Tim Meagher from Roscrea, Co. Tipperary, who will host this year's Irish grassland Association Beef Event, is on this week's Beef Edge podcast to discuss his farm system, while Paddy Casey from the Irish Grassland Association highlights what to expect at the event. It will take place on Tuesday June 10th, with the event kicking off at 6:30 pm sharp and will conclude at 8:30 pm.  Tim operates a store-to-beef system on 88 ha of grassland and 24 ha of tillage. When he took over the reins, he pushed suckler cow numbers to 90 – they were predominately Limousin which were crossed with a quality Charolais stock bull; heifers at the time were ran with an Angus bull. Separately, weanlings were also purchased from the west of Ireland. At the time, the farm was also home to roughly 200 ewes.  However, over a decade ago, Tim moved to simplify the operation and focused on moving to a traditional store-to-beef enterprise, prioritising on incorporating as much grass into the diet as possible.  Looking at the stock present on the farm, it's evident that Tim - who does all the purchasing from marts in the west of Ireland - has a keen eye for quality. Heifers and bullocks are bought in September and October each year weighing in the 500 – 520 kg bracket. These are then finished the following year from July to October as they come fit for slaughter; all cattle are slaughtered under 30 months-of-age.  Currently, there is 252 head of cattle on the farm - 160 bullocks and 92 heifers. During the grazing season, the cattle are run in large batches of roughly 40-50 head in a paddock system; there are roughly 43 paddocks on the farm. Strip wires are also used to achieve desired clean outs and to manage paddocks correctly.  In the springtime, all cattle are grouped according to age (January, February, March and April-born calves) to ensure easy management during the summer period.  Tim places a huge focus on preserving top-quality silage as a winter feed. If he can hit 75% plus DMD silage, he can cut out the need for meal over the winter.  However, due to weather conditions in 2024, silage quality ranged from 68% to 73% DMD on the three cuts harvested last year.  As part of the operation, Tim places a big focus on animal health to ensure all animals reach peak performance during their stay on the farm. Vaccination and dosing are carried out when required, and Tim has invested in state-of-the-art handling facilities to manage animals efficiently and safely. Tim first introduced clover onto the farm in 1998 and now both red and white clover play a pivotal role in silage production and on the grazing platform. Since incorporating clover into the system, he has reduced the reliance on chemical nitrogen (N), while not negatively impacting the kilograms of beef sold off the farm.  A slurry aeration system is also present on the farm. Tim places a huge emphasis on health and safety and outlined his handling facility and technologies he uses to be safe and labour efficient Paddy Casey said that the Irish Grassland Association National Beef Event is an event not to be missed. With the upcoming Irish Grassland Association National Beef walk taking place on Tuesday 11th June, suckler and sheep farmer Martin Shaughnessy from Co. Mayo, and the Irish Grassland Association Beef chairperson, Paddy Casey, are on this week's Beef Edge to discuss Martin's system and the upcoming open day. Martin runs a suckler-to-weaning system while also lambing approximately 150 ewes – a typical suckler and sheep operation in the west of Ireland. Martin now runs a herd of sixteen three-quarter-bred Limousin dams mated to Belgian Blue sires each year. Maiden heifers are crossed back to Limousin genetics while sexed semen was also introduced in 2023. Breeding season has gone very well with all cows inseminated. The sheep enterprise consists of Suffolk and Texel-cross ewes – split lambing at the start of February and then again around St. Patrick's day each year. The ewes are synchronised to leave the management during lambing easier.  The suckler system is quite simple.  The cattle rotationally graze a 10-12 ac block on the home farm which is laid out in paddocks under a leader-follower system. Martin is also involved in the Teagasc Agricultural Catchments Programme with the farm located in the Cregduff catchment, east of Ballinrobe town, Co. Mayo (Eircode F12PR23). The farm walk is a free event and is very kindly sponsored by FBD Insurance. Declan O'Rourke has been a favourite of mine since hearing a recommendation from Paul Weller for the song Galileo (Someone Like You) and the debut album, Since Kyabram back in 2004. In our chat, we dig in to some incredible stories behind his songs and process from the move to Australia as a young man to his return to Ireland aged 24 and how he landed in the middle of a fiercely creative music scene in Dublin that was the fertile breeding ground for the likes of Glen Hansard/The Frames, Paddy Casey, Gemma Hayes, Damien Rice, Lisa Hannigan, and many more. It was a real highlight to also properly chat about his magical new LP - Arrivals - which was released in April 2021. The most emotionally raw and affecting album of his career, was recorded over six days at Paul Weller's HQ - Black Barn studios in Surrey, with Weller producing (‘he was there every moment, before, during and long after, discussing ideas about this and that, even down to the artwork. It was hugely impressive…'). The sound is stripped back to Declan's soulful and resonant voice, the virtuosic acoustic guitar playing for which he's renowned and only the occasional sparse arrangement of strings and late-night drums bringing colour and light to the LP's 10 songs. Paul also adds his multi-instrumental abilities to the recordings, including a beautiful piano accompaniment to the closing track. This week's show opens with a version of our theme song that we made up especially for our guest, "Famous" Dave Flynn. This leads to a bit of chat between Kieran, Luke and Rory before they welcome Dave to the show.After reaffirming his hatred of first-beat-third-beat clappers everywhere, Dave takes us through his musical twenties, a time when he played bass guitar with some of Irish music's most famous names, most notably Paddy Casey and Dave Couse. He recalls the many big shows and venues they played, opening for legendary acts such as Bob Dylan and often appearing higher on the bill than some other legendary acts including Gary Moore. Although he found considerable success as a bass player, Dave tells us that he couldn't shake his desire to be a guitarist which led to him going back to music college to hone his skills.Dave talks about forming a Stevie Ray Vaughan cover band during his time in college, a band that Kieran was also in. Kieran and Dave remember the confusion caused by Dave forgetting to tell the rest of the band members that his guitar was down-tuned one half step. The musical and personal relationships formed during his time in college with Kieran would ultimately lead to Dave leaving his native Wexford behind and moving to Sligo to be closer to a music scene that he enjoyed.We listen to Dave, Luke and Kieran perform a version of Paul Simon's "René and Georgette Magritte with Their Dog After the War", recently arranged by Luke and Dave and performed as part of Kieran's show "Not A Theme Night".On the subject of Paul Simon, Dave tells the story of the time he and his friend engineered an encounter will Paul Simon, accosting him while he was doing his grocery shopping. Kieran then hits Dave with a philosophical question, presenting him with the theory that all musicians dream of making it big and then asking him if he has had a reckoning with himself over whether or not this might still happen for him. Dave assures Kieran that he's still fully intent on being a rock star and that he'll never give up hope.Dave discusses his work as a choirmaster, how Sligo's Hawk's Well Theatre initially gave him an opportunity to do something he hadn't done before and how it eventually led to him appearing on TV in the show "David Brophy's Choir Of Ages". We take a listen to a choral arrangement of one of Kieran's songs that he co-wrote with Kate Winter. The song, called "Meadhbh's Call", is heard here performed by the Heart's Desire Choir with an arrangement by Dave.In the final segment of the interview, Dave talks about what he would do if money was no object before Luke and Dave reveal their mutual desire to obtain a private pilot's license which leads to a small bit of aviation chat on our otherwise music-centred show! We close out the interview with a blues piece called "Tore Down House" recorded and performed by Dave, friend-of-the-show and previous guest Sinéad Conway and drummer Steve Kohlmann.In the post-interview, Kieran, Luke and Rory discuss their plans for season two of the podcast and ask the listeners for their opinions on a few things, namely the numerous variations on our theme song that we've featured over the last nine episodes. The show closes with a short snippet from each of those theme songs.
