This March, I was blown away by the creativity of some of the best bars in the world. Not only were they making cocktails, but they were saving the planet. On the 17 and 18th of March 2024, the third edition of the Paradiso Sustainability Summit, organized by Giacomo Giannotti and his team, in partnership with Ketel One Vodka through their Garnished with Good program was held.Giacomo's bar Paradiso is ranked one of the best Bars in the world, and he established the Summit three years ago as an exchange of ideas and tools with the aim of raising awareness and making the industry more sustainable. This year, the event took place at Palo Alto - an indoor and outdoor space chosen for its approach to helping local communities. There were two stages for masterclasses, seminars, and workshops, a marketplace where local organizations showcased their sustainable projects and products, and, of course, pop-ups of all the invited international and local bars serving cocktails all day long! While I was there I caught up with not only Giacomo, but a few of the other speakers who are my guests on the program today. Riccardo Rossi and Michele Filip from Rome's Freni e Frizioni, Paul Voza from Oslo's Himkok, Vasilis Kyritsis and Dimitris Dafopoulos from Line in Athens, Alexandros Tselepis and Konstantinos Theodorakopoulos from The Bar in Front of The Bar also in Athens, Partick Howley from So Let's Talk, and last but certainly not least Timothy Etherington-Judge of Avallen Calvados and Healthy Hospo who gives us the place to start with sustainability to have the greatest impact. It was truly an eye-opening event, and they will most definitely inspire you to do more. But before I begin, make sure you check out a sampling of all the activities from the summit on my YouTube channel! www.Youtube.com/@lushlifemanualUp first is, of course, Giacomo our host and founder of this important initiative. The cocktail of the week is Paradiso's The Voyage:INGREDIENTS 50 ml Ketel One Vodka25 ml Amaro Santoni25 ml ItalicusYogurt blueberriesYogurt raspberryMETHODMix the following ingredients together in a containerInfuse it for 24 hours in the fridgeFilter it all through a cheesecloth. Then pour it into your chilled martini glass Garnish with a jam-filled white chocolate if you have oneYou'll find this recipe and all the cocktails of the week at alushlifemanual.com, where you'll find some of the ingredients in our shop.Full Episode Details: https://alushlifemanual.com/paradiso-sustainability-summit-2024-----Become a supporter of A Lush Life Manual for as little as $5 - all you have to do is go to patreon.com/lushlifeLush Life Merchandise is here - we're talking t-shirts, mugs, iPhone covers, duvet covers, iPad covers, and more covers for everything! Tim's company Healthy Hospo is at the forefront of bartender health, both mental and physical, but it took a crisis in his career to put him on that path. After bartending in the UK and New Zealand, he became a liquor brand ambassador, first regionally in India and Africa, then globally for Bulleit whiskey, before one day hitting a wall - almost literally. We talk about avoiding being kidnapped, adjusting your sleep cycles, strategies for day 1 of not drinking, doing things purposely, drawing cocks with your Strava runs, the madness of cycling in general and Alpine cycling in particular, why what we used to call bartender contests are now called "engagement programs", why brands lose their souls when they outsource such programs to agencies,  how we're at the extreme end of the drinking spectrum, why he's breathing new life into the Appletini with his brand Avallen Calvados, and a whole bunch more. Tim Etherington-Judge spent years in the drinks industry promoting the world's biggest brands, but his seemingly perfect lifestyle wasn't all it seemed. Deeply unhappy, he reached the pit of his darkness in an Athens hotel room with a bottle of whiskey in one hand and a handful of pills in the other. But that wasn't the end of the story. Tim is a courageous, creative and hugely inspiring individual who's having a positive impact on many (and on the planet). He founded Healthy Hospo, an organisation working to improve mental health in the hospitality industry and launched his own Calvados spirit company Avallen Spirits. In this wide-ranging conversation we talk a lot about alcohol, its place in society and impact on physical health and performance. We explore how you can enjoy a drink in a healthy, sustainable way. We also talk about Covid and how contracting it left Tim on his knees. Going from someone who ran 42 marathons in 42 days to celebrate his 42nd birthday to struggling to reach the bathroom without running out of breath pushed his mental health to its limits. But this experience, amongst many others, makes Tim a hugely inspiring, informative and all-round lovely person to listen to! For this episode of the Real Podcast, we sat down with Tim Etherington-Judge, a man who needs no introduction if you're in the world of spirits and cocktails. A former brand ambassador for a well-known whiskey label, Tim's life was the stuff of dreams for many people. It was literally his job to fly around the world, go to bars and drink whiskey. Some kind of Instagram heaven, right? Apparently not. As you might imagine, that kind of lifestyle is going to take its toll. As Tim explains with brutal honesty and openness in our interview, his mental health took a sudden nosedive and he ended up alone in a hotel room in a very dark place indeed. However, through hard work and with a lot of support from his international friends network, he has come out on top. In the months following his breakdown, Tim realised that his sole purpose from here on in had to be helping others in the hospitality world to reach out when they need support. He set up an organisation called Healthy Hospo which offers people involved in the alcohol industry a way to improve their relationship with drink and turn towards a more rounded and healthy lifestyle. But it's far better if you hear it from him. We'll be chatting about all that, as well as getting his thoughts on why the world's best mixologists and bartenders are making sobriety far more sexy. Get yourself comfy. We're going in.

The suicide of Anthony Bourdain in June sent shock waves through the world, but especially the industry he loved. Since then, the conversation about mental health in the hospitality community has come into sharp focus. On this week s show, we speak with individuals close to the issue who gathered in New Orleans in July as part of Tales of the Cocktail s new Beyond The Bar initiative. Intended to help the hospitality industry take care of its own, Beyond the Bar offered compelling seminars on wellness and recovery. We begin with bartender and former brand ambassador Tim Etherington Judge, who was inspired to create Healthy Hospo following a mental breakdown and subsequent recovery. The not for profit wellness platform is designed to help bring a new healthy atmosphere to the industry he loves. We ll also sit down with Kat Kinsman, author of Hi, Anxiety Life With A Bad Case Of Nerves, for a frank and honest conversation about anxiety and depression. Kat has created an online forum for the industry, Chefs With Issues, that today is both a website and an active closed group on Facebook. Since Anthony Bourdain s tragic death, Kat has been traveling the country, creating safe spaces for open, raw, and thoughtful conversations about the industry s mental health and substance abuse issues. Then, we ll hear from Charlotte Voisey of William Grant and Sons about Tales of the Cocktail s first ever non alcoholic party at the annual spirits convention. And Don Lee tells us about the Tales of the Cocktail Foundation s first ever grants program, which allocates funding to organizations that strive to better the global spirits community. Before he established Healthy Hospo - the foundation that provides information, advice, and support on mental & physical health for all hospitality professionals, he’d been all over the world as a bartender and brand ambassador. Now, in this episode, we find him on his way to Africa via London.. Our Cocktail of the Week is the Pea & Pine-nut version: Ingredients: 30ml olive oil washed Seedlip Garden 108 10ml green pea & pine-nut syrup 5ml agave nectar 15 drops malic acid solution 3 drops citric acid solution 20ml aquafaba Method: To make the green pea and pine-nut syrup we blend 120grams of roasted pine-nuts, 500grams of green peas and 1litre of water together. Then put this all through the centrifuge to remove any of the solids and it was then made into a 2:1 syrup with simple sugar. If you don’t have access to a centrifuge, then a simple superbag should work perfectly fine! Shake dry, then shake wet after to achieve correct aeration and double strained into a chilled glass. Then it’s simply finished with a few droplets of olive oil. You’ll find this recipe and all the cocktails of the week on ALushLifeManual.com, where you’ll also find all the ingredients in our shop. Add vodka and leave to cool. To Clarify 1L Masala Chai Mix 300ml Full Cream Milk 8g 15% Citric Acid Heat the milk in a pain until it’s close to boiling. Remove from heat and add to your Masala Chai Mix. Allow to stand for 30 minutes. Add the Citric Acid and gently stir to begin the curdling process. Leave to stand and gently stir every 10 minutes for 1 hour. Leave over night. Next day strain the mix through muslin cloth and 2 coffee filters. DO NOT try and push the mix through the filters as you will ruin the process. To serve Pour 150ml of your Masala Chai Mix over ice and strain into a chilled chai cutting glass. Garnish with a local flower. You’ll find this recipe and all the cocktails of the week on ALushLifeManual.com, where you’ll also find all the ingredients in our shop. Until next time… bottom’s up!
