On this week's podcast, Pat Cobe, senior menu editor of Restaurant Business, and Bret Thorn, senior food & beverage editor of Nation's Restaurant News and Restaurant Hospitality, discussed Bret's trip to the San Francisco Bay area, where he went for The Culinary Institute of America's annual Worlds of Flavor conference in Napa.  The theme this year was Borders, Migration, and the Evolution of Culinary Tradition, which Bret acknowledged was quite a mouthful, but basically it was a discussion of how cooks adjust their food based on what ingredients are available and what customs and traditions are around them, as well as their own life experiences. In short: It's all fusion. Highlights included a demonstration of southern Italian spaghetti and tomato sauce made like it was risotto and accompanied by a lecture of how spaghetti and tomatoes got to Italy, and lentil fritters that combined the traditions of West Africa and East Africa. Bret then spent the weekend in San Francisco, and a culinary highlight was a pastrami sandwich with horseradish and red pepper aïoli at Mario's Bohemian Cigar Store Café in the North Beach neighborhood.  Pat stayed in New York City and checked out a Cambodian restaurant called Bayon. It was her first time trying that particular cuisine and she found it lighter and more subtle than the cuisines of its neighbors, Vietnam and Thailand. She also had brunch at Sarabeth's, a long-standing concept with four locations in New York City, where she enjoyed tasty popovers and mushrooms with eggs. Then Bret shared an interview with Cheng Lin, chef and owner of Shota Omakase in the Brooklyn neighborhood of Williamsburg. The chef discussed the importance of rice in sushi and of cultivating regular customers.

Siem Reap, Cambodia     I've returned from a 90-day trip around the globe to every time zone on the planet. My mission is world peace through cultural exchange.   In this episode, the FAQ is: How can I stay hydrated when it's humid and hot? . Today's Destination is Siem Reap, Cambodia Today's Mistake- Taking the long way instead of a more direct flight. Travel Advice: Practice Google Maps on foot before you leave on your trip   FAQ: How can I stay hydrated?   From my personal experience, I needed help with this in Southeast Asia. The climate was so different from Southern California, where I live. I had to adjust my body to these climate conditions. I had to be very aware of my intake of liquids and not drink much if any, caffeine. I am not a medical doctor, but here's what I learned. Rest during the day. Swim if you can. Keep your body cool and do it early in the morning if you must go out. I had to respect my kidneys as they filtered all of this water. I had to monitor the color of my urine to try to keep it clear in color.   Today's destination: Siem Reap, Cambodia   Siem Reap, a resort town in northwestern Cambodia, is the gateway to the ruins of Angkor, the seat of the Khmer kingdom from the 9th–15th centuries. Angkor's vast complex of intricate stone buildings includes preserved Angkor Wat, the main temple pictured on Cambodia's flag. Giant, mysterious faces are carved into the Bayon Temple at Angkor Thom.   The capital is Phnom Penh. Listen for the earlier episode on that city.   I arrived by bus and immediately rode to the Backpacker's Chill Hostel. My tuk-tuk driver was named Nuk, and he was reliable. He brought me to all of the places I needed to see. Ask for him if you go there because he could use the business. What are some of the things that I did? The first was the temple, Angkor Wat. I went at sunrise, meaning I had to get the ticket first. So, he knew where to get the ticket and how to navigate the complicated process, making it easy. Then we drove to the temples, which will take a full day. It's so hot, you should go early. It was raining, but still very humid. Bring an umbrella for the sun. Limit your outdoor activities besides swimming.   Angkor Wat reminded me of Disney in some ways, but this was REAL. It was from 1000 years ago. As a storyteller, Hak Lonh looks to food as a way to share the rich history of Cambodia and its complex cuisine. Hak is Cambodian-Chinese-American. He was born in a refugee camp on the border of Thailand and Cambodia. His family immigrated to the US when he was a toddler. They fled, fought and eventually escaped the horrors of “The Killing Fields”, landing in Pennsylvania.His father, Kim, was able to secure a job due in part to his ability to speak French fluently. This skill and his natural talent eventually lead him to become a classically trained chef. Hak's mom, Bun, a phenomenal home chef in her own right, was also working and preparing meals to feed the family. Because of the historical challenges to Cambodia, Cambodians have had to rely on recipes and culinary traditions as one of the few ways to preserve their heritage. Hak's mother, in particular, faithfully goes to great lengths to prepare home cooked meals as a way to keep that heritage alive. In this way, food has always been an integral part of Hak's life.Gamboge is a Cambodian inspired deli, café, and marketplace. Offering Cambodian comfort classics, coffee, beer and natural wines. The Cambodian Food and Service Workers’ Federation has a newly elected President – a woman who was formerly herself a beer promotions worker. Listeners might recall the major campaign run back in 2016, in defence of women in teh beer promotions industry in Cambodia – this is where women are required to encourage tourists in night clubs to keep drinking, and are compelled to drink themselves, putting them in very dangerous situations.The Cambodian Food and Service Workers’ Federation represents workers across a very broad range of industries from beer promotions, to karaoke workers, to workers at Chevron. This newly elected president is Ou Tep Phallin, and she was in Australia in March this year as a guest of APHEDA and the International Food Workers Union.
