Anthony Wills is the founder and creator of Kilchoman Single Malt Scotch Whisky, the first new distillery to be built on Islay since 1908. His previous career in wine sales led him to delve into independent whisky bottling ventures. And with deep roots to Islay through his wife's family, the grand idea to open a new distillery actualized in 2005. The unique profile of Kilchoman is textured, rich, and elegant. And even more unique is their Islay Barley bottling, in which all of the barley is grown on their farm at the distillery. We chat fear of failing, tinkering, Sherry, and more.

We're honored to have our music played alongside all the wonderful musicians on your podcast. When I saw the title of this week's podcast I thought perhaps you had included our song "On Christmas Day," which begins with the line "We light a candle in the window for weary travelers to find their way."  But I was pleasantly surprised to hear that you also have a tune featuring the Irish Christmas image of a candle in the window.  I find it to be such a lovely symbol of hope, hospitality, and mindfulness of people who are not with us but hold important places in our hearts. We've been spending some time at Bonehead Studio in our hometown of Cheshire, CT lately (pictures attached) and we hope to have our new album ready by February  -  so new music in time for St. Patrick's Day.  You'll be among the first to know when we release it. Thanks again and Merry Christmas," David Tustin had a song request: "Marc, You asked an interesting question. Don was a God loving person, loved his family and encouraged cat and dog rescues. He also enjoyed Scotch Whisky! The best song could be one of your cat drinking songs or maybe you know of something better for your podcast. Taing mhòr!

Mark and I have over 40 years experience in the Scotch Whisky industry between us and, after many years of working for other people, we decided the time was right to start our own independent bottling company. This was in December 2019. A few months later we were seriously questioning the timing of our new venture! However, despite the challenging circumstances (to global pandemic, add a new baby and impending Brexit), we are absolutely delighted with how things are going so far. After an incredibly successful Crowdfunder campaign in April 2020, we bottled our first cask (for Crowdfunders only) a few months later, followed by our first general release of 5 casks in September 2020. We've bottled a total of 26 casks in our first year covering single malt, blended malt, single grain, blend, rums and Indian whisky (our first non-scotch whisky) and hope to expand on our offering over time. Basically, as long as it tastes good and has spent time in a cask, then we'll happily bottle it. https://wattwhisky.com/

Welcome back today chat with Emma Crandall, blender at Balcones Whiskey. This was a fantastic talk, and i'm so excited for yall to hear this. Badmotivatorbarrels.com/shop/?aff=3 Z.Smithwhiskeyandmixology IN 2008, BALCONES WAS DRIVEN TO CREATE SOMETHING ORIGINAL AND AUTHENTIC In 2008, Balcones was nothing more than an idea driven by a passion to create something original and authentic, right here in the Heart of Texas. It all started in an old welding shop under a bridge in Waco. For the next year, we replaced the roofing, knocked out walls, laid brick, cut pipes, installed copper pot stills from Portugal, and shoehorned a whisky distillery inside that quaint building. Proud of what we had accomplished on our own, we began distilling in 2009. Our reflection on the sacred trance driven out of a solar eclipse inspires our newest release: Balcones Mirador Eclipse Texas Single Malt. An eclipse is the loss of our sun, yet it signifies new beginnings. We can anticipate an eclipse, but we cannot change it. They are out of our control - exquisite and specific to each moment and each place. This is exactly what we worked to reflect in our newest American Single Malt. TASTING NOTES ON THE NOSE, sun-kissed notes of poised pressed flowers & clover hay are engulfed by mango meringue & pineapple gum drops, while dense notes of almond biscotti and honeydew rind round out the bunch. ON THE PALATE, blush lemon custard & white chocolate raspberry tart neighbor more reserved notes of guava pound cake and prairie sage, before a long and confident finish of dried thyme and honeyed jasmine tea. Whisky Blending What is blending? What is its purpose? A number of distilleries bottle and sell some of the whisky they distil for consumption as single or unblended whiskies. By far the greater part of their production, however, is used for the well-known blended Scotch whiskies that are sold all over the world. Blending whisky is a considerable art acquired only after years of experience. A blend will consist of anything from 15 to 50 different single whiskies, combined in the proportions of a formula that is the secret of the blending company concerned. Whiskies from different distilleries have a character of their own and, just as people of different temperaments are often incompatible, so some whiskies will not blend happily with certain others. The Malts and Grains in a blend must therefore, be chosen to complement and enhance their respective flavours. Blending is in no sense a dilution. The blender's task is to combine different single whiskies, to produce a blend which brings out the best qualities of each of its constituent parts. The aim of the blender is first to produce a whisky of a definite and recognisable character. It is of the greatest importance that their blend should never vary from this standard, which customers all over the world will have come to expect. Their second aim is, therefore, to achieve consistency. The blender must also decide when the different single whiskies are ready to be used in their blend. They are brought from the warehouse where they have been maturing to the blending establishment, where they are mixed together in a blending vat. They are usually returned to cask and left to ‘marry' for a period of months, before bottling. Some companies prefer to vat their Malts and Grains separately and only bring the two together before bottling. The combining of Malt with Malt or Grain with Grain is known as vatting. When was blending introduced? Blending was pioneered by Andrew Usher in Edinburgh in the early 1860s. It was only after this practice became common that a taste for Scotch Whisky spread first to England and then throughout the world.

We live in a time when people often refer to Scotch not only by the brand name but also by the age of the liquid. In executive boardrooms and exclusive gentlemen's clubs, the names of single malts are mentioned with a certain reverence, and a hush will come over the room as a Glenlivit 74-year-old or a Dalmore 45-year-old, as discussed. They are expensive, they are exclusive, and they have given single malt scotch an air of rarity and distinction. But there is one brand that seeks to throw all the trappings of labelling aside and who seeks to challenge the drinker to look to flavour and taste as a benchmark. With Smokehead, the liquid in its bottles is Islay single malts, but distillery names and age classifications are not mentioned. In other words, Smokehead is looking to take you down the road less travelled and presents cask-finished whiskies that have the pedigree but without the labelling. To find out what it all means we talk to Michael Brown, Global Whisky Brand Ambassador for Smokehead's parent company, Ian Macleod Distillers about flavour, smoke and what disrupting scotch whiskey means

H Healer and clairvoyant John Cain stood in the local civic hall with his hands on a patient, a cigarette hanging out of his mouth and a bottle of whiskey nearby. As you can imagine, he was not typical of many involved in the spiritualist movement, whose attitude at times can tend towards holier than thou. Cain was born in 1931 in the village of Eastham, Merseyside, near Liverpool. During his national service in the Army he was a physical training instructor, and he was also a boxer and black belt in Judo. In 1956 he started his own business as a blacksmith and he became incredibly successful, employing thirty people and driving a Rolls Royce; but he would soon give it all up to devote himself to giving spiritual healing for free to anyone in need. One day, he'd been sitting in the pub with his wife, as he did most evenings, when he noticed he could see something out of the corner of his eye that looked like shimmering mist. Instinctively, he believed this had to be some kind of ‘energy,' and he felt suddenly inclined to place his hands on a nearby person in the pub who he felt was in need of healing. As he did so, the person's pain, that they'd been feeling for a long while, suddenly disappeared. Cain is interviewed on an old radio show called ‘Beyond Belief' for Radio Merseyside, and presenter Kieran Devay says, “Cain smokes up to 50 cigarette a day, swears like a trooper, and is more than partial to Scotch Whisky. He works twelve hours a day, seven days a week. His wife Audrey acts as his secretary, dealing with the hundreds of letters he receives each week asking for his help.” Cain says, “Going back to when I was about five years old my mother suffered with migraines. I just used to rub her temples and the pain would disappear.  At the age of 14 I joined a boxing club. Later on, I practiced Judo for 25 years.” When members of his sports clubs would suffer sprains or other injuries, Cain found he could take away the pain by massaging and manipulating the injured areas of the body. “I found I could take the pain away – but didn't realise it was the gift of healing.” Cain says he was brought up in the Church of England but as a young man, his interest turned to Spiritualism and what spiritualists call a development circle, where people attempt to make communication with the dead. However, Cain didn't last long in the circle at his local spiritualist church, for understandable reasons; “We sat in the silence for an hour, and then you say what happened in that hour. Well, the lady sitting opposite me said, “You'll never believe whose been with me tonight John.” I said, “Well, go on, try me.” She said, “Well, I've had Long John Silver with me, and we've been walking for hours along the beach.” So, I said to her, “Did he tell you where the treasure's buried?” She said, “No,” so I said, “Well, let's go back into the silence, find out where he buried the treasure, and we'll all go and have a bloody good holiday in the Bahamas.” Then the lady sitting next to her said, “Isn't that funny Nancy, I've had his parrot sitting on my shoulder all night.” Well, I thought to myself, this is the time you bail out John!” After such nonsense, Cain decided he would leave the circle that night, but when he went back the following week to tell them this, one of the ladies in the group became upset and asked him how she would get her healing if he left the group. Cain didn't understand what she meant and so she explained that since he'd been attending the circle, her back pain had vanished. Then another lady in the group chipped in, telling Cain that she was in a lot of pain that evening and would he be kind enough to put his hands on her. Cain did as she asked, and her pain vanished. This was before Cain had become a healer, and he couldn't understand how this could be happening. At the same time, his daughter was suffering with a huge number of warts on one of her legs. “Not just a couple of warts, they were like fish scales,” said his wife.
