Hello and welcome to this book on Ultra-Processed Food and Diabetes.There is increasing evidence of the impact of Ultra-processed foods on multiple metabolic and neurobiological pathways, including those involved in eating behaviors, both in animals and in humans.[1]For people on the run, ultra processed food may become their go-to diet, sacrificing nutrition for convenience. While it may be convenient, consuming ultraprocessed foods on a regular basis increases a person's risk of health complications including cardiovascular disease, certain cancers, obesity and Type 2 Diabetes. But it can be hard to tell when these foods are on your plate.[2]A diet based on packaged products involves the consumption of small and repeated doses of food additives. At the end of the year, an average French adult ingests up to 10 kg. The calculation is worked out by French researchers in a study published in Scientific Reports[3]. Den italienska pastan är både gammal och ganska ny. Marco Polo tog inte pastan till Italien från Kina. Och mycket av det vi ser idag dök inte upp förrän i andra halvan av 1900-talet. I programmet berättas om pastans historia, men också om dess ställning i dagens Italien.Sara Berg, journalist och författare till kokboken Pasta på italienska, berättar om sina resor genom landet under arbetet med boken.Menys Tomas Tengby berättar om sommarens besök till regionen Basilicata i hålfoten på den italienska stöveln, och mötet med en lokal pastarätt.Pastans historia i Italien går tillbaks till etruskerna och Romarriket. Har man haft vete så har man också gjort något som kan kallas pasta. Men just begreppet ”pasta” är ganska sent, också i Italien. Länge kallades olika sorters pasta istället för maccheroni.Torkad pasta gjordes på Sicilien åtminstone 100 år före Marco Polos födelse. Det finns beskrivet i en bok från 1154. Pastan liknande spaghetti (ett ord som dök upp först på 1800-talet) och togs dit från Nordafrika när Sicilien styrdes av muslimska härskare. Gnocchi, lasagne, tagliatelle och tortellini har funnits med sedan medeltiden. Men tillagningen och kryddningen var annorlunda.Sent 1700-tal blir pasta folkligt i Neapel. Torkad pasta började tillverkas under industriliknande former och blev billigare. Pasta började också pressas till olika former.Inte förrän i mitten på 1800-talet dök ett recept på tomatsås upp i en napoletansk kokbok. Det var också på 1800-talet som man började servera pastan al dente.Efter andra världskriget kom industrialiseringen igång på riktigt i Italien. Det var först då som pastan blev riktigt stor och allmänt spridd. Många av de pastarätter som idag räknas som klassiska fick då sina recept.
