Text us your wine questions, craziest wine experiences, or if you just have a comment for us. . This week's podcast features a chat with Dr. Don Livermore. Though you are unlikely to know who he is, it is entirely likely that you have had products that he has overseen in his nearly 30 years at the Hiram-Walker distillery and the brand in question today - J.P. Wiser's, which is Canada's longest running brand of whisky. Wiser's is older than Canada, if that gives you some indication Dr. Don is, on paper, a Master Blender, but in reality, he's a virtuoso performer in that roll. He is the first Canadian to win Master Blender of the Year in the world at the World Whisky Awards. He developed the Canadian Whisky Flavour Wheel, a comprehensive and must-have resource for anyone interested in learning more about flavours in Canadian whisky.  More than anything though, he is an amazing ambassador for Canadian whisky and is willing to take time to talk about the history, the chemistry, and art of making whisky. I really hope to have him on the podcast again in the future to learn more about the history of whisky in Canada.  So here it I, my conversation with Dr. Don Livermore from JP Wiser's. Stillhead, Odd Society, DubhGlas, Sheringham, Sons of Vancouver & Shelter Point. Over 200 whiskies were up for the awards. 14 judges from across the country tasted and scored. The Grand Prize Winner, judged Canadian Whisky of the Year was, The Peat Project Moscatel Barrique single malt from Macaloney's Island Distillery (Saanich)   Here are the guests on part one of the 2025 Whisky Awards and Victoria Whisky Festival Davin De Kergommeaux  -  Davin is the flag bearer for Canadian Whisky. He singlehandedly brought Canadian Whisky to the attention of Canada and The World. His latest book is the updated and expanded third edition of Canadian Whisky - The Essential Portable Expert. I love the first line. "Handles, mickeys, shots or drams, no matter what its measure, Canadian whisky is a story of Canada." Davin is my ultimate connection to the world of Canadian Whisky. He helped create these awards and leads the judging team. Grant Stevely - Distiller at DubhGlas (Oliver) In the fall of 2010, Grant purchased some property at Gallagher Lake near Oliver, B.C. “I wanted to build a distillery from the ground up, which is distinctly different from a lot of other distilleries,” he says. “So we built the distillery with expansion in mind.”  Grant Stevely[/caption] At the heart of the operation is a German-made Arnold Holstein still. No sooner did Stevely open Dubh Glas Distillery in the spring of 2015, when he began winning awards for his first product, Noteworthy Gin. “Dubh Glas” is Scottish Gaelic for “from the dark water.” It's pronounced “Douglas,” which happens to be Stevely's middle name. Jason MacIsaac - Distiller. Sheringham (Langford, BC) Sheringham Distillery  won Best Contemporary Gin at the 2019 World Gin Awards Its Seaside Gin captured the award against World-class competition from 23 countries,  including the UK  and USA. "We created Sheringham because we saw a hole in the market: the opportunity to create the world's most drinkable spirits. This approach has served us well, and in the seven years since founding Sheringham, we have been on the ground building authentic connections with buyers, retailers, and consumers, sharing our story and highlighting our chef-driven approach to innovation and quality."  (Distiller Mag) Jason and wife  Alayne now have their growing portfolio available across Canada and in 15 markets in the USA. Graeme Macaloney - Master Distiller  Macaloney Island Distillery (Saanich) There once was a wee Scottish lad by the name of Graeme Macaloney who found a summer job bottling whisky and fell in love with Uisge Beatha, the ‘water of life'. He dedicated his heart to finding a way to make whisky for a living. Graeme set up shop on Saanich, just outside Victoria. Some of his favourite Scottish and Irish whiskies were island-made. Graeme has found his "island" in Canada. Congratulations Champ!! - Distillery opened in 2016 - The first whisky made onsite and  released in 2020 -Canadian Whisky of the Year - 2025 Brennan Colebank - Master Distiller Stillhead Distillery (Duncan) Founded by the Colebank family, Stillhead Distillery Inc. opened its doors in October of 2017. After working 15 years in the tech industry, Master Distiller Brennan Colebank left his job to pursue his dream career, blending the two things he loved most: chemistry and spirits.  The chemist has created an amazing portfolio and a home for Whisky in the Cowichan Valley. www.victoriawhiskyfestival.com www.canadianwhiskyawards.com

Redefining Canadian Whisky And Mash Bills vs Grain Bills Nick Taylor is no stranger to blending - he hit 40 Scottish distilleries in 30 days pretending to be a whisky writer (and no, I asked, he wasn't caught!), and has since visited Ireland, Japan, and most of the distilleries in Kentucky, not to mention Canada. Bottom line, he knows that you don't have to distill to create something exceptional.  In creating Found North with his partners, Nick is taking on a monumental task - redefining Canadian whisky for an American market conditioned to see Canadian as lesser, inferior, or just plain bad. The big brands don't do themselves any favors, but then again they don't have much incentive (we get into that), so it's up to the small guys like Found North to crack that nut.  In a fascinating exploration of the art and science of whisky blending, Nick reveals how synesthesia and musical influences spark creativity in crafting harmonious blends, from classical to funky things even I had never heard of before. We delve into techniques for balancing flavors and how strategic buying and aging of whisky components allow Found North to create and fill a new niche. Throughout the episode, personal anecdotes and insights from Nick offer an engaging and enlightening look at the passion and expertise that drive Found North's unique journey in the whiskey world. But, whether you listen to it all in sequence or segments, I hope it's valuable to you! Here's a few things you will hear about during the ride:  Contraptions used to make Pink Floyd songs like "One of These Days" happen and how they were calibrated The definition of scenery gorn and other tropes found in the film The Bear's emotional relationship with the Wall of Sound, which becomes everyone's relationship with it as well, because The Dead could not perform the same way on everyone else's rinky dink P.A. systems after experiencing the clarity they were used to Pink Floyd's year-long scheme to move from Capitol to CBS in America Hendrix blowing off the Dead on the night he promised to jam, and their low key "revenge" Antonioni's opinions on filmmaking in America vs Italy. What it was like to film Z.P. through the eyes of an American member of the crew who actually did admire his work Richard Wright not showing up very much, getting booted Jerry Garcia records his Zabriskie Point soundtrack music in much less time than he wanted to. And has his payment stolen by Mickey Hart's dad. Who also steals car parts and speakers from Bear Floyd does more regrouping, post-breakup with Roger. Roger gets cranky. Clapton gets a cheeseburger. Roger is still cranky today that the band he walked away from and then sued when they didn't die without him will not promote his albums on their social media The Grateful Dead play for the largest outdoor rock audience of all time in upstate New York. Making great whisky is serious business. Whisky takes time. You can create it and leave it in barrel “while your kids grow up and head off to college” kind of time. For example, Paradigm Spirits -The Heritage Collection -  Whisky of the Year in Canada spent 19  years in barrels. Then along came friends and partners Michelle deBus and Irma Joeveer who were just beginning their whisky journey. They purchased the filled barrels to start Paradigm. Then blended in some Oloroso Sherry and found a stunning balance between the corn whisky and sherry. Davin de Kergommeaux Canada's Whisky authority and founder of the Canadian Whisky Awards describes The Heritage as having “sublime complexity and elegance with fresh fruity top notes” This is a really nice story of people who dreamt a dream of making whisky and how it all led to being named Whiskey of the Year in Canada. With all eight episodes now unpacked, Producer Sean at last weighs in as we bid farewell to The Witcher's latest season. To borrow from our favorite bard, season three is full of “extraordinary things” and we offer our final thoughts on all of them, from the wonderful found family Geralt builds with Yen and Ciri, to Jaskier's tantalizing relationship with Radovid, to the breathtaking battle at Aretuza. But the most remarkable thing of all may just be that Producer Sean picks a Canadian whisky to accompany our discussion—Alberta Premium Cask Strength Rye. We doubt even Dijkstra would have been able to see that one coming!

Bourbon is now #1, but Canadian Whisky became popular when the civil war started due to many distilleries being abandoned and the troops needed it for anesthetic. Now, Canada does something very different than any other country when it comes to their whiskey. Canadian whiskey is produced by blending the ingredients after each one is distilled separately, adding a hint of caramel color and only after that is done, do they age it in wooden barrels. Everyone else distills all of the ingredients together, ages them in barrels and then blends the final product. In order for whiskey to be a true canadian whiskey, it must follow this distillation process, must age for 3 years in small wooden barrels, be made in Canada and be at least 80 proof.Typically distilled and aged separate and then blendedMaster blenders vs Master distillersWho is Canadian Whiskey for? This is one of the few high proof, Canadian whiskies we have had, should they do more and is there that big of a difference between this and normal offerings that you would like to see more of these done? Not many, good, brands represented on the shelves. Brought to you by Plantation Rum, Denizen Rum, and J.P. Wiser's Canadian Whisky. THE COCKTAIL GURU PODCAST is produced by 1st Reel Entertainment and distributed by EatsDrinksTV, a service of the Center for Culinary Culture—Home of The Cocktail Collection, and is available wherever fine podcasts can be heard. The Center for Culinary Culture—Telling the Story of Food & Drink…One Taste at a Time. GUEST BIO One of Imbibe's “25 Most Influential Cocktail Personalities of the Past Century,” Jeff “Beachbum” Berry is the author of seven books on vintage tropical drinks, which published for the first time anywhere the lost recipes of Tiki's golden age—from the original Zombie, Jet Pilot, and Pearl Diver to the Navy Grog, Saturn, Three Dots & A Dash, and many others. Esquire calls Jeff “one of the instigators of the cocktail revolution” and Food & Wine “one of the world's leading rum experts,” while The New York Times cites him as “the Indiana Jones of Tiki drinks” and The Los Angeles Times as “A hybrid of street-smart gumshoe, anthropologist, and mixologist.” Jeff's been featured on the Travel Channel's “Food Paradise” TV series, The Discovery Channel, PBS Television, and National Public Radio; he's also been profiled in The Washington Post, USA Today, The New York Times, and Wine Enthusiast. Jeff's original cocktail recipes have been printed in publications around the world, from Bon Appétit and The Huffington Post to over 20 international recipe books, including the venerable Mr. Boston Official Bartender's Guide. And now Jeff's drinks are being served at his restaurant in New Orleans, Beachbum Berry's Latitude 29, which has won critical acclaim in Esquire, Playboy, The New York Times, The Wall Street Journal, The Boston Globe, The Houston Chronicle, GQ, Travel + Leisure, Town & Country, Southern Living, New Orleans, and the Food Network. With Martin Doudoroff, Jeff co-created Total Tiki for iPad and iPhone, a drink recipe app which Macworld calls “beautifully rendered and, thanks to Berry's tireless reporting, impeccably sourced.” Jeff's also co-created a line of Tiki barware with Cocktail Kingdom, which Imbibehails as “especially notable because it revives old styles of essential glassware that were previously almost impossible to find.” While this is all way too much work for a bum, Jeff also contributed 29 entries to The Oxford Companion to Spirits and Cocktails and lectures about tropical drinks across the US, Europe, and Latin America. --- Send in a voice message: https://anchor.fm/thecocktailgurupodcast/message Support this podcast: https://anchor.fm/thecocktailgurupodcast/support
