The new label, that will still be made out of recycled paper fibres and apple pulp, will feature a completely transparent list of everything that goes into – and comes out of – producing Avallen Calvados; from water usage (1,2L per 70cl) and greenhouse gas emissions (2.73kg CO2e is removed from the atmosphere per 70cl) to packaging materials and details of the brands charitable donations. Since its launch in 2019, Avallen has embarked on a mission to take action against the climate crisis and catastrophic biodiversity loss and inspire those both inside and out of the drinks industry, by giving back more than they take. For this episode of the Real Podcast, we sat down with Tim Etherington-Judge, a man who needs no introduction if you're in the world of spirits and cocktails. A former brand ambassador for a well-known whiskey label, Tim's life was the stuff of dreams for many people. It was literally his job to fly around the world, go to bars and drink whiskey. Some kind of Instagram heaven, right? Apparently not. As you might imagine, that kind of lifestyle is going to take its toll. As Tim explains with brutal honesty and openness in our interview, his mental health took a sudden nosedive and he ended up alone in a hotel room in a very dark place indeed. However, through hard work and with a lot of support from his international friends network, he has come out on top. In the months following his breakdown, Tim realised that his sole purpose from here on in had to be helping others in the hospitality world to reach out when they need support. He set up an organisation called Healthy Hospo which offers people involved in the alcohol industry a way to improve their relationship with drink and turn towards a more rounded and healthy lifestyle. The suicide of Anthony Bourdain in June sent shock waves through the world, but especially the industry he loved. Since then, the conversation about mental health in the hospitality community has come into sharp focus. On this week s show, we speak with individuals close to the issue who gathered in New Orleans in July as part of Tales of the Cocktail s new Beyond The Bar initiative. Intended to help the hospitality industry take care of its own, Beyond the Bar offered compelling seminars on wellness and recovery. We begin with bartender and former brand ambassador Tim Etherington Judge, who was inspired to create Healthy Hospo following a mental breakdown and subsequent recovery. The not for profit wellness platform is designed to help bring a new healthy atmosphere to the industry he loves. We ll also sit down with Kat Kinsman, author of Hi, Anxiety Life With A Bad Case Of Nerves, for a frank and honest conversation about anxiety and depression. Kat has created an online forum for the industry, Chefs With Issues, that today is both a website and an active closed group on Facebook. Before he established Healthy Hospo - the foundation that provides information, advice, and support on mental & physical health for all hospitality professionals, he’d been all over the world as a bartender and brand ambassador. Now, in this episode, we find him on his way to Africa via London.. Our Cocktail of the Week is the Pea & Pine-nut version: Ingredients: 30ml olive oil washed Seedlip Garden 108 10ml green pea & pine-nut syrup 5ml agave nectar 15 drops malic acid solution 3 drops citric acid solution 20ml aquafaba Method: To make the green pea and pine-nut syrup we blend 120grams of roasted pine-nuts, 500grams of green peas and 1litre of water together. Then put this all through the centrifuge to remove any of the solids and it was then made into a 2:1 syrup with simple sugar. If you don’t have access to a centrifuge, then a simple superbag should work perfectly fine! Shake dry, then shake wet after to achieve correct aeration and double strained into a chilled glass. It’s best to let Tim tell you his tale, starting at the very beginning. Our Cocktail of the Week is the Chill Your Chai: Ingredients: 1L Vodka 1L Water 20g Golden Tip Assam Tea 1.5g Masala Chai Brew 1L Water with the Golden Tip Assam Tea and Masala Chai for 10 minutes. Add vodka and leave to cool. To Clarify 1L Masala Chai Mix 300ml Full Cream Milk 8g 15% Citric Acid Heat the milk in a pain until it’s close to boiling. Remove from heat and add to your Masala Chai Mix. Allow to stand for 30 minutes. Add the Citric Acid and gently stir to begin the curdling process. Leave to stand and gently stir every 10 minutes for 1 hour. Leave over night. Next day strain the mix through muslin cloth and 2 coffee filters. DO NOT try and push the mix through the filters as you will ruin the process. To serve Pour 150ml of your Masala Chai Mix over ice and strain into a chilled chai cutting glass.
