166 Cider Chat Live | Life off CiderCon2019 I was able to squeak in a mini episode before setting off to Chicago for the annual cider trade conference “CiderCon” hosted by the United States Association of Cider Makers. I’ve been talking a lot about CiderCon leading up to this week of February 4-9, 2019. With 1000 people attending from all parts of the world, it is the Talk of the Town - for those of us who are hooked on all things cider. Below is my schedule of recordings - I have a pretty simple set up to track who I will be speaking to and when. I am stoked that I will have more time at workshops recording, versus hidden away in a back room doing interviews. It’s not that I don’t like interviews, but when I heard last year that no one saw me for most of CiderCon in Baltimore - I realized that just ain’t right. So this CiderCon - I have set up an number on seminar and panel recordings. Even as I am flying to Chicago right now - I am getting direct messages in Twitter from makers who are going to CiderCon and looking to chat. Luckily I have also learned to leave a few open slots for just these kind of meet ups. S. Martinelli & Company was founded by Stephen Martinelli in 1868. The company is located, as it has always been, for the last 150 years in Watsonville, California. The first cider made by Stephen was a 7.5% alcohol by volume sparkling cider. This chat is with Stephen John Martinelli, the great grandson of the Founder and the current CEO and General Manager of this family owned business. John’s first job as a teen was to clean the 125 gallon redwood fermenting tanks that were used at Martinelli’s to ferment apples juice to cider. You can still see the slats from the old tank today at the Company Store, where they flank the tasting bar. In this chat, we discuss Martinelli’s new product “1868” which came out in August of 2018 to commemorate the 150th year. 1868 is a 5.7% cider that Martinelli is currently contracting with the Gordon Biersch brewing company to ferment. The bulk of the apples are sourced from the Pacific Northwest. 1868 has the signature Martinelli juice profile, with a Newtown Pippin apple presence. It is sold in 12 ounce bottles in 12-packs. Costcos in California and the two Safeway stores in Santa Cruz are the only location currently selling this product. Best of Show | Cider Judging at Franklin County CiderDays 2018 is featured in this episode 161. Franklin County CiderDays takes place on the first weekend of November in “Franklin County” Massachusetts. This year 2019 will be the 25th annual CiderDays. Events take place on both sides of the Connecticut River and many are free to attend. Go to https://ciderdays.org/ and start planning to attend the 25th Annual. And make sure you take enough time off before the events begin on Friday, as I ,Ria, will be leading another Totally Cider Tour : New England the day before. About the CiderDays Judging For the past six years the CiderDays Amateur Cider Competition solicts entries during CiderDays and at locations through out New England. The actual judging takes place one month after CiderDays. Thus the 2018 judging took place on December 1st, 2018 at the White Church in Deerfield Massachusetts. Many of the judges have been involved with CiderDays since if first started back in 1993. Judges can also be commercial makers, cider writers and fermenters from as far as Virginia and Pennsylvania. There are continued efforts by US and worldwide governments and law enforcement to compel tech providers to create backdoors into encryption technologies to allow access to the data if they think they need it. We all want terrorists and criminals caught. But is putting backdoor access to encrypted data files actually the only way to solve cases where encrypted data is involved? Paul Vander Heide opened Vander Mill a cidery based in Spring Lake Michigan in 2008. Some might think that 3000 square feet is a good size for a start up cidery and they would be right. But as Paul reminisces in this chat, they had to expand quickly when they had to move outdoors to continue production. In 2016, a new location was open in Grand Rapids. The US cider market share in 2017 is growing. This episode on Cider Trends in the US and abroad is a replay of a webinar from April 5, 2017 presented by Danny Brager and Matthew Crompton of the Nielsen Company. The webinar was originally aired by the United States Association of Cider Makers (USACM) for their members. The USACM and Nielsen graciously provided Cider Chat with the main recording so that this critical cider trend data could be shared even more broadly. Danny is the Senior Vice=President, Beverage Alcohol Practice. Matthew is the Associate Client Director at Nielsen. Nielsen information is used and referenced widely in the industry - not just suppliers, but also by retailers, distributors, media (trade and consumer), industry associations, investment firms, etc.  Nielsen wants to ensure that their reported data is accurate, and complete, inclusive of all Cider products in their reporting when it passes a store scanner. How to help? If you are selling through retail, you can help Nielsen tell YOUR brands and the HARD CIDER story by ensuring that they have your products coded on their data base. STEP 1: Nielsen first needs your UPC list so they can check to see whether they already have them coded.  If they do, then no further action is required. STEP 2:  If not, Nielsen will get back to you, and for those products not already coded on their databases. They need: your products' labels, usually accomplished by simply having you send digital copies of them (clear PDF images of the back and front labels on the bottle and/or can, as well as package flat (e.g. 4 pack, 6 pack, 12 packs, etc). Michelle McGrath is the Executive Director of the United States Association of Cider Makers, a trade association for the cider industry. In this episode she chats on the mission of the USACM, the goals for the year, the upcoming Cider Conference (CiderCon) and the Pick Cider initiative for Thanksgiving. The four core mandates of the Association Advance cider in the market Increase opportunities for peer learning Promoting a cider friendly regulatory environment Supporting the cider apple growers   The USACM has over 1300 members. 95% of cidery members are making less than 500,000 gallons/year Membership in the USACM is tiered. And there is even a tier level for "Home Cidermaker/Enthusiast" - $75.00 (USD) Find out more info at http://www.ciderassociation.org/join Michelle provided an overview of the Cider Act that comes into effect in 2017 It will increase the allowable carbonation in cider Increase the allowable alcohol content from 7% to 8.5% Perry will now fall under the definition of allowable cider. And, there is a change in the Bond requirement for small cider producers, if not all alcohol producers. If you owe less than $50,000 a year in taxes, the government is going to stop requiring a Bond. If you already have a Bond, will get it back. BUT YOU have to request your Bond back and prove that you are a small producer.   Michelle also discussed: The Craft Beverage Modernization Act that is still yet to be passed. Within this ACT there is a component that benefits small wineries. It expands the small producers tax credit. Right now the credit is available to producers of 150,000 gallons or less and will up that amount up 750,000 gallons or 3/4 of a million. And, there will be a Request for Proposals (RFP) for research grants coming up in 2017 too. What is happening with CiderCon? Where is it? It takes place on February 8th, 9th and 10th in Chicago. Information policy at the enterprise level is invariably an exercise in gaps and inconsistencies. The range of concerns—including security—is broad, the environment tends to be heterogeneous and dispersed, the contextual scope is significant, and the stakeholders are numerous. MITRE ran headlong into this problem as it set about conceiving and implementing a new enterprise IT architecture, with questions increasingly raised regarding what policies the new architecture had to be capable of supporting. The MITRE Information Policy Framework (MIPF) is the mechanism MITRE developed to answer these questions. The MIPF supports systematic, structured analysis and formulation of information policy in five areas: security, privacy, management, stewardship, and sharing. This presentation will discuss the structure and use of the MIPF, with an emphasis on security requirements. About the speaker: Dr. Stuart S. Shapiro is a Lead Information Security Scientist and a member of the Privacy Practice at the MITRE Corporation, a not-for-profit company performing contract technical research and consulting primarily for the U.S. government. At MITRE he has supported a wide range of privacy activities, including privacy impact assessments, for major government programs. Prior to joining MITRE he was Director of Privacy at CareInsite, an e-health company, where his responsibilities included both policy and technical issues revolving around privacy and security. He has also held academic positions in the U.S. and the U.K. and taught courses on the history, politics, and ethics of information and communication technologies (ICTs). His research and writing have focused on ICTs and privacy and on the history and sociology of software development. Among his professional affiliations are the Association for Computing Machinery (ACM)—including its public policy committee, USACM—and the International Association of Privacy Professionals (IAPP).
