How is private equity impacting food costs? This week's episode of the Restaurant Business podcast “A Deeper Dive” features John Davie, the CEO of Buyer's Edge Platform. Buyer's Edge is a digital procurement platform that helps restaurants use data and other tools to source food and other supplies. It operates numerous technology brands, including Consolidated Concepts. As much as the restaurant industry focuses on front-of-house technology like mobile ordering and kiosks, back-of-house tech is also important—particularly with food cost inflation. We talk about that inflation and why Davie believes that pre-pandemic food cost levels are not returning anytime soon. Hint: It has something to do with ownership of the vendors that produce that food. We talk about how long that rate of inflation could last, and what operators can do to offset it after three years of looking for profits where there weren't any before. We're talking food costs on A Deeper Dive so check it out.

What happens when you connect a Hollywood storytelling legend to a world-class "liquid storyteller"... and then sit back and listen? MAGIC. I think a new format for Beyond Curious just emerged... Context: Michael Hauge has been one of Hollywood's top story experts since 1985. He consulted for Will Smith to help create I Am Legend... and has worked on projects starring Julia Roberts, Morgan Freeman, Alec Baldwin, Chris Pine, Reese Witherspoon, Tom Hardy, Tom Cruise, and many others. Ryan Castelaz is a "liquid storyteller" and the founder of Discourse Coffee, which Growler Magazine called “the most gonzo, balls-to-the-wall, experimental coffee house.” Ryan has been featured in Milwaukee Foodie, Food & Wine, Barista Magazine... etc. I was catching up with Michael last week when he asked about someone (Ryan) in a video I showed him from the "Curiosity Quest" retreat I co-hosted with John Davie... Long story short, Ryan, Michael, and I got on a call back in October. The coolest part? When I had Michael tell an AMAZING story... ... and then had Ryan translate that story into a drink that would tell that story in liquid form. It was honestly one of the COOLEST conversations I've ever been a part of. Thinking of calling this "Brilliance Blending™" where I bring two masters of their craft into a conversation... Anyways... this episode is the byproduct of that conversation. It was too good NOT to turn into an episode! Ryan and Michael, thank you for the epic conversation! Want to go deeper with Michael and Ryan? Check out episodes #134 and #135 to listen to my conversations with Ryan. And check out episodes #36 and #37 to hear my conversations with Michael! In the latest episode of Hospitality Hangout, Michael Schatzberg “The Restaurant Guy'' and Jimmy Frischling “The Finance Guy'' chat with John Davie, CEO and Owner of The Buyers Edge Platform, to discuss his mission to help local restaurants, the importance of clean data, and how he is leveraging tech to help the environment. Frischling asks Davie about his background. Davie shares that he has spent his entire career helping small, independent, local, mom-and-pop restaurants, get some of the same advantages as the larger chains. He talks about recognizing a need in the industry because smaller restaurants simply could not compete when it came to real estate, technology, software, and buying power. Davie, along with some insights from his father, decided to “even the playing field”, by developing a company, 25 years ago, that would give those businesses the same leverages and collective buying power as the big brands. Their concept evolved into Buyers Edge Platform, which is a digital procurement network, that leverages over $2 billion in collective food spend. The guys talk about the company's culture and how it helped them not only navigate the pandemic but rise to a new level together as a team. Davie talks about working with his own family at Buyers Edge Platform. His father, siblings, inlaws, and cousins, make up part of the team, but the family-oriented feel extends throughout the entire company and is a key to their culture. He shares that during the pandemic, both he and his father suspended their salaries and several employees voluntarily took temporary pay cuts to protect each other and the company as a whole. Davie shares that they were able to keep nearly the entire 700-person staff employed throughout that pandemic and collectively they spent that time building tools and software to make everything they did easier from a remote scenario. Davie shares how those efforts paid off. He says, “We added over 30,000 new restaurant locations in 2020.” He adds, “Then in 2021, last year, we came roaring back and we were 50% up over pre-Covid, but it was all due to our team really seizing the moment and sacrificing, voluntarily and then over-performing tremendously, to where now the company is just more than double up, versus pre-Covid.”When asked about the company's efforts regarding building incentives for restaurants to use, and switch to more sustainable solutions, Davie shares that it all goes back to data and analytics. He says, “The core thing that I learned early on with trying to bring restaurants together, is that you got to have clean, normalized data to be able to do any of the cool stuff with software and really help operators, manufacturers, and distributors.” He shares that as the company has grown they have been committed to giving back and doing great things for the environment. He shares that from an ESG perspective, they are able to leverage their massive amount of data to find products that are better for the environment. He acknowledges that while eco-friendly packaging tends to be more costly, Buyers Edge Platform offers rebates and assistance to help operators make the transition away from products like styrofoam. The goal is to find eco-products that hold the food temperature better and perform better for the operator. He says, “They will hopefully see the value in going into a little more expensive packaging, that ultimately gives them a better experience for their guests, especially in the takeout and delivery space.”To hear more from Davie about clean data, his predictions on BOH rapid technology adoption, and breaking news on the company's new partnership, check out this episode of The Hospitality Hangout on iTunes! The Three Sales Strategies That Get People to Buy Anything

John Davie, founder of The Sales Gorilla, joins me in this episode. He teaches people how to get clients without being “salesy” by building relationships with clients. A lot of the people that resonate with The Sales Gorilla's messaging don't like the old-school type of closing; they prefer to niche down and find people who they want to work with.John provides us with his three sales tactics that can get people to buy anything:1. Building rapid rapport. Through asking questions and listening to the answers, you can build authority and rapid rapport at the same time. If someone doesn't feel like they are an expert, they will try to sell their product or service more because they feel like they need to prove something.2. Positive indifference. This is a stance you take in your sales conversation in that you are not attached to the outcome of the conversation. When people feel that you have positive indifference, they automatically become more attracted to you and the product. In general, people are repulsed by neediness. If you're needy, you will push your prospects away very fast. In a situation where there is more demand than supply for your product, there is automatically positive indifference. Be aware that in the sales conversation you are actually diagnosing, not trying to sell.3. Value-based pricing. This will help you show the value of your service and make it easy to make an offer. A lot of people can do the sales conversation well and ask questions, but get tripped up when transitioning into the offer. Find out what a new client lead is worth to your client, figure out what their closing ratio is, then determine how many leads or new clients you think you can bring them. It's ideal if you can give them a 10x ROI, but it depends on the industry. It completely re-frames you as coming in and helping their business rather than just being another expense. If you are niche-specific and you are the expert in that niche, all of these can be done in a simple fifteen-minute conversation. To learn more about getting clients to buy, visit https://www.christianmartin.org/podcast

Today’s episode is a one-on-one conversation between Jon and Robyn, developing our conversation from Episode 04 (“The One Introducing Theology of Children”) by exploring the specifics of childhood decision-making. Does it happen? Is it important? How can adults more effectively foster integral meaning-making and existential authenticity in childhood development? Before this discussion, however, we address the differences between Canadian Thanksgiving and American Thanksgiving, debate the problematics of putting up Christmas decorations during Advent, and analyze the inclusion of Advent wreaths in liturgy. Robyn then gives an overview of contemporary bioethical debates regarding childhood decisions, especially as her own work contests a number of the field’s unexamined assumptions. Robyn wraps up the discussion by sharing her rather morbid Treasure New, and soliciting your feedback about corresponding Treasures Old, then we say goodbye. Medea, the character most famous for being downright insane. Her story, and the play by Euripides, is one of the most bloody and violent of all of Greek mythology. It's also one of the few that treat women as humans. What a coincidence. CW/TW: far too many Greek myths involve assault. Given it's fiction, and typically involves gods and/or monsters, I'm not as deferential as I would be were I referencing the real thing. Sources: Medea, by Euripides and translated by John Davie.
