Wäre da beim ausgeschilderten Küstenwanderweg zwischen Ferragudo und der Praia Marinha nicht dieser eine Punkt Nummer 5 so auffällig weit weg von der Küste gewesen, wären wir ja nie da gewesen. Was mag da sein? Ah: ein Weingut! Gut. Wir also hin zur Quinta Monte de Salicos, wo wir Paulo Ferreira und Gorete Matias trafen. Sie sind keine Winzer, sondern Foodies und setzen auf dem Weingut mit ihrer Firma Algarve-Gourmet die Idee vom passenden Essen zum Wein um. Unser ungeplantes Kommen an einem Samstag mit Smalltalk und einem Glas Wein endete mit der Zusage, am nächsten Tag noch einmal zu kommen – dann aber zum vollen Programm: mit vier Weinen, passenden Tapas, reichlich Informationen und zwischendurch Live-Musik – denn während Gorete in der kleinen Küche die einzelnen Gänge zubereitet, moderiert Paulo nicht nur die Weine, sondern holt auch seine Gitarre hervor und singt.Die Aufnahmen entstanden unter widrigen Umständen: es regnete nicht, es schüttete. Hin und wieder ist das Prasseln des Regens mindestens so laut wie die Stimme des nicht leisen Paulo. Und das (teilweise) Filtern des regens hat halt der Stimme geschadet – aber wir haben ja technische Mängel bei den Aufnahmen noch nie gescheut, so lange die Inhalte stimmen! Cook tomatoes in oil for 2-3 minutes, then add garlic, salt and pepper 2. Slice bread into ½ inch pieces and brush one side with oliva oil 3. Cook oiled side of bread in cast-iron pan 4. Brush top of bread with olive oil, flip, and cook other side 5. Spoon cooked tomatoes onto each slice of bread and top with balsamic and basil Ingredients for Gochujang Carbonara: -3 ounces parmesan cheese -2 tbs gochujang -1 tbs rice vinegar -1 tsp honey -3 garlic cloves -2 medium scallions -8 ounces pancetta -1 tbs canola oil -1 LBS dry spaghetti -4 large egg yolks -Kosher salt -2 tsp ground pepper Steps: 1. Combine gochujang, rice vinegar, honey into small bowl 2. Dice the pancetta and cook in oil in a skillet. Then remove all but ¼ of the remaining fat from pan 3. Add garlic and scallions to the skillet, cook until golden brown, then add gochujang mixture 4. Cook spaghetti. While spaghetti is cooking, whisk together egg yolks, then add parmesan, kosher salt, and black pepper 5. Transfer spaghetti to skillet with ¼ cup pasta water and toss until coasted in sauce. 8 slices sourdough bread 2 medium courgettes, cut into ¼ cm slices 200g haloumi cheese, sliced 3 tablespoons oil ¼ teaspoon good quality dried oregano 1 teaspoon fresh chopped rosemary ½ teaspoon seasalt Zest 1 lemon ( keep the rest for the dip) Handful of chopped parsley Mix the oil with the oregano, rosemary and lemon zest. Toss in the courgettes and haloumi to coat well. Place the courgettes on hot grill and season with salt. Cook until seared on both sides and slightly soft. Grill the haloumi until marked and add to the courgettes with any remaining marinade and the parsley. Grill the bread to toast on both sides. Cut the lemon in half and grill to scorch. Cannellini bean dip 1 x 400g tin cannellini beans drained 1 small onion finely chopped 1 clove garlic, minced 1 tablespoon cooking oil 50ml good quality olive oil Lemon from above 50g grated parmesan + extra for garnish Salt and pepper to taste Cook the onion and garlic in the cooking oil until soft and golden. Mix in with the beans, olive oil, lemon juice and parmesan. Blend to a smooth puree – add a little water if necessary and season to taste. Spread over the toast and top with grilled courgettes, haloumi, some grated parmesan and a drizzle of oil.

Show Notes:A couple years ago when we were on our way home from Mexico, we were talking to a lady in the airport shuttle. My kids were telling her how sad they were to leave Mexico, they loved the trip so much. This lady said something to me that has really stuck in my mind, “ I don't want to stay in Mexico because I love to be home. But I really wanted to go on this trip and bring the experience home with me.”That was powerful to me! I really love to be home, too!! That trip changed the lives of each member of my family who went, and I wanted more than anything to carry that home into my daily life. As we have hit emotional or hard times in the years since, I often try to picture myself and my family playing on the beach, or heading out on the ferry from Cancun to Isla Mujeres. It's wonderful to have a special place to go when life is rough, even if it's just in my mind.Every time I eat chips and guac or hear some mariachi music, I am brought right back there. My biggest wish would be able to bring every one I know and love with me back to Mexico to experience it!! Sadly, that is just not possible physically or financially.I have tried my best to come up with what I think is the next best thing. I am inviting you to join our Virtual Summer Cooking Club!
