Satya Sharma is the new CEO of Australia's pioneering whisky company, Lark Distilling. Sash – as he prefers to be called – has only been on deck since May 2023. But already, he has put his stamp on the Lark business. The frenzy of special releases has been dialled back in favour of a clearly defined core range. Export deals have been announced for several markets in South East Asia. 700ml bottles are on the cards, and as you just heard, the business has committed to greater transparency about the provenance of whiskies that carry the Lark name. Sash joined Lark following ten years with William Grant & Sons, most recently in Singapore, where he played an integral role establishing export markets for its iconic brands including Glenfiddich and The Balvenie. We'll explore that career background and Sash's vision for Lark coming up in this extended interview that gets the Drinks Adventures podcast underway for 2024. We're joined this episode by Chris Malcolm from recently launched Tasmanian whisky brand, Hidden Lake.If Chris's name sounds familiar to you, that's because he's had a hand in several of the most significant Australian whisky ventures of the last decade.Chris was an early investor in Lark Distillery — going on to become its executive chairman and then CEO of the related entity, Australian Whisky Holdings.He was an early investor in, and director of, Top Shelf International, and he's currently a director of leading oak barrel supplier, Master Cask, whose founder Darren Langhe we met back in March 2020.Today, Chris is director of group whisky production for ASX-listed craft beverages accelerator Mighty Craft, a role that gives him oversight of distilleries including Kangaroo Island Spirits, 78 Degrees – formerly known as Adelaide Hills Distillery – and Seven Seasons.Joining that portfolio is Hidden Lake, Chris's personal project launched in partnership with Mighty Craft.And there's a rather colourful backstory here, as Hidden Lake's first whiskies were originally distilled at Tasmania's controversial Nant Distillery.To recap, Nant collapsed in 2017 in a cloud of fraudulent activity that cost small investors upwards of $20 million.We had Lark's former managing director Geoff Bainbridge on the podcast to talk about untangling the Lark brand from Nant in November 2020.Now it's time for Chris to tell his side of that story. He says it was Lark's “lowball” offer to investors – those are definitely his words, not mine – that enabled him to get his hands on some of Nant's best barrels.Some of those have begun hitting the market under the Hidden Lake name. Today my co-contributors @nisholay and @antipodeanharpdie are taking a trip to Tasmania, often referred to as Australia’s’ very own Apple Isle https://www.lawrenny.com/our-spirits/highlands-gin/ The heart of Tasmania is the central highlands, a region noted for its scenery and dramatic environment. With over 300 lakes connected by running rivers, the region captures the purity and excitement of Tasmania. The subject of today's gin is remarkable reflecting a strong sense of place. Even more remarkable though, is the master distiller’s journey, resembling the title of a book written by JRR Tolkien's fictional character Bilbo Baggins entitled “There and back again” Joe Dinsmoor may be in his 20s, but he is already one of Australia's most experienced distillers leading the development of multiple global award-winning gins vodkas and whiskies. As a teenager, Joe started working at Lark Distillery, doing “all of those important things” like filling bottles and labelling them by hand. These are the jobs that distillers grow out of, and hopefully, never have to do ever again. Picture your 16-year-old self. How cool would it be to work in a distillery? Moreover, how super cool would it be to work at Lark Distillery as an apprentice to Bill Lark – widely regaled as Australia’s godfather of distilling In 2014 Joe took hold of an opportunity to leave his native Tasmania for Sydney, to take up the head distiller role at Archie Rose, and become their first employee. He went on to develop a range of distilled spirits, capturing numerous global awards. He also worked closely with bar people restauranteurs, and other distillers. I first met Joe in 2015 at an Australian gin week event held in Surry Hills, a hip suburb in the Sydney CBD. His energy and enthusiasm there to see. Not long after that, Joe returned to Tasmania swapping life in the Big Smoke for the idyllic rural setting that is Lawrenny Estate Joe’s ethos is simple. “Distilling is an amazing platform in which to tell a story. The product itself has the power to create more stories as it reaches people. I want the products I make, to be a reflection not only of the environment that it is made, but the people who are part of making it. It should invite feeling or an experience and make you treat it like something special, not just another liquid in a glass”. With a preamble like that let us take a look at the gin itself. The intent was to create a sense of “crisp Highlands Air” The secret sauce is conifer needles from the unique blue cypress Joe's reasoning is sound. “When you use too much Juniper, the gin will get too dry and kind of stick in the back of your palate” This is the classic juniper forward London Dry gin effect, but now put to the sword. By using conifer needles the gin delivers a fresh pine aroma with the classic dryness you would get from Juniper. The gin also has fresh mint, pink grapefruit, black pepper, and chamomile. Grapefruit orange and buchu linger over the palate. The sweet earthiness of ginger, cubeb pepper, grains of paradise, come to the fore. Bill Lark is the founder of Lark Distillery and is rightfully known as the Godfather of Australian Whisky. When Bill first pondered producing single malts in 1992, distilling whisky was still illegal in Tasmania due to archaic laws passed in the mid-1800s. Now, thanks largely to Bill, Tasmania’s ideal conditions for malt whisky are home to many a distillery that have followed in his footsteps, and the industry in Australia more generally commands respect. We finally got hold of Bill for an interview, and couldn't be more grateful for him finding the time in his schedule that remains jam-packed despite his decision to step back from the day-to-day running of the distillery a few years ago. We jumped straight in to explore his little-known background, his predictions for the ever-growing distilling industry in his home country and what a month in the life of Bill Lark entails. The bar ranges over 150 premium malt whiskies. From here you can venture to the Lark Distillery in the Coal River Valley on a guided tour.
