This is part 2 of a discussion with Brandon Bir, who is the director of sustainability at Crimson Cup coffee in Columbus Ohio. In this episode we focus on sustainability in coffee production.We talk a lot about sustainable farming of coffee cherry and get into many topics like certifications and the complications associated with those efforts as well as the challenges with traceability. We also discuss the affects to the farming community when sustainability is not a priority.We also tell the story of how Crimson Cup worked with a group of farmers in Uganda to provide them the ability to roast coffee for the first time and make a difference in the process.Brandon grew up in rural Indiana and has a passion for farming and sustainability. He brings that passion to the work he does at Crimson Cup. After studying the culinary arts Brandon became a barrista and then a coffee roaster and educator. Brandon works to develop a network of farmers and producers for Crimson Cup that promotes high quality coffee and fair trade. Brandon is also an active collaborater with researchers at the Ohio State University.MenuBrandon's Recipe for coffee2 glass servers, 26 grams of medium ground coffee, a kettle of 200 degrees fahrenheit water, a Hario v60 with a white/bleached paper filter, a spoon or stir stick, a gram scale.Dump your ground coffee into one of the glass servers. Place on the scale and tare. Add 400 grams of hot water (start a timer). At 1:45, stir 10 times to make sure the extraction is even. At 2:15, dump the solution through the filter/V60 over your second glass server. There's a good chance you've seen the headline making its rounds: Ford's CEO is on record claiming they have over 5,000 open mechanic jobs paying $120,000 a year that they just can't fill.  When I heard it, I had a reaction because the statement is deeply disconnected from reality. It's a gross oversimplification based on surface-level logic, and frankly, it is completely false. (A few minutes of research will prove that, if you don't believe me.)  This week on Future Focused, I'm not just picking apart Ford. I'm using this as a case study for a very dangerous trend: blaming job seekers for problems that originate inside the company.  The real danger here is that leaders are confusing the total cost of a role with the actual take-home salary. That one detail lets them pass the buck and avoid facing the actual problems, like:  ​Underinvestment in skill development.  ​Outdated job designs and seeking the mythical "unicorn" candidate.  ​Lack of clear growth pathways for current employees.  ​Systemic issues that stay hidden because no one is asking the hard questions.  If you're a leader struggling to hire, you don't have a talent crisis; you have an alignment crisis and a diagnostic crisis.  I talk through a case study inside a large organization where I was forced to turn high turnover and high vacancy around by looking in the mirror. I'll walk some key shifts like:  ​Dump the Perfect Candidate Myth right now, because that person doesn't exist and hiring them at the ceiling only creates a flight risk.  ​Hire for Core Capabilities like adaptability, curiosity, and problem-solving, instead of a checklist of specific job titles or projects.  ​Diagnose Without Assigning Blame by having honest conversations with the people actually doing the job to find out the real blockers.  By the end, I hope you'll be convinced that change comes from the person looking back at you in the mirror, not the person you're trying to hire.  ⸻If this conversation helps you think more clearly about the future we're building, make sure to like, share, and subscribe. The Vardaman-native is in town for the holidays to talk about sweet potato farming, turkey carcass gumbo, fermenting, preserving, recipe developing, working as the current Director of The People's Kitchen in Philadelphia, PA, and more.Guest(s): April McGregerHost(s): Malcolm White and Carol PalmerEmail: food@mpbonline.orgIf you enjoyed listening to this podcast, please consider contributing to MPB: https://donate.mpbfoundation.org/mspb/podcast Turkey Bone Gumbo by April McGregorRoux:1 cup fat — I used a combination of sunflower oil and lard from pasture-raised hogs1 heaping cup all purpose flourSeasoning vegetables & sausage:1 1/2; cups chopped celery1 1/2; cups chopped green pepper3 cups chopped yellow or white onionSaltBlack pepper1 pound Andouille or country sausage, preferably smoked, cut into bite size pieces (optional)Turkey & turkey stock:Turkey carcass, picked of as much meat as possible and reserved1 gallon water3 Bay leavesA pinch of cayenneA handful of fresh thyme sprigs or a teaspoon of dried thymeA handful of parsley stems1 onion, quartered, plus the skins from your chopped onion seasonings1 carrot, cut into 1-inch chunks2 stalks of celery, plus ends and pieces from your chopped celery seasoningsEnds and pieces from your chopped green pepper seasoningsA couple of smashed garlic gloves1 tablespoon whole peppercorns2 whole allspice berries, optionalA few drops of hot sauceSeveral pinches of saltTo Finish:1 cup chopped scallions1 cup chopped parsleyButtered white riceFile powder (optional)Hot sauce1. Assemble all of your seasonings and have them ready and your stock well under way before making your roux.2. In a large stock pot, start your turkey stock. Your carcass needs to be fully submerged under water. Cut your carcass down the breast bone or into several pieces to make this happen. Bring the stock to a gentle boil, then turn down to a steady slow simmer and cook for about 2 hours. Taste stock for seasoning and add more salt if necessary. Remove the carcass from the stock and set aside to let cool. When cool enough to handle, pick the meat from it and set aside. Strain the stock and reserve.3. Make your roux: In a large, heavy bottomed pot, heat oil over medium to medium high heat. Whisk in flour. Stir continuously until your roux is the color of dark brown sugar or chocolate. This may take 45 minutes or more. Take turns stirring with your friends or family, but keep stirring. If you are afraid that your roux is burning, turn down your heat.4. Dump your vegetable seasonings – onion, celery, and green pepper- into your roux and stir. Add a good pinch of salt and pepper and cook until wilted, about 5 minutes. Add your sausage and cook 5 minutes more.5. Next whisk in gradually about 8 cups of stock. Bring to a simmer and cook uncovered for 1 1/2 hours. Add reserved turkey meat and simmer another 10 minutes then stir in parsley and scallions. Taste for seasoning and add more salt and pepper as desired. In a video that went viral on Monday, two people wearing City of Denver uniforms can be seen at a roadside taco stand dumping bleach into big jugs of agua frescas, radishes and pickled onions. The video attracted tens of thousands of likes, shares, and outraged comments. But what's the real story behind the shocking imagery? Host Bree Davies talks to Mario Martinez, who documents and promotes Denver's Mexican food scene on Instagram (now as @AnunciosDenver) and then Danica Lee, the longtime director of the Public Health Investigations Division of the Denver Department of Public Health and Environment.   Danica asked that we share this recent video that her office made with basic food safety tips.
