Baltic Porters, a beer famous in Eastern Europe, is a unique brew for sure. Born out of the love and thirst for English porters in the 18th and 19th centuries, Eastern European and Northern European brewers took their own access to local ingredients and made a new style out of the original porter and in this, fundamentally changed the way we think about dark beer. For one, most of the Baltic porters are made with lager yeast, a sharp contrast to other porters in America and England brewed with ale yeast. Baltic porters can also be higher in ABV, with the famous Polish Baltic porter Żywiec (pronounced “Shoe-Vee-Its”) being a whopping 9.5% ABV. So what is the history behind this beer style and how do modern Polish and American commercial brewers brew it? Today we're looking at a fascinating collaboration between a craft chocolate maker and a craft brewery. Eric Parkes at Somerville Chocolate is a tenant in Aeronaut's building, so he makes chocolate just a short distance from where brewmaster Mark Bowers and Director of Brewing Operations Filipe Garcia are brewing beer. This has allowed for an ongoing creative exchange between these worlds, yielding unique beers made with cacao and unique chocolate bars made with beer, brewing ingredients, and cacao and other ingredients that have been first used to make beer. The relationship has allowed for creative experimentation and mutual education. Black Caddis began as one of Preston Theony's homebrew recipes, but rather than create a take on an existing style, he started with the flavor he wanted to achieve and built a recipe to realize that. Now, after brewing the beer commercially at Wren House (https://www.wrenhousebrewing.com) for the better part of the past decade, he's still not done experimenting with changes to not just the recipe, but the core of fermentation itself. More recently, the beer has moved from ale fermentation with a Kölsch strain to lager fermentation with a 34-70 strain, in order to amplify the “clean, cutting characteristic” that Theony sought. It's dark beer in the 4% ABV range sold in one of the hottest of the United States, and drinkability is paramount. Similarly, Theony has never stopped tinkering with their hazy IPA recipe, despite core beer Spellbinder's gold medal in the juicy or hazy IPA category at the 2020 GABF. Note that anything he mentions doing or using in this podcast is subject to change, and this is only a snapshot of where they are at this brewing moment. The Baltic Porter is making some more regular appearances in breweries' seasonal lineups, so we find five local examples of the robust lager style to sample for this episode. Herlinda, Krzysztof and Marcin. Marcin Ostajewski from Browar Fortuna and Krzysztof Panek from Browar Grodzisk in Poland join Harry Duke and Herlinda Heras on Brew Ha Ha. Krzsyztof and Marcin have just arrived from Nashville, where they attended the World Beer Cup. Both of their breweries are located in western Poland, not far from Posnan. Browar Grodzisk is based in Grodzisk Wielkopolski and Browar Fortuna is in Miłosław. The Grodziskie style is Poland's own, originating in the town of Grodzisk. It is a unique beer, the only one in the world brewed with 100 % wheat malt, smoked with oak wood. The brewing process is difficult and long and it has to take its time. Grodziskie is light and refreshing, with a unique flavor among beers on the lighter side. Marcin tells about early 20th Century advertisements for this beer that refer to it as "Polish Champagne." Grodziskie Krzsyztof is quite serious about making Grodziskie as well as possible. He did extensive research in order to replicate the old equipment and he collected information from many people. The brewery fell into disuse after communism. Beginning in the 1990s, investors came in and closed breweries that were not cost-effective. Since lagers were in demand, beer consumers demanded that. Only later they were able to bring Grodziskie back when they re-founded the brewery. Russian River Brewing Co. is open in Santa Rosa on 4th St. and at their big Windsor location. The only rule is that beers in competition can't use wild yeast, which would interfere with their brewing operation. The brewery will produce the winning recipe at the next year's festival. Krzsyztof describes how hard it was to find the right malt for Grodziskie. They found a malter just over the border in Czech Republic. The home brewing community developed in Poland during communism when there was not enough good beer available commercially. When they brought Grodziskie beer back into production, the home brewers society was an important source of recipes, yeast and information. Next they taste Komes, an idea that came from Krzysztof wondering what would happen if he took their award-winning Baltic Porter, and froze it. He kept it for 2 weeks in the deep freezer. Below the ice there was a condensed liquid, made of alcohol and all the flavor elements. They tasted it and decided it was extraordinary. Then they put it in whiskey barrels. After 4 or 5 years of the project, they have several hundred bottles. There isn't much of it, but now they do batches of about 1000 bottles.

Dane is the new Brewmaster at Anchor Brewing, so he has the job that used to belong to Brew Ha Ha founding father Mark Carpenter. Third Street Aleworks Tyler has been at Third Street Aleworks for 13 years, while other businesses in the neighborhood have come and gone. They opened 26 years ago this March. They got new owners a couple of years ago in the Spring 2019. He is the fourth brewmaster they have had. The last two years have been a challenge. They used to sell 90% of their beer over their own bar, now 80% goes out in cans and the rest in kegs to different places. It was hard to get food delivered so they partnered with some of their neighbors to deliver local produce. They did it until they were able to open indoor dining again. They have a new beer called PBR People's Beer of Rosa. Blanca Molina, a local artist, designed its label. Third St. Ale Works supplied food to the vaccination clinic that Herlinda set up with her friends, every Thursday. Tyler is proud that the owners care about supporting the community in these ways. Their menu is not as extensive as it once was, since they have had to become more agile, as a lot of other business have. They have done some remodelling. They also have “Tightwad Tuesday” with specially priced beers and bratwursts and a resident food truck, Tacos Tijuana, as well as others which are rotating on different days. Brew Ha Ha is sponsored by Russian River Brewing Co. Shady Oak Barrel House Harry Duke has known Steve Doty since before the pub was opened. 420 1st St. in Santa Rosa. Shady Oak Barrel House was a home brew project that grew into a business. He started just making sours in barrels and needed to expand to start an actual tap room. They also have Cosmo the brewery cat. They adopted him after one of the fires. Cats are good around a brewery to protected the grain from rats and mice. Cosmo was catnapped but later was returned. Shady Oak Barrel House started with a focus on barrel aging and spontaneous and wild fermentation. Since they opened the taproom they also make other kinds, like a triple IPA that he brought. The Shady Oak Barrel House also has an arcade with pinball and old 80s-era video arcade games. They are also a dog friendly location. They have a spacious location that used to be an automobile dealership. The King Street Giants, formerly known as Dixie Giants, for Mardi Gras. They will also have the food vendor Bayou on the Bay whose chef comes from Louisiana and makes all authentic recipes from down there. They also have trivia night every Thursday. Finally, these two breweries have produced a collaboration brew. Back in 2018, they brewed a Baltic Porter with a large amount of rye in it. They decided to age it in rye whiskey barrels. Due to the pandemic it has been in barrels for two years. It was a 7.5% multi-dark lager but now it is up to 10% alcohol. It has many layers of flavors. They are releasing it tomorrow.

Hey Folks so we're talking about one of my Favourite beer styles the Baltic Porter. Porter is a style of beer that was developed in London, England, in the early 18th century. It was well-hopped and dark in appearance owing to the use of brown malt. The name originated from its popularity with street and river porters. The popularity of porter was significant, and it became the first beer style to be brewed across the world, and production had commenced in Ireland, North America, Sweden, and Russia by the end of the 18th century. The history of stout and porter are intertwined. The name "stout", used for a dark beer, came about because strong porters were marketed as "stout porter", later was shortened to just stout. Guinness Extra Stout was originally called "Extra Superior Porter" and was not given the name "Extra Stout" until 1840.Today, the terms are used by different breweries almost interchangeably to describe dark beers, and the two styles have more in common than in distinction. Baltic porter is a version of imperial stout that originated in the Baltic region in the 19th century. Imperial stouts exported from Britain in the 18th century were popular in the countries around the Baltic Sea, and were recreated locally using local ingredients and brewing traditions. Early versions were warm fermented until the late 19th century, when many breweries began to brew their porter with cool fermentation, so are technically lagers. Baltic porters typically have a minimum gravity of 18° plato and a high alcohol content, even over 10% ABV. They are produced in Finland, Estonia, Latvia, Lithuania, the Czech Republic, Germany, Poland, Russia, Ukraine, Denmark, Sweden, and the United States. Baltic porter is a specialty of many Polish breweries, with the country's oldest being produced by Żywiec in 1881.Finland's Sinebrychoff has been brewing Baltic porters in Helsinki since the 1860s,while Estonia's Põhjala is a newcomer specialising in barrel-aged porters.In Denmark the word "porter" is synonymous with "imperial stout"and Wiibroe's Baltic porter (now brewed by Carlsberg) is known by both names. Porter was brewed in Germany from 1853 until 1990, when production ceased in East Germany after reunification. In 1998, the Hoepfner brewery of Karlsruhe resumed production of an old recipe. It was followed by other brewers such as Neuzeller Kloster Brewery and Bergquell Brewery who brew an 8% abv Baltic porter.
