoa really warming up and wrapping their way around the tongue. These flavors develop as the beer goes down into this really nice, smooth bitterness by the end of the swallow that resolves to balance the beer without punching you in the flavor face. And then, there it is! That vanilla that was promised. It’s sitting right there on top of the whole experience in the vapors that sink into your palate. It permeates the flavor in an extremely satisfying way and tie all of those flavors into a really nicely made package. The beer feels smooth and light but not so much so that it ever seems watery. It’s just a great example of a really clean drinking porter, not chewy but robust and full of flavor. The beer’s sweet, but not overly so at all. This beer is an immaculate porter, and it’s really nice to see so many of these coming out when so much of the industry has shifted into heavy IPA production. Mark talks about the Fort Point, an interesting brewery, says Mark. They do a Kölsch. All over Germany, the towns had their own styles of beer. Then Lager beer was invented and they all switched to that. But Kolsch is a surviving local beer from the city of Cologne (called Köln in German). An Imperial Porter means it's a black beer. Compared to a Stout, a Porter is sweeter. It also has nice flavors. "Imperial" means it is higher in alcohol, this is 10%. So without our expected guests, Steve invites Mark to tell the whole Anchor Brewing story which starts with what a city San Francisco was in the last 1960s. They were protesting the Vietnam War and there was an abundance of great music at venues like the Fillmore. Mark remembers the background of the city where people were looking for ways to do something more inspiring than his "normal" job. Mark would visit any American city and visit its breweries. He visited Coors in Colorado and Pabst in Wisconsin and took brewery tours. Steve is from Detroit and asks if Mark visited Stroh's there, but he hasn't. Stroh's called itself "fire brewed" which was a common European process in the late 1800s where beer was heated in copper kettles heated by fire, not steam. Mark says that steam applies less heat than a gas flame which gives some caramel color and flavor that steam does not. Stroh's was the only beer in America that was fire brewed. Stroh's today is owned by Pabst but it's not the same and is not fire brewed anymore. Mark always says he was lucky to get the job at Anchor. It was the smallest brewery in America at the time. They worked hard to build their reputation. Before they had volume sales, they only brewed once a month but sales steadily increased. Mark gives Fritz Maytag credit for having great business vision for the brewery, from the time he acquired it in 1965. Fritz had heard that the brewery would be closing and he went to visit it. He saw magic and potential and wound up buying it. He would say that he paid "less than you pay for a good car." It was a nineteenth century brewery. There was no refrigeration. It was a very crude little brewery and Fritz invested money into it. Fritz wanted to make sure that Anchor was known not just for Anchor Steam Beer. At first they had Anchor Steam Dark which simply had caramel coloring added. Fritz wanted to develop the Porter to replace that to do it right. They even started distilling in 1993.

One of the things that always helps a holiday weekend – when shortly after 5pm on Friday someone says, “I think it's time for a drink/adult beverage.” And with my wife's parents in town for the weekend, a great opportunity presented itself in the form of tasting some porters with Rodger (my father in law) which are his favorite style of beer. We had purchased some Ballast Point Porters back in March, when he was supposed to visit and remarkably we didn't drink them by the time he made it for this visit. First up Ballast Point Victory at Sea, an Imperial Porter with coffee & vanilla – and available from the brewer year-round – at first blush one might think this an overly sweet experience, but they do a fine job of only letting the porter's malty sweetness through without feeling the need to augment it – other than with dusty coffee and vanilla highlights. Then we tried a seasonal version Peppermint Victory at Sea – which thankfully we all found less ‘minty fresh' and more minty highlights of the above. Cheers!

Participar como jurado de concursos de cervejas é uma experiência muito gratificante, principalmente pelo aprendizado que se tem durante as horas, e até dias, de degustação junto com outros profissionais do meio cervejeiro. Já participei de alguns concursos, como os de cervejeiros de panela promovido pelas Associações de Cervejeiros Caseiros – Acervas, o concurso Mestre Cervejeiro da Eisenbahn, e também o South Beer Cup, a "Taça Libertadores" da cerveja. Em Março de 2015 fui jurado na 3ª edição do Concurso Brasileiro de Cervejas, que acontece junto com o Festival Brasileiro da Cerveja, em Blumenau. Durante as degustações do concurso, caiu na minha bancada o estilo Imperial Porter. Só havia uma cerveja inscrita, e como vocês devem saber, as degustações são às cegas – ou seja, não sabemos qual é o rótulo. Tanto para mim quanto para os jurados presentes, a cerveja estava fantástica, totalmente dentro do estilo (conforme descrito no guia de estilos do BA, usado no concurso), portanto demos medalha de ouro. Apenas nas premiações o rótulo foi revelado: era a Tupiniquim Monjolo. Neste vídeo falo um pouco sobre minha experiência em concursos, e também provo esta cerveja, que foi uma das medalhas de ouro que a Tupiniquim levou – sendo inclusive eleita Cervejaria do Ano devido a seu excelente desempenho no concurso.
