Aaron Polsky is an innovator, award-winning bartender, influencer, musician, and entrepreneur. He is renowned for his creative cocktail programs that demonstrate a reverence for the classics while showing an affinity for the modern. He began his hospitality career in New York City at the age of 1 while working for Thomas Keller at Bouchon Bakery and as a host at the acclaimed Milk & Honey. He then went on to work at White Star, where he began to train behind the bar with renowned barman and mentor, Sasha Petraske. Aaron is the Founder of LiveWire Drinks, a line of cocktails by exceptional bartenders packaged and sold in cans. LiveWire serves as a platform that bartenders use to reach their fans and future fans worldwide. For this week’s episode we’re getting a little less boozy...or rather, booze free altogether! In this episode we talk about SEEDLIP - one of the most successful spirit launches out of the UK in recent years - a product that bills itself as the world’s first distilled non-alcoholic spirit. What does that even mean? How do you drink it? And why has it been so wildly popular in the craft cocktail community? My interview with bartenders Aaron Polsky and Laura Lashley will clear that all up. They’ve been working with the brand here in LA, and have been singing its gospel since it landed stateside. This is our first interview with multiple guests and we did this on location at Aaron’s home bar Harvard & Stone in Hollywood. Seedlip East Side - makes 1 drink 2 ounces of Seedlip Garden 108 3/4 ounce fresh lime juice 3/4 ounce simple syrup 2 cucumber slices small bunch mint leaves In a cocktail shaker, muddle a cucumber slice and 5-6 mint leaves. Add the Seedlip Garden 108, fresh lime juice, simple syrup, and ice. Shake until well-chilled, then double-strain into a an ice-filled rocks glass. Joe Nicchi of the CVT Soft Serve Truck joins Winston and David to get into his distaste for strawberries. For Hot Tastes, Winston wants there to be more cooking with lava while David staff to be forthcoming when there’s an issue and not pretend like nothing is wrong. For the tasting, raw strawberries are served with balsamic glaze and nutella, strawberry gazpacho, a strawberry milkshake and the strawberry balsamic shrub from the Aaron Polsky episode are all served.

Bar manager Aaron Polsky hosts Winston and David at Harvard and Stone to discuss shrubs, a beverage made from fruit juice and vinegar. Centuries ago, shrubs were used to preserve fruit juices but with the advent of refrigeration, they fell out of fashion until a recent cocktail renaissance, but Aaron wants no part of it. For the tasting, homemade strawberry balsamic and orange champagne vinegar shrubs are served in addition to switchel.
