Today we will enjoy the cuisine of Chef carlos at Guiso latin Fusion! Let's check out the tasting notes on our two feature wines and then enjoy Chef Carlos's Pairing off his great menu! Our first wine is the Old Vine Zinfandel from Rodney strong Vineyards! Fresh, bright berry fruit form our heritage Russian River vineyard, combined with the ripe, peppery jam from our Alexander Valley and Dry Creek vineyards, make for a wonderful diversity of flavor, showcasing the best that Zinfandel can offer. This wine boasts notes of blackberry, plum and boysenberry with a touch of red fruit jam and creamy vanilla. Enjoy this Zinfandel now with spiced short ribs, pulled pork sandwiches or a barbeque chicken pizza. I love this wine and it is a perfect food wine for this amazing cuisine. When Rod Strong first acquired benchland acreage on Westside Road just behind the winery, he wisely chose to leave untouched, the 15 acres of old, gnarled Zinfandel vines that had been thriving since 1904. Today, we still harvest Zinfandel from those same old vines, along with a handful of vineyards we farm to the north in Alexander and Dry Creek Valleys. Next we will open the great Syrah from Balletto Vineyards and Winery. This is a single vineyard wine and really aperfect wine for Chef carlos's dishes. the BCD Syrah is a work of art! This Syrah opens with classic-cool climate aromatics. The first impression is lightly smoked bacon, earth and savory spices. A core of dark fruit follows and holds the wine together without overstepping. it's complex and elegant. Then there's a tart blackberry foundation that runs from start to finish and is a reminder that this wine is grown in a cool site. It has medium viscosity and finishes with notable, just-strong-enough tannins that lengthen the finish and pull for the next sip. With just enough of everything tightly balanced together, the wine shows its seriousness and the potential to age well. It should develop in the bottle for the next five (or more) years. “The goal of the Russian River Valley ‘neighborhood initiative' is to showcase the diversity and uniqueness of the Russian River AVA...We are seeking to explain the varying complex and sophisticated wine profiles coming out of this special region.” we have two great wines and the pairings are truly incredible! We refuse to compromise on quality in our restaurant. That's why we source our fresh ingredients from local farmers' markets. We have great new features with chef Carlos at Guiso Latin fusion! We will feature a great single vineyard Pinot Noir from Balletto Vineyards and Winery. We will start with the amazing Sav Blanc from Davis Bynum. Let's check out the tasting notes on these two wines and enjoy this great food and wine pairing with Chef Carlos. First let's look at the tasting notes for the BCD Pinot Noir. Bright and dark simultaneously, with mocha and earth aromas playing off fresh cherries. It has a wide and silky palate, booming aromas and just enough acidity and tannins to pull the wine through to a long and lasting finish. It's quite a ride. Under the initial aromas is a distinct and interesting spice undertone that aromatically lifts the wine, but it's the mid- palate weight, texture and perfect touch of acidity that define it. It's full and coating, start to finish, wave upon wave of pinot pleasure. This wine is incredible and will soon be a new favorite for you. We also have opened and will start with the Sav Blanc from Davis Bynum! The first to produce single vineyard Russian River Valley Pinot Noir in 1973, Davis Bynum was instrumental in bringing the prestige to Russian River Valley vineyards, still acclaimed as one of California's finest Chardonnay and Pinot Noir growing regions. Today, almost 50 years later, the heritage of Davis Bynum lives on through the hand-crafted creation of wines grown exclusively in Russian River Valley. 2020 was notable for being another dry growing season, with only a few showers in the spring, milder weather through most of the year, lower yields at harvest, and wildfires on the horizon. The dry season and judicious irrigation created smaller leaves and canopy area, so the fruit acclimated to receiving more light exposure than normal. We hand-picked Virginia's Block at 23.3 brix in the cool early morning hours of September 9. We like to highlight the ripe fruit characteristics of Virginias Block while maintaining the acidity for the structure of the wine. The fruit was lightly pressed and settled overnight before being innoculated with yeast and transferred to a combination of Acacia puncheons, two year old French oak barrels and stainless steel drums for fermentation. Each component was tasted and blended to highlight the very best characteristics of the fruit. To preserve this wines bright acidity, it does not undergo malolactic fermentation. The finished blend is gently fined and was bottled in mid-February. Chef Carlos knows all about our loyal local eaters all over the world visitors! Guiso a "jewel box of a restaurant" when it opened in 2015. It seems OpenTable reviewers agree. The small Healdsburg restaurant may only have a handful of tables, but its mix between Caribbean and Salvadorian cuisine provides miles of worldly flavor.Chef Carlos offers a great new cuisine features to pair with these great wines. His Instagram only started about a year ago but since the pandemic he's seen more growth because he started supporting local restaurants on Long Island while everyone was looking for the best takeout spots. Carlos tells us all about how he got into his love of food from his Mom. They're Hispanic which has a rich food culture and his Mom cooks enough for 12 guests even if its was just him and his Dad at the table. His Mom also brought him into the kitchen and taught him everything she knows. I think when someone has a passion for food but also cooks, you get a true perspective on what's really happening at a restaurant when they dine out. They can see the effort that a restaurant chef is delivering on the plate. A Memorable Dining Experience After telling Carlos about my latest dining experience at Garden Social in East Meadow, I asked him if he has had an experience that blew hismind? Carlos has a great story to share about his proposal at his favorite spot in Long Island City. It has a great view of the water and serves up 4 star Latin Fusion that will make your mouth water. Coincidentally it's now his fiancé's favorite restaurant as well, for obvious reasons. Speed Round Hidden Gems on Long Island This weeks picks for best brunch is in Huntington and you gotta check out his favorite lunch spot in Northport. If you're looking for Italian you should hear where he recommends you go in Dix Hills but if you're looking for an outrageously good cocktail, you'll have to take the trip to Manhattan. Searching for their own voices in a family of giants, it can be witnessed in the desire of its founding members to individuate themselves from their legendary forefathers, all the while preserving, sharing and honoring their history as they forge ahead together into the musical unknown.Diana Purim began her musical career in 1972, touring with Chick Corea’s Original Return to Forever in the belly of her mother. She grew up on the road traveling like a gypsy from country to country with her parents, Brazilian Jazz pioneers, singer Flora Purim and percussionist Airto Moreira. Krishna Booker is the son of renowned Jazz bassist, Walter Booker, nephew of Wayne Shorter and godson of Herbie Hancock. Credited by Herbie in his book for introducing him to Hip Hop and the idea for “Rock It”, Krishna began his musical career beat-boxing for Herbie. He later went on to making original music with Diana, his wife and childhood friend.The two share a deep love of music and a background in Jazz, Funk, Brazilian and Latin Fusion. Their passion for all kinds of music fueled the fire of their creativity and together, they stretched the boundaries of Hip Hop by fusing it with all their multicultural musical influences. “For the purists, we remind them that even Jazz is an art form born of Blues and Classical music. In fact,” explains Diana, “all of the world’s music has evolved from its most primitive indigenous origins, being shaped and molded by geographical, political, social and cultural influence to become what it is today.”Using their Hip Hop experience to carry them through their first Trip Hop venture, they found some success with a single called “Heavy Interference” from their first release. “It was a struggle for us to find our true sound,” says band leader / composer / percussionist / producer, Krishna. “We’ve been influenced and inspired by so many styles of music and were using the Eyedentity platform to experiment with them all. Although we had some brilliant moments, we hadn’t achieved a homogenous and unified sound until now. I feel like we have finally found Eyedentity’s identity with this new album.”During the search for their unique Urban/Brazilian sound, they began to notice commonalities in the art and music of varying countries, especially within the slaveculture, music, spirituality and art of oppressed peoples. In Brazil, slaves were allowed to bring their culture from their countries of origin. We clearly see this reflected in their spirituality, dance, art, food and music. The slaves in America were more restricted and forced to abandon their culture for the customs of their oppressors or risk being beaten or killed for not complying. Yet somehow, they found other ways of expressing their authenticity without risking life and limb through the musical mediums of Jazz, Blues, Rock, Hip Hop, etc…

Los Hollywood is the artistic vision of a American Latino Music band formed by Heidy Flores (vocals / bass) Gustavo Mojica (drums) and Mark Mondragon (guitar). They create contagious rhythms which undergird Flores' stunning voice on songs like "No Te Aguites" which went to the top of iTune’s Song of the Week picks and garnered more than 60,000 downloads. The band has been working on his new album with famed producer and engineer Thom Russo, producer for Michael Jackson, Tom Morello, Johnny Cash and many others Destiny, named as one of the 25 Break-Out Artists of 2016, by Shutter 16 Magazine, is a California born and based 20-year old phenomenon. Her 20115 song "Love Hurts" shot to #1 on the Local ReverbNation Pop Charts. Though new to the scene as a solo artist -- Destiny was 5 when she first appeared on Univision as part of al tribute for 911 victims -- before turning 12, Destiny had written 5 songs played on local radio stations. She has just released a new song, "Oblivion" and will be touring this summer to support it.
Marisa Ronstadt hails from a talented family whose name was made famous by her cousin, Linda Ronstadt. Marisa’s musical tastes are rooted in mariachi, R&B/soul, and rock, but like many Mexican-Americans raised in the U.S., her influences range from Lola Beltran and Pedro Infante, to The Beatles and Marvin Gaye. Now In Los Angeles, Marisa began songwriting with Jeremy Keller, and before she knew it, they had given birth to a new band, Marisa and The Know It Alls. Her debut single Blueberry Moon is the first recording by “The Know-It-Alls” and she joins us this Friday to tell the story. Matt LeGrand is a an emerging pop singer based in Chicago whose music is a sleek mix of Nick Jonas’ style and Justin Bieber's urban feel mixed into a unique sound that’s entirely his own. His debut single “Spring Break GRL” blasts off with a booming beat, Matt’s vocals creating an unforgettable melody that flows fluidly across the slick synths aimed right at his legions of fans known as The Legrand Girls. He will bring “Spring Break GRL” and his other songs to us Friday and any LeGrand Girl who wants to call in a talk with him is welcome on the air.
