Començem parlant de la veu amb tres convidats de luxe: el Ferran Albiol, una persona que posa veus a ninots/titelles com la del Tomàtic i del Cincsegons de TV3; la Núria Mediavilla, una actriu de doblatge que ha posat les veus en català i castellà a actrius com Angelina Jolie, Cameron Diaz, Jennifer Lopez, Juliette Binoche o fins i tot a l'estimat Inspector Gadget; i l'Eduard Biosca, un actor que posa veu al seu personatge que es deixa caure al Versió Rac1 presentat pel Toni Clapes, i els teatres, el Sr. Bohigues. I el Tomatic rep la seva pròpia pregunta que durant la temporada ha fet als altres convidats. Després, al segon bloc principal parlem de cuina i de cuina de Mercat amb dues veus imprescindibles de la gastronomia: Carme Ruscalleda, referent internacional amb una trajectòria plena d'estrelles Michelin, i el seu fill Raül Balam, que ha sabut fer-se un lloc propi amb frescor i talent. Last month's M&W set at Green Bar will be uploaded in a future episode, in order to make way for this month's special "Cali-Jentes West Coast Smooth Jazz" opening set by none other than Markus Jentes, whose birthday we'll be celebrating this upcoming Wednesday July 16.BACKGROUND -For those who aren't aware, Markus (a.k.a. Mark Cali-Jentes) and I, Elian, go way way back.  We first played together a Bellissima in the Fort Strip where we were introduced by common friend Wendell Garcia in 2003.  Mark not only played at but also did the graphic design for the unforgettable Paseo Uno LOUNGE pool party series I organized with the Mandarin Oriental in 2004.  Mark and I then teamed up with Martin Wisniewski to help turn M Café into Makati's top nightspot in 2005 with the MyHOUSE weekly parties.  20 years later, Mark and I are back behind the decks once a month at Green Bar with the Music & Wine parties.  As for Inés, she's known Mark as long as I have, maybe even longer, and we're all still the closest of friends today.Aside from being a great DJ, Mark is today one of the Philippines' most engaging artists.  You can find his exquisite paintings exhibited in galleries around Manila or on his website at www.markusjentes.art  Having studied the visual arts at Pepperdine University in Los Angeles in the 90s,  he fell in love with California's brand of smooth jazz, listening to the likes of Bob James, David Benoit, Lee Ritenour, and David Sanborn, to name a few.  This is the vibe that Mark recreates in his set for this week's podcast. La Grande Année, Maison BollingerJe suis très heureux de vous retrouver pour ce format dédié aux vins d'émotion. Aujourd'hui, honneur à la cuvée La Grande Année de Bollinger. Pourquoi celle-ci en particulier me direz-vous ? Ce qui a mis le feu à mes papilles et mon cerveau, c'est une dégustation exceptionnelle organisée en février dernier à Wine Paris. Les millésimes 2015, 2005, 1999, 1989 et 1983 en jéroboam en provenance directe des caves de la maison Bollinger. Excusez du peu. Sous la houlette de Denis Bunner, chef de cave de Bollinger, et d'Alexis Goujard, journaliste à la Revue du Vin de France, le moment fut magique. Il n'en fallait pas plus pour me convaincre que cette cuvée avait toute sa place dans ce format spécial vin mythique. Pour commencer, juste à la sortie de la dégustation, j'ai eu le plaisir de discuter avec Laura Brousset de la maison Recaredo en Espagne. The great Swiss city of Zurich is one of the more picturesque, pixel-burning European gateway destinations. Within minutes of exiting Zurich Airport, armed with my trusty Eurail Pass, I was blissfully whizzing into the city centre on a 10 minute train ride. Strolling across the cobbles of this time-honoured city in the crisp spring air, there's so much urban eye-candy to lift the spirit. I sized up the largest clock face in Europe, on the edge of the Limmat River. It's bigger than Big Ben. Riding the skyline, the historic tower of St Peter Church is imbued with a trusty timepiece, as are the oh-so punctual church bells that loudly reverberate across the Old Town from the four historic churches, including mighty Grossmunster Cathedral. No wonder everything runs to time in Switzerland. According to legend, Zurich's 13th-century landmark cathedral was founded by Charlemagne, built on the graves of the city's patron saints, Felix and Regula. It was also the starting place of the Protestant Reformation in Zurich. Culture is writ large in Zurich's Old Town, where the narrow-cobbled streets gave rise to the Dada art movement just over a century ago. I popped into Cabaret Voltaire, at Spiegelgasse 1, which was the birthplace of Dada and the avant-garde artistic movement in 1916. Absinthe is the drink of choice here, among Dada's ghosts. Strolling along Bahnhofstrasse, flanked by chic designer boutiques and swanky department stores, Café Sprungli deserves a pit-stop. This prized Zurich institution is rightly lauded for its heavenly macaroons and hand-crafted chocolates. They are like exquisite works of art – as were the Easter chocolate displays. It's like a bespoke art gallery in chocolate. Don't mind if I do. Further down the street, if feeling a little decadent, make a date with Teuscher for its famed champagne truffles. In a city of water and stone bridges, a top vantage point to survey the elemental landscape, above the twisting lanes of the Old Town, is the Lindenhof. This was the site of a former Roman customs house and fourth-century fort, perched above the water. Alongside soaking up the city vistas, this elevated park with its Linden trees and giant chess sets is the pitch-perfect spot for a cheeky picnic. The vast assortment of guildhalls is core to Zurich's backstory, and they're great fun to explore. In 1336, Zurich's first independent mayor, Rudolf Brun, established the guild laws, effectively shifting power from the abbeys to the merchant nobility. The handsome guildhalls, with all their intricate decorative features, lend themselves to a leisurely inspection. I started at the bakers' guild, in Oberdorfstrasse, before heading over the river's east bank to Niederdorf, to admire the guilds of the carpenters, builders, the food and wine dealers, the textiles and spice merchants, all along Limmatquai. Then, on Munsterhof, you've got mansions of the weavers, saddlemakers, painters and winemakers. In German-speaking Zurich, the street food tradition of wurst remains wildly popular – particularly for lunch. In the Old Town, tuck into some great sausage at Wursteria by Hinz and Kunz. This part-butcher shop and part deli serves up super spicy bratwurst in a fluffy bun. So good! As its name suggests, Cafe Conditorei 1842, on Napfgasse, is an old-school establishment, chock-full of sweet indulgence. Spanning four floors, food lovers can enjoy patisserie, cakes and hot drinking chocolate – they claim to be Zurich's best. On the ground floor of this historic confectioner's store, impressively decorated in neo-baroque style, you'll struggle to find a finer array of patisserie, cakes and tarts. I could have stayed there all day. And yes – the steaming mug of hot chocolate with whipped cream was magnificent. Speaking of chocolate, the Lindt and Sprungli factory has called Zurich home, since 1899. Seven years in the making, Lindt Home of Chocolate, was designed to complement the historic building and serve as a beacon to chocolate lovers everywhere. From cultivation to production, the interactive museum does a sterling job telling the story of Swiss chocolate making, not only about Lindt, but its predecessors. While the maze of white, milk, and dark chocolates is impressive, the Lindt Home of Chocolate also boasts another record: the world's largest chocolate fountain. Standing at about 30 feet tall, even Willy Wonka would be impressed by this show-stopper. Zurich is home to FIFA's world headquarters and in a bid to stop pesky football fans from loitering in the lobby, the FIFA Museum was created nine years ago, in the heart of town. Spread over three floors and loaded with interactive exhibitions, the FIFA Museum examines all aspects of the global game and how it passionately stirs people's emotions. Football is the great equaliser. Along with the original FIFA World Cup Trophy, the museum displays over 1,000 items of exclusive memorabilia and apparel, including the national shirts of all FIFA member associations. The original trophy, which features a gold statuette of Nike, the Greek goddess of victory, holding a cup, was permanently awarded to Brazil after they won the cup for the third time, in 1970. The current trophy contains 5kg of pure gold and its estimated value is over NZ$30m. A highlight amongst the interactive games gallery is the gigantic pinball machine, where you can test your own ball kicking skills. With the next World Cup just a year away and featuring the All Whites for just the third time, add this museum to your check-list. Creating quite a buzz in recent years, Zurich-West has been spectacularly transformed from a once scruffy industrial district. Emerging as a vibrant cultural quarter of trendy eateries and edgy art, factories have been repurposed as theatres and shipyards reimagined as art galleries. Viadukt is an exemplary example of the makeover, with a host of eateries, pop-up shops and art spaces housed inside the arches of the disused, 550-feet long railway viaduct. You'll also find Prime Tower here, a 35-storey skyscraper (Switzerland's tallest), serving up a panoramic treat across Zurich's rooftops, gleaming lake and snow-coated peaks beyond. Take in the sweeping scenery over a drink or two at Clouds Bar – and salute your return to Europe. The locals are very proud of the city's brilliant and bizarre festivals. In August Zurich hosts Street Parade, one of Europe's biggest celebrations of peace, love and electronic music, attended by millions of people. In a couple of weeks, the city grinds to a halt for Seschselauten. This annual April spectacle involves setting on fire a giant straw snowman called the Boogg. The time it takes for the Boogg's head to explode indicates whether it will be a good summer, apparently. The word is Zurich is in for a long, warm summer. Perfectly poised overlooking Paradeplatz, the city's most prestigious address, the Mandarin Oriental Savoy Hotel offers a stylish stay to remember, when in Zurich. Just steps from the city's iconic shopping sweep of Bahnhofstrasse, it's been just over a year since the Mandarin Oriental revitalised what has been Zurich's oldest grand hotel, reaching back to 1838. Elegantly and artfully refreshed, with a boutique hotel vibe, the 80 impeccably redesigned rooms and suites raise the bar on luxury and indulgence. There's four distinctive dining venues including the Michelin-starred Orsini, where the Italian fine dining experience is helmed by acclaimed two-Michelin starred Italian Consultant Chef Antonio Guida. Then there's 1838, the effervescent rooftop bar with its spell-binding panoramic vistas of the city, lake and serrated Swiss Alps. Plus Savoy Brasserie & Bar is a sure-bet for a stupendous breakfast, with an delightfully presented buffet selection, in addition to a la carte menu items. Accommodations take their design cues from the natural palette of Zurich, headlined by the artisanal hand-painted silk wallpapers, inspired by the aqua green and blue hues of the lake and sky, to the mist of the surrounding mountains. Meticulously crafted design elements and materials adorn the rooms. Accents of colour are also reflected in custom furniture and carpets. Principal materials include walnut as a common thread, touches of bronze and brass and enamelled lava together with the comfort of luxurious textiles. Throughout the hotel, I loved admiring the multitude of sculptural lighting fixtures and lamps. I stayed in the Munsterhof Suite, accentuating the sumptuous sense of comfort, glamour and space, loaded with indulgent touches. There's a personal cocktail bar, built-in headboards, sublime marble-clad bathrooms and expansive walk-in dressing areas. As is the case with all Mandarin Oriental properties, you'll soon get a sense of the strong local connection the hotel has with the city. Local artists are proudly showcased with numerous pieces of art to admire, throughout the hotel. Grab a peek at the storied meeting room on the second floor, which is still home to the Guild of Tanners and Shoemakers. These traditional Swiss craftsmen have been meeting here for over a century. Service personifies whip-smart Swiss efficiency and the charismatic staff are highly personable, outgoing and engaging. Tom MacPherson Le Maire is a seasoned luxury and skincare expert with over 20 years of experience in the industry. Specializing in luxury hotel and spa channels, he is passionate about hospitality and the integration of innovative wellness concepts. Tom has worked across multiple channels, supporting go-to-market strategies for a number of emerging skincare brands. His career began with industry icons like The Body Shop, followed by nearly a decade at Clarins, where he honed his expertise in fast-paced commercial retail. During his time at Clarins, he held senior roles in training and field management, overseeing more than 70 staff members and driving significant business revenue. Transitioning to work with SMEs and challenger skincare brands, Tom sought to amplify the voices of smaller brands often overshadowed by larger budgets. He led the EMEA region for Intraceuticals, an Australian oxygen facial brand, and later helped launch the Icelandic skincare brand BioEffect in Space NK, while also developing their spa and clinic division. Not since Gutenberg's printing press has one human being's inventions improved the quality of life for people as much as Apple co-founder and principle creator Steve Wozniak.    Fortunately for me the Woz loves jokes, humor and comedy in general so after sending him several heart felt e-mails requesting to chat with him he agreed, so last week while I was performing in San Francisco I drove down to Cupertino to record this conversation while him. This conversation was recorded at the Mandarin Oriental restaurant where Steve asked me to meet him. There is pleasant violin based classic music playing in the background because the owner politely delinked my request to turn off the music.    Steve Wozniak is not only a creative genius who has improved human life more than any other human being in the last 300 years, he also loves and cherishes humor and the story tellers who create the jokes.    He is exciting to talk to because he thinks so fast and can convey complicated information in a very simple way to be understood universally. Airlines and airports are getting ready for Hurricane Milton, a “potentially catastrophic” storm expected to hit southwest Florida on Wednesday, writes Airlines Reporter Meghna Maharishi. Tampa International Airport and Orlando International have announced they plan to suspend operations in anticipation of Hurricane Milton. Several airlines — including American, Delta and United — have issued travel waivers in Florida. Citi analyst Stephen Trent said cancellations from the storm could cause Southwest and Spirit to suffer a major hit to their earnings because of their exposure to Tampa.  Next, new Mandarin Oriental CEO Laurent Kleitman is looking to double the number of properties in the company's portfolio, writes Senior Hospitality Editor Sean O'Neill, who spoke with Kleitman in his first major interview as CEO.  Mandarin Oriental currently manages 41 hotels, but Kleitman says he sees a sweet spot of between 80 and 100 properties for the luxury hotel brand. Kleitman added Mandarin Oriental will focus on key markets where the company doesn't have a presence. He cited Budapest and Rome as locations Mandarin Oriental will expand to.  In addition, Kleitman said growing in the Americas is one of the company's goals. Mandarin Oriental manages only three hotels in the U.S.  Finally, the Skift Travel Health Index for August 2024 reveals that the travel industry is thriving despite concerns about a recession. The global travel industry registered 9% growth from last year, which was led by the Asia-Pacific region and North America. Research Analyst Saniya Zanpure notes the travel boom in the Asia-Pacific region is largely due to the area's delayed reopening after the pandemic. Episode Notes Columnist Colin Nagy believes a growing number of luxury travelers are looking for depth instead of hyper glitz. With that in mind, he provides his list of this summer's biggest innovators in travel as well as information about more than a dozen noteworthy trends in the industry. Nagy writes his list is inspired by brands that build and execute with integrity and vision. He praised Belmond, his choice for hospitality brand of the year, for embracing the idea of slow luxury. Nagy also commended the Mandarin Oriental for showing a deep respect to Oman's culture in the opening of the company's newest property in the country. In addition, Nagy cited Sri Lanka and the Pacific island nation of Palau as destinations he's paying close attention to.  Next, the National Park Foundation recently received a $100 million grant to help combat overtourism at the country's national parks. Global Tourism Reporter Dawit Habtemariam lists three ways national parks are looking to manage visitor numbers.  More parks are requiring visitors to make a reservation for peak periods. Glacier and Mount Ranier National Parks have implemented vehicle reservation systems for popular entrances while Yosemite reinstated its requirement that visitors book their visits in advance during certain periods.  The National Park Service also plans to implement a uniform permit application process for tour operators. In addition, some parks — including Zion and Glacier — have raised camping fees to cover maintenance costs, while others have submitted proposals for fee increases next year. Finally, Trip.com Group reports that China's senior citizens are spending a large amount of money on travel. So the company is taking more steps to appeal to that growing segment of China's population, writes Asia Editor Peden Doma Bhutia.  Trip.com Group recently launched the Old Friends Club, which is geared toward travelers older than 50. The company said Chinese senior citizens have spent more than $224 million on its platform this year. CEO Jane Sun said during its earnings call this week that seniors are showing a growing interest in customized tours.   Bhutia notes China's population is aging rapidly, with 28% of Chinese projected to be older than 60 by 2040. Aujourd'hui, je dois vous dire que je suis assez fière parce que c'est mon premier épisode enregistré à Tokyo !Cela faisait des mois et des mois que nous tentions d'organiser cet échange avec mon invité David Collas que j'ai rencontré à Genève lors d'un événement caritatif, le bal de la Croix Rouge et où nous avons tout de suite eu beaucoup d'affinités. David était général manager au Mandarin Oriental à Genève avant de s'expatrier toujours dans le cadre du Mandarin Oriental, à Tokyo. J'ai alors attendu de m'y rendre pour avoir l'occasion de faire cette interview !Qu'est-ce qui était passionnant dans cet épisode ? D'abord je trouvais que c'était intéressant de l'inviter car je reçois peu de personnes représentatives du monde de l'hospitalité. C'est un monde dans lequel on fait des choix de vie forts et je trouve que c'est passionnant. Ensuite, ce que je trouve intéressant avec le profil de David c'est qu'il est finalement relativement autodidacte.Relativement parce qu'il a fait énormément d'études, d'apprentissage dans le monde de l'hôtellerie et la gastronomie haut-de-gamme mais néanmoins pas dans le cadre d'un parcours classique et encore moins au départ de sa carrière. Comme vous le verrez, cela ne l'a visiblement pas empêché d'être l'une des personnalités les plus remarquables du monde de l'hôtellerie actuel.Ce qui est passionnant, au-delà de son parcours atypique, c'est ce qu'il nous raconte sur le terrain, comment ça se passe concrètement quand on est General Manager d'un hôtel de parfois 800 personnes. On a parlé de dédication, de la passion nécessaire pour exercer ces métiers mais aussi de certaines idées reçues que l'on a souvent sur l'équilibre vie pro/ perso dans le monde hôtelier.J'ai trouvé que le message de David était plein d'espoirs pour les jeunes générations qui se privent d'envisager ce type de secteur parce qu'ils se disent que que c'est trop dur (oui c'est dur) mais c'est aussi une éthique de vie assez incroyable et David en est la preuve.Bref, j'espère de tout cœur que vous allez passer un bon moment, n'hésitez pas à écrire un petit mot à David sur LinkedIn.
