Pamela was nominated as one of the top 10 bartenders for the 2014, 2015 and 2016 "American Bartender of the Year" award at Tales of the Cocktail and was named the "2014 Bartender of the Year" by the Village Voice. Additionally, Pamela was named as one of Food & Wine Magazine's top 10 Rising Star Mixologists, an inductees to the "Dames Hall of Fame" in 2015 and one of Wine Enthusiast Magazine's "40 Under 40" (now "Future 40") in 2015. I would never be threatening or have been to any business or their people. This all happened because I know and am friends with her ex boyfriend of 5 years ago. Very poor decision on on her part and bad for the business as the whole birthday party left as well. I will not be going back with the way I was treated and for such pathetic grudge holding and ego stroking. Just hope you're not friends with any of her ex's if you do go. In this episode I chat with Mary Palac, long time bar manager of Paper Plane in San Jose, CA. Mary was born in the Philippines but grew up in the Bay Area, California. She has worked in hospitality for nearly 20 years and has been bartending for over 12 years. She is a founding member of USBG Silicon Valley, and an alumna of the TOTCF CAP program, BAR 5 Day, Camp Runamok, and many other industry programs. She was the Season 7 Ms. Speed Rack CA, and 2 time BARMANIA champion. Her recipes and views have been featured in several national publications, including Liquor.com, PUNCH, Saveur, and USA Today. She was featured in the documentary Rum Rising with liquor.com and Appleton Rum. In 2019 she was honored with a commendation from the City of San Jose for her contributions to the city's food and beverage community, and in 2020 was named a Top 4 Honoree for American Bartender of the Year through the TOTCF Spirited Awards. She has travelled all over the world to visit bars and distilleries in order to explore the world of spirits. Her home bar is Paper Plane in San Jose, CA.
Kevin Diedrich is Tales of the Cocktail's 2020 American Bartender of the Year. He's also at the helm of the American Cocktail Bar of the Year - Pacific Cocktail Haven in San Francisco. PCH's reputation in San Francisco precedes it. But four years ago, when Kevin was still in the process of re-imagining the existing neighbourhood bar that would become PCH, a bunch of regulars were asking why he was ruining their bar. He said it was like getting punched in the stomach, over and over again. But listening to Kevin speak about hospitality and service leaves nothing to the imagination as to how he's been able to push through that initial pain to become one of the emerging stars of the industry.
