Happy Bottled in Bond Day! Yes, it's another whiskey episode, for a variety of reasons, and there's a chunk of beer as well, so it's kind of a boilermaker episode, if you will. I got hold of Al Laws, the founder and owner of the Laws Whiskey House in Denver. I told you about visiting there back in October of 2023 (in Episode 25+), but I didn't get to meet Al. Last week, their publicist reached out to me about March 3rd being Bottled in Bond Day, the anniversary of the signing of the federal Bottled in Bond Act of 1897. I love bonded whiskey, so I decided to do an episode on it and share that love. Al and I talk about using Colorado-grown grain to make a very grain-focused whiskey, more about high-altitude whiskey making, what wheat brings to whiskey, and yes, we did talk about bottled in bond whiskey. Then I had a rare opportunity to sample five Baltic Porters side-by-side with two brewers (both of whom have appeared on Seen Through A Glass before). I'll tell you how that happened, and you can listen in as we discuss the similarities and differences. What Was I Drinking Today? Bottle in Bond whiskey, of course: New Riff Balboa Rye, and what a beauty it was. The Happy Valley Adventure Board spot was about the upcoming Maple Festival at Shaver's Creek Environmental Center on March 22-23. Next episode: again, not 100% sure. Baltic Porters, a beer famous in Eastern Europe, is a unique brew for sure. Born out of the love and thirst for English porters in the 18th and 19th centuries, Eastern European and Northern European brewers took their own access to local ingredients and made a new style out of the original porter and in this, fundamentally changed the way we think about dark beer. For one, most of the Baltic porters are made with lager yeast, a sharp contrast to other porters in America and England brewed with ale yeast. Baltic porters can also be higher in ABV, with the famous Polish Baltic porter Żywiec (pronounced “Shoe-Vee-Its”) being a whopping 9.5% ABV. So what is the history behind this beer style and how do modern Polish and American commercial brewers brew it? It's a busy show today, as Megan Anderson and Tara Nurin both join Herlinda Heras, who is back from a three-week trip to Estonia and Finland. Tara Nurin writes about the business of beverages and spirits for Forbes magazine, from her home base in Camden, New Jersey. Megan Anderson is the representative of New Zealand hops growers. Herlinda was in Finland judging the national beer competition and the national Sahti competition. She was the first American judge in either competition. Sahti is the Finnish national home brew. Herlinda describes the Finnish habit of taking a sauna (which they pronounce “SOW-na” not “SAW-na” as English speakers tend to say) and then plunging into the cold lake and going back and forth between the sauna and the lake. Steve says, “No, thank you!” Herlinda says it got rid of her jet lag pretty quickly. It's the cleanest country she has ever been to. They have free health care for everyone. Car registration and traffic fines are scaled by income. They have very clean water and their lager beers tasted clean and delicious and so were the Baltic Porters. Herlinda also visited Tallinn, the capital of Estonia. New Zealand hops have a special reputation among beer fans. Her organization is a cooperative of twenty-seven growers. They have been growing hops in this reagion of New Zealand for 150 years. They grow some of the best hops in the world, such as Nelson Sauvin and Riwaka. Megan is here to promote a new one, called Nectaron. Some of their hops have trademarked and registered names. See them all here at the NZ Hops website. Some have exotic names derived from other languages such as Moutere (which seems derived from French where it would be “moo-TER”). They say “MOO-ter-ee.” One is called Mouteka. Nectaron is named for Dr. Ron Bitzen, a botanist who worked on hops his entire career and who created Nectaron out of 12 years of R&D. Nelson Sauvin was created from their breeding program and released in 2000. It's a very distinctive hop. They have limited supply, 1800 acres, and they are under 1% of the world supply, but they have special qualities. Sahti is one of the oldest styles of alcoholic beverage in Europe, and does not use hops because when it was developed they did not use hops. They use juniper as a flavoring. Herlinda found that the Sahti brews she was judging were quite similar and she had to find a way to differentiate among them. Also, it is not carbonated. Next week she will bring some to this show, to taste with Mark Carpenter. Tara Nurin has just published her book, A Woman's Place Is In The Brewhouse: A forgotten history of alewives, witches, brewsters and CEOs. She has her first official book event Sunday at Urban Roots Brewery in Sacramento, California. She is planning another book signing with Russian River Brewing Co., probably for December. Lagunitas Stereohopic IPA uses hop oil. I small bottle of hop oil can flavor a large batch and ultimately much more efficient use of water. Megan points out that the botanists spend a lot of time “chasing flavors” and she credits the impetus of the craft beer industry for pushing the demand for better more interesting hops. Megan Anderson's first job in the beer market was at Samual Adams, as a beer salesperson and trainer, for ten years. Megan moved to Idaho to work for a hop company called Mill 95. There, she met some New Zealanders. She found a company in Kalamazoo, Michigan that makes a hop oil. Then she met Totally Natural Solutions, that produces a totally natural hop oil. Her dream job materialized with the New Zealand hop growers offered her a job. In New Zealand there are some 5th and 6th generations of children growing hops in the fields of their family farms. In 2010 she started a home brew club and one of the members was Jack McAuliffe, the founder of New Albion. It was the first new brewery founded here after Prohibition. Mark Carpenter and Herlinda Heras are both back from their recent travels. Mark was in Finland and Poland and Herlinda was at Oktoberfest in Munich, Germany. Mark tells about a pub in Helsinki that has real English ale. He also visited Poland, to see some famous horses in Eastern Poland. There is a book called The Perfect Horse which is about this horse farm. He brought some beers back, including an English style ale from Poland. He enjoyed Warsaw and learned that it had been completely destroyed in World War II and restored in the old style after that. His local guide showed him all the good local beers. Mark describes a kind of traditional Finnish beer that he drinks when he is there. Then, the vast majority of beer in Poland is lager from major breweries. But there are hundreds of local brands. Herlinda also mentions there are a lot of Baltic Porters there. A friend of his from Romania met him in Krakow. His friend found that Krakow was even less expensive than Bucharest, Romania. Mark notes that they also drink an Italian aperitivo called Aperol, with sparkling water, in Poland. Herlinda tells about Oktoberfest in Munich, which she attended on a last-minute opportunity. It was her first time at Oktoberfest and she highly recommends it. Steve says that he knows Oktoberfest from the Chevy Chase movie and Mark says it wasn't a bad representation of what happens there. The city of Munich has about 2 million people and they get 7.2 million people for Oktoberfest. Herlinda says "it's insane" how much food and beer there is. The locals really embrace it. Herlinda brought an Oktoberfest glass, called a Maß, which holds about a liter of beer. At the end they get a phone call from Natalie Cilurzo up at Russian River Brewing Co. Steve, Herlinda and Mark will be doing Brew Ha Ha live from the new RRB Windsor location next week.

Authenticity is the name of this game... Collaborative brewing efforts are growing in popularity amongst craft brewers and I can see why. They offer the same kind of cache and imagery that a winery gets when they speak of a Single Vineyard wine. The collaboration between the Phillips Brewery and Garrison of Halifax is easy to understand. Both are at the heart of their communities growing brewing culture, both got started facing similar financial and licensing challenges, both are primarily ale houses, and both are out of the box thinkers when it comes to crafting brews that are full of flavour, and if you have ever met either Matt Phillips of the Phillips Brewery or Daniel Girard of Garrison Brewing, you know you have met two kindered spirits. Why Porter… good question! Porter is traditionally brewed used lager yeasts and dark malts that results in a smoother texture and flavours of dark chocolate or cocoa, coffee and roasted nuts. The theory goes that Porter got its name because the street and river porter’s of 18th century London popularised it; nice. Cozy thoughts but I’m not so sure of the truth in this. Baltic Porter is also traditionally brewed using lager yeasts and dark malts but is much stronger. Back in the day this was to insure that the beer could survive the overseas trip from Finland, Estonia or Sweden over the North Sea to England. Today the extra alcohol simply adds more body to the brew. In terms of taste, first thing first, make sure you have it at the right temperature. Porters and Baltic Porters should be enjoyed at room temperature. Room temperature allows you to enjoy the complete texture, flavours, and complexities of the brew. Porters are ‘cozy’ beers and chilling makes them as cozy as sitting on an ice block with the air conditioning on. The texture is smooth and languid while the flavours feature dark chocolate, figs and hints of fresh ground coffee. Just on the finish you will notice a hint of black licorice that brings it all together. For the foodgasm we are all on a quest to get, pair this with a good hearty stew, casserole or pot pie. Rich cheeses like Beemster and aged Gouda rock with this brew. As for desserts go with choocalate cake or brownies, even some truffles would be heaven with this.
