July 1st and this is episode number 11! Since we won't have a show closer to the holiday, Happy 4th in advance! Here it is!! The secret recipe of the week! Shepherds Pie Luigi Style! Ingredients: 1 lb ground beef or turkey (you choose!) 1 can of creamed corn/regular whole kernel corn (cook first if you want to use frozen instead!) 1 can of cream of broccoli 4 medium sized potatoes 1 1/2 tbsp sour cream 1 1/2 tbsp butter Shredded cheese for topping Onion and garlic powders Salt and pepper Directions: Preheat oven to 350 degrees F/176 C. Wash, peel, and chop potatoes into chunks. Add to pot of salted water on stovetop, boil on medium-med/high heat until they're cooked. You'll be able to easily pierce them with a fork when they're done! While those are boiling, you can start your meat, cooking on medium heat, stirring frequently. Once potatoes are done, drain them and pot them back into the pot they were boiled in. Using a potato masher, mash until smooth. Add salt, pepper, butter, and sour cream, mash again and mix until smooth. Set aside. Continue cooking the meat until browned, adding salt, pepper, onion powder, and garlic powder, mixing it all in. Drain excess oil into a bowl to throw away later. Once browned, turn off burner and set aside. I make 4 individual-sized pies with this recipe but you can also fit these ingredients into a full 8x8 casserole dish, if you wish! Get those dishes ready for the layers! First layer the meat, distributing it all evenly on bottom(s). Second layer is the cream of broccoli. You don't need to heat it is up but can if you want. Use a spoon and scoop it into the dishes, covering the meat with an even layer. Third is the corn layer, you can use creamed or whole kernel corn. Both are yummy, one just has less ingredients! Also you can use frozen or canned, just be sure to cook it if it's frozen. Spread an even layer over the soup layer. *If you're a cheese fan, add a little layer of it here!* Fourth layer is the potatoes which seal it all up on top! I like to use a spoon and my hand and flatten out pieces of potato to fit perfectly in the dishes, I'm just a little OCD perhaps! But this works best in my opinion! Just be sure to wash your hands first! Use the potato to cover the top of the casserole(s). Sprinkle shredded cheese of your choice (cheddar works best I think) on top of the pie(s) and bake for about 10 minutes or until the cheese is melted on top! Remove from the oven, cool, and enjoy!! One Pot Sausage and Veggie Ingredients: 2 cups baby (or regular) potato, rinsed and cut small 1/2 red pepper, sliced 1/2 yellow pepper, sliced 1/2 zucchini, halved and sliced 1/2 onion (white or yellow), sliced and diced 1 package sausage, halved and sliced 3 tablespoons olive oil 1/2 teaspoon garlic powder 1 tablespoon Italian seasoning 1/2 cup chicken broth salt and pepper Directions: Wash your hands, then wash and dry potatoes, peppers, and zucchini. Prep all of it so you'll be ready when the time comes to add everything! Heat olive oil in a pot on about medium heat, add the potatoes, seasoning with salt and pepper. Fry until golden brown and cooked(8-10 mins). Once cooked, remove potatoes from the pot and set them aside. Using the same pot, brown the sliced sausage with 1 tbsp of olive oil. Once cooked, remove from the pot and set aside. Same pot again, add the diced onion and garlic powder, cooking for 1-2 minutes with the remaining oil. Add the pepper and zucchini, season with Italian seasoning, salt and pepper, cooking until softened (~2 mins) Add the sausage and potato back into the pot and mix everything together. Add the chicken broth and cook for 5 more minutes. Adjust seasonings as needed and serve! Garnish with parsley and enjoy! You can use any kind of sausage you'd like for this recipe, or if you're in Germany, I know there's different varieties of sausages that I don't even know about! :) Hello again! Welcome back, or welcome, if it's your first time here!! It's great to have you (back again)!! Today's treat is nice and sweet!! Yum! Here's my recipe for Avocado Dark Chocolate Truffles! I hope you enjoy them! I don't recall how many this made, but we had them around for a while and they stayed good until we finished them! Mmmm! Now I want to go out and get an avocado!! Getting off topic! Ha! Here's the good stuff! Dark Chococado Truffles (I just thought of this name now and now I'm so sad I didn't get to say it in the episode!! :,( Next time!) Ingredients: 1 cup of dark chocolate chips, melted (I prefer the Hershey's brand Special Dark, but choose whatever brand you want!) 1 ripe avocado, mashed (they're ripe when completely blackened and soft, if not sure, look online *shrug*) 1 teaspoon vanilla extract 1/4 teaspoon kosher salt 1/4 cup cocoa powder (I also use Hershey's Special Dark cocoa powder for that just so it's a consistent flavor, again, do what you want!) *Don't forget that dark chocolate has caffeine in it so be careful when eating it before bed if you use both kinds! Ha!* Directions: Melt chocolate chips either in the microwave (short intervals of time and mix to prevent burning and melt evenly) or make a double boiler on a stovetop, putting water on about medium low until bubbling (Google "double boiler" if you need help!), melting chips and stirring frequenting. In a medium bowl, mash avocado and add the melted chocolate, vanilla extract, and salt. Stir until smooth and fully combined. Put in refrigerator for 15-20 minutes, until slightly firm. Once stiffened, using a spoon, get a small ball of it and roll it in your palms, then rolling them in cocoa powder. Put on a plate to enjoy or in a sealable container for later! Store them in the fridge! Enjoy!! Let me know how they went if you made them!! Hey everyone! Here's the recipe from today! Enjoy!! Buffalo Mozzarella Sticks Ingredients: 1 package of cream cheese 1/2 cup buffalo/mild sauce 1 1/2 cups of cooked shredded chicken or canned chicken 2 cups shredded mozzarella 1 cup shredded cheddar 1 packet of ranch mix (powder) 2 eggs (or more if needed) Breadcrumbs Directions: Cook chicken, if necessary, cool and shred. Mix all ingredients EXCEPT for the eggs and breadcrumbs in a bowl and thoroughly mix. In a glass baking dish, line the bottom and sides with wax paper. Dump your mixture into this dish and flatten it out so it's an even thickness throughout. Cover and place in the freezer for 1 hour or until hardened. Preheat oven to 400 degrees F(204 Celsius) and take the frozen sticks out of the freezer. Using a cutting board or other flat surface, flip the block of buffalo out of the dish, and you can either peel off the paper now or cut it and then peel, do what works best for you! Peeling it off first is easier in my opinion. Cut the block into about mozzarella stick sized shapes or squares work too! Next, we'll be coating these in egg so get ready! Get two medium sized bowls, one for breadcrumbs and one for the eggs. Crack the eggs into one, discard the shells. If you like recycling, you can use egg shells in your compost or plants for extra vitamins! Just be sure to wash them and crush them first! Have a baking sheet ready (and next to you preferably to avoid a mess)! Dip each stick into the egg mixture, then the breadcrumbs, repeat if you want a crunchier coating! Then lay them on the baking sheet, spacing them a little bit apart. When you're done with that, place them in the oven for about 15 minutes (rotating in between) or until golden brown! Once done, let them cool, and enjoy!! I like mine with ranch or even just plain! Let me know how you like them, if you make them! Thanks again for joining me! Hey everyone!! Here's the recipe for the cookies! I hope you enjoy them as much as my family and I do!! Coconut Cookies: 1/2 cup flour 1/2 tsp baking powder pinch of salt 4 tbsp (or half stick) of butter (room temp!) 1/3 cup sugar 1 egg 1/2 tsp vanilla extract 1 1/2 cups sweetened shredded coconut 1/4 cup chocolate chips, if wanted Recipe: Preheat oven to 375 degrees F or 190 degrees C. Line a cookie sheet with parchment paper. DO NOT use wax paper in the oven!!! The wax will melt and paper can catch on fire!! :( Take out butter to soften at room temp! If I'm crunched on time, I unwrap the butter, put it in the bowl I'll be using for mixing it in, and let it sit in top of the oven while I'm doing the next step! Whisk flour, baking powder, and salt together in a medium sized bowl. Grab an electric mixer! Add sugar to the butter and use mixer to beat it until it's creamy and smooth, then add the egg and vanilla and beat again until smooth. Next, add the flour and beat until smooth again. Use a rubber spatula to clean the mixer off to save some of that cookie dough! Your done with the mixer now so you can set that aside. Grab a wooden spoon and mix in the shredded coconut until it's even distributed in the dough. Add chocolate chips and mix in, if desired. Use a tablespoon to drop rounded balls of dough on to parchment-lined cookie sheet, about one inch apart from each other. These cookies don't really grow outwards so don't worry if they're a little closer. Bake for 8-12 minutes, depending on your oven, mine cooks a little fast. The cookie edges should be golden brown. After they're cooked, put the sheet on a cooling rack until cool. Enjoy! Let me know if you made these and how they turned out! Thank you again for joining me on my show! Hey everyone! Here's a rundown of the recipe from today's show!! Turkey Meatballs and Lemon Rice Recipe Rice Ingredients: · Rice (I use 1 cup, you can use more or less if you want) · 1 tsp lemon juice · 1 tbsp parsley · ¼ cup grated Parmesan cheese, once finished! · Cook rice per package instructions if necessary! Instructions for Rice: 1 Cook how the packaging says if you're unsure, that's what I do! 2 I used brown rice for mine, which requires 45-60 minutes to cook (using a microwave can make it faster!) 3 I like to make sure the rice is cooked enough by taste testing a piece or two once near the end of cooking. 4 Start making the meatballs after the rice is done! Meatball Ingredients: · lb of ground turkey · 2 tbsp milk · ¼ cup breadcrumbs · ½ tsp lemon juice · 2 tbsp parsley · ½ tsp garlic, minced · Pinch of salt and a few dashes of black pepper · Add few sprinkles of onion powder and garlic powder for extra flavor! Instructions for Meatballs: 1 Mix all meatball ingredients together in a large bowl, use a wooden spoon or your hands (WASH THEM BEFORE AND AFTER!!) to thoroughly mix meatball mixture. 2 Form ~1 inch diameter balls and place them on a plate to cook later once they're all formed. 3 Form all meatballs and heat up medium to large sized skillet with 1 tbsp of olive oil on medium heat *CAUTION! Oil gets very hot and messy!* 4 Add meatballs to skillet, making them golden brown on all sides, they don't need to be thoroughly cooked, that'll happen when they're in the rice! 5 After browned, line a plate with a paper towel or two, put the meatballs on it and dab the grease off lightly. 6 Take the rice from the first part and put it in the meatball pan, stirring for about 1-2 minutes 7 Add ½ tsp of garlic and pinch of salt, cooking for 1 minute, then stir in ¾ cup chicken broth, 2 tsp lemon juice, and bring the heat down to simmer. 8 Add the meatballs back into the rice, then turn to low, and cook for about 10-15 minutes or until the rice is tender and meatballs are thoroughly cooked! 9 Turn off burner, remove from heat, sprinkle ¼ cup grated Parmesan cheese and a few shakes of parsley on top, cover and let it sit for 5 minutes before serving! 10 Enjoy! Hey everyone!! Here's the recipe for today! Enjoy! :) Ingredients: · Salt and black pepper · 8 oz. of elbow macaroni or penne (you can use whole wheat for a healthier dish!) · 2 tsp olive oil · 1/2 cup finely chopped onion · 1 tbsp finely minched garlic (1 tbsp of garlic =3 cloves) · 1 lb ground turkey · 1 tsp steak seasoning · 1 (14.5) can of diced tomatoes, if you want · 2 tbsp tomato paste · 1 tbsp yellow mustard · 1 tbsp dill pickle relish · 6 slices (6 oz) reduced-fat cheddar Kitchen Tools: · Rubber spatula · Pan for cooking the turkey · Pot to boil pasta · Colander · Glass baking dish Directions: 1. Preheat your oven to 350 degrees Farenheit 2. Bring a medium pot of lightly salted water to a boil. Add the pasta in, whichever type you prefer, I use elbow. Cook until al dente, drain and set aside. 3. While you're making the pasta, get a large pan and heat over medium-high heat. Add the Olive Oil and heat it up a little. Add the onion and garlic and sauté, stirring, until fragrant, 1 minute. 4. Add the turkey and steak seasoning, mixing it all together. Cook it up, stirring frequently, until the turkey is browned on the edges (the turkey may not be fully cooked, just slightly pink still, it will finish cooking in the oven). Drain the juices that accumulate. 5. Add the canned diced tomatoes, tomato paste, mustard, and relish. Mix it all together. Reduce heat to medium. Remove the mixture from the heat and stir in the pasta. Smooth down the top. We want it nice and flat so that cheese cooks evenly. Lay slices of cheese evenly on top of the casserole. Now we're ready to bake! 6. Place casserole in the oven and bake until the cheese is melted, about 18-22 minutes. Once it's done, remove it from the oven, and don't forget to turn the oven off! Garnish with diced tomatoes (if you like), a little salt and pepper, and let it cool before serving! This should serve about 6 hungry mouths! Thank you again for checking out my podcast! No Bake Cookies Ingredients/Tools: · ½ cup peanut butter · ¼ cup honey · ¼ cup coconut oil · 2 tbsp cocoa powder · 1 tsp vanilla extract · 1 cup of quick oats · Cookie sheet · Wax/parchment paper (they both work well) · Stovetop and freezer! · Whisk, Rubber Spatula, Spoon *You can add some chocolate chips or nuts in if you like! Directions: 1. In a saucepan on low-medium heat, melt peanut butter, honey and coconut oil. Use a whisk to stir until smooth. Turn down the heat if it's starts getting bubbly. 2. Stir in vanilla extract, then whisk in the cocoa powder until smooth again. Once smooth, whisk is no longer needed. 3. Turn off stove and stir in the oats. If it's a little runny, you can add a little more oats, but no more than ¼ cup. 4. Grab that cookie sheet and lay some wax paper or parchment paper on top. This will make it easier to transfer the cookies after they freeze. 5. Using a tablespoon, scoop cookie mixture into bite sized (or a little bigger) cookies and using the rubber spatula, pop them onto the cookie sheet! You can put them as close as you need to if you're making a lot of them since they don't grow! 6. Once you've filled up the cookie sheet, put it in the freezer for about 10-15 minutes, and there you have it! No bake cookies! 7. Store them in the fridge since the coconut oil gets softer at room temperature!! Enjoy! Ingredients for Chicken: 2 chicken breasts 2-3 tbsp olive oil 1 tbsp lemon juice 1 teaspoon of oregano Add pepper, garlic and onion powder as you like Shredded mozzarella (added last!) 1. Cut chicken breasts lengthwise, and widthwise if desired. Put chicken in glass dish or medium sized bowl. 2. Add olive oil, lemon juice, and seasonings, mix until combined. 3. Cover and put in the fridge for 30 minutes. Ingredients for Bruschetta: 1 Roma tomato 1 tbsp garlic, chopped/pressed Italian seasoning Splash of olive oil Splash of lemon juice Salt and pepper to taste 1. Chop tomato into tiny pieces, put in a bowl or glass container, if you're picky about smelly dishes like me!! :P 2. Add garlic, olive oil, lemon juice, and seasonings. Stir, cover, and refrigerate until you're ready to use it! 3. When chicken is ready to start being cooked, heat up a pan on stovetop on low-medium heat. Place chicken in pan and cook (covered) for 10 minutes on each side or until thoroughly cooked. 4. When that's done, get out the bruschetta and cheese, baby! Move those chickens close together, and using a tablespoon, add bruschetta evenly on top of the chicken pieces, and sprinkle with mozzarella. 5. Cover and heat until the cheese is melted! Enjoy!
