Fritz Family founder Cory Buenning brewed from the mid-90's through the mid 20-teens for Wyoming craft beer pioneers Snake River, but the itch to do his own thing was strong, and after returning to Colorado after a few years in Kentucky, he leased the old Bootstrap brewery in Niwot, installed a new brewhouse and cellar, and got to work making the beers he wanted to make—a variety of primarily lager beer, brewed thoughtfully and carefully. Years later, the brewery has developed a strong following among locals, but is also a favorite hangout for the area's brewers, and you'll often find brewers from neighboring breweries at the Fritz bar for a post-shift beer. It's brewers beer, after all—easy to drink, impeccably made, and unassuming. In this episode, Buenning shares his approach to making refined lagers at a taproom scale, and along the way discusses: how cold knockouts, cold fermentation, and no diacetyl rest make better lagers brewing with an jacketed oil-heated brewhouse rather than steam-heated acidifying the mash using sauergut building body in clear beer through proteins not carbohydrates carbonating naturally via capped tank using forced fermentation tests on all lagers managing gelatinization issues with European malt through modified step mashing ingredient approaches to Pilsner, helles, and Kölsch understanding yeast timing and performance to dial in harvesting and rep itching managing head pressure with 34/70 to reduce sulfur And more. G&D Chillers G&D's new Elite 290 Micro-series runs on a Natural Refrigerant with near-zero Global Warming Potential—built for brewers who care about sustainability and performance. Learn about taps and tools that make beer taste different than it tastes at home, from cask conditioning to Czech side-pour faucets.Roaring Table Brewing Co-Owner and Head Brewer Lane Fearing discusses why Roaring Table is known for “doing things the hard way,” from building a brewery on a shoestring budget to the reality of hand-cleaning an electric kettle. He breaks down why cask beer tastes different, including the impact of cellar temperature (~50°F) and lower carbonation on aroma and drinkability, and goes full beer-nerd on service tools that change mouthfeel and foam: first, the Czech LUKR faucet (wet foam + “milk pour”), and second, a two-spout Japanese sharp-pour faucet designed to trap CO₂ under a tight cap of foam. After the beer break, Lane discusses the German Stichfass (the celebratory gravity keg you hammer-tap), why Roaring Table's new kitchen “pie” program is such a big deal, and the surprisingly sessionable side of “dark beer.” He shares his Munich Dunkel with Brian and Cody before moving on to a New Zealand Pilsner and a discussion of what makes NZ hops taste different than American hops. Prost!
For Jaron Anderson of Helper Beer, listening to the beer itself, rather than following prescribed rules, is the only way to improve it. He's well-versed in the theory, but not a slavish adherent to dogma—what matters is the beer itself, and how it tastes, so any technique or ingredient that gets you there is worth considering. In 2025, he won GABF gold in the competitive German-style pils category, yet his pils was produced in a way that some would fine unconventional—single infusion mash, lack of mid- and late-kettle hops, two hour boil, heavy cool-pool hop charge—but for Anderson, it's not good enough to make a good beer using safe techniques. The goal is to make great beer, using every tool at his disposal. In this episode, Anderson discusses: stripping adjuncts out of light lager to reduce perception of acetaldehyde long 2+ hour boils to drive off DMS making characterful helles and pils without decoction using local water with high hardness to give structure to malt building character in lager with domestic and European malt hop use and selection in German-style pils the quirks of brewing with the Andechs strain And more. The boys drink and review a Helles lager from Sam Adams, then discuss the Mississippi miracle. They've moved from the bottom to near the top in reading. How did they do it? They abandoned the failed modern educational ideas, like whole language, that have been destroying education for decades, and went back to phonics and strict standards. Modern ideas confuse how a proficient reader reads with how beginners learn. It was a comical error. People become proficient by learning and internalizing the basics. Later they don't need the basics anymore, but that doesn't mean they didn't need to learn them. Modern methods try to take a shortcut, and it doesn't work. Mississippi went back to the basics and pulled off a miracle.

Send us a textCrisp nights, clinking steins, and the great Oktoberfest debate: does the same beer really taste that different on tap vs in a can? We put it to the test with two pours—a local Jamestown Oktoberfest and a Munich-brewed Helles—then dig into why carbonation, packaging, and freshness can swing a rating from a nine to a seven in a single pour. If you've ever brought home a favorite draft beer only to feel let down by the can, you'll hear exactly what's going on and how to shop smarter. We start local with a darker, mildly sweet Märzen that shines at the source but feels flatter at home, then flip to a classic German Helles with a brief skunky nose that settles into clean malt and a crisp finish. Along the way, we unpack what “Helles” actually means, how lightstruck aroma happens, why cans often beat green glass, and the role of package dates, cold-chain storage, and pour technique. We also talk setting: the Jamestown brewery's fall views, live music, and a Reuben that's delicious if pricey—plus why long tables, loud rooms, and good weather change how a lager drinks.Between sips, we trade quarter-end work stress for golf therapy—new driver, improving handicaps, and the simple joy of a solo nine with leaves underfoot. We round out with practical takeaways: when to buy draft over cans, how to protect delicate lagers, what to pair with malt-forward beers, and when to switch from pumpkin spice sweetness to an everyday Helles. If you want your Oktoberfest season to taste better, not just different, this is your playbook. If you enjoy the show, follow and share it with a friend who loves fall beer runs. Rate and review to help more listeners find us, and tell us your go-to Oktoberfest or Helles—we'll feature the best picks in a future tasting.Support the showwww.anotherreasontodrink.com
From the rare Franconian Rotbier to crisp Helles, hear how Buffalo Creek tackles the toughest lager challenges to keep German brewing alive in Long Grove, Illinois.Buffalo Creek Brewing Owner and Brewmeister Mike Marr shares how German brewing tradition thrives in Long Grove, Illinois. He explains why lagers are so difficult yet rewarding to brew, the difference between a brewmeister and brewer, Long Grove's German roots, what makes a Franconian Rotbier unique, and why lagers are unforgiving for mistakes. Plus: how visiting 300 breweries helped Mike shape his business plan, what drew him to traditional lagers, and which styles Americans just don't enjoy. After the beer break, Mike highlights Buffalo Creek's playful mini stein sampler glasses, explains what defines a Helles Lager, and reviews beers including their BIG Ludwigski Märzen and Obligatory IPA. He also shares stories behind Buffalo Creek's four major festivals, the origins of Oktoberfest in Germany, and how the Beer Judge Certification Program defines Dunkel vs. Märzen. Mike also explains what beer ingredients can tell us about US history, including how Wisconsin's Manitowoc grain elevator sorts massive amounts of barley, why Wyoming is perfect for barley growing, and how Buffalo Bill Dam played a role.
If you've not had a beer from Hall and Woodhouse, you're sure to know someone that has. Blandford Fly, Fursty Ferret Amber Ale and Tangle Foot Golden Ale are long-established household names while the newer Outland brand, with beers such as its Tropical Pale Ale, West Coast IPA and Helles are making a mark on their own terms. And heading up the production of these beers is Toby Heasman. A celebrated and revered brewer that joined the business back in 2006. Much has changed in the time Toby has been part of the business. And much has changed in the industry, and across the globe, since Hall and Woodhouse started out.Because Hall and Woodhouse, the British regional brewery, was founded by Charles Hall in Blandford Forum way back in 1777. Today, their family of pubs are regarded as some of finest in the country. With more than 150 iconic public houses and inns at the heart of their communities across the South of England. And ensuring those pubs, as well as countless other customers, have access to great beer is Toby Heasman. In this episode we discuss how Toby found a passion of beer, one that led him into a career that he continues to grow and thrive in.We discuss the balance of brewing different styles for both Badger Ales and the Outland brand, as well as the underlying qualities that make a great beer across the board. He also outlines the responsibilities that come with working for such a prestigious business and why that's a catalyst, rather a burden, when it comes to his commitment to beer and brewing.

The post EP128 – Haz tu mejor cerveza Helles first appeared on cervezatlan.
On this week's Mentioned in Dispatches podcast, Clive Harris explores the role of London Territorials in the Gallipoli campaign of 1915–16. While no full London territorial division served there, six battalions, five Yeomanry regiments and two support units contributed around 8,500 men, spread across multiple formations from Helles to Suvla. Their experiences, challenges and the lessons they carried forward are brought to life through figures such as bandleader Billy Cotton and William Wedgwood Benn. This talk was part of the London Pride Conference held in June 2024.

Staying true to yourself, building a positive working culture, creating a business people admire and also producing beers that consumers and your peers enjoy are traits any brewery owner strives for. Today's guest has all of those in abundance. Since opening for business in the summer of 2016, Lost and Grounded Brewers of Bristol, have cemented themselves as one of the finest breweries - not only in the UK - but Europe, too.Founded by Annie Clements and Alex Troncoso, the brewery as made its name through early releases such has Keller Pils, Running with Sceptres and Hop-Hand Fallacy and wih more recent additions such as Extra Nice, Wanna Go To The Sun and Helles. So as the brewery approaches its latest anniversary, and with another busy summer ahead helping satiate the nation's lager lovers, we caught up with Alex to reflect on the Lost and Grounded journey so-far. We discuss how a commitment to producing lager meant playing the long game, the talented team that helps keep the brewery ticking and why if you're going to make beer then you should do it for the right reasons. And to read more about the early days of the brewery, you can check out our article from 2016 right here.

We're back after a short break, and David drinks the Costco-exclusive Deschutes Kirkland Signature Helles-Style Lager.Kirkland Signature Helles-Style Lager is a recipe from the Oregon-based Deschutes Brewery that won a gold medal at the 2023 Great American Beer Festival. The beer is 4.5% ABV and is a nearly perfect example of the German-inspired style that is both crisp and clean. The Brewers Association annual ranking of the top 50 craft breweries is also out, and we talk about the biggest movers on the list. One of the headlines for David is that Rhinegeist Brewery is now the biggest brewery in Ohio, moving up to 16th overall and passing longtime champ Great Lakes. BrewDog and Fat Head's also rank as Ohio breweries in the top 50.We break down the following new stories:Brewers Association Reports 2024 U.S. Craft Brewing Industry FiguresChurchill Downs Partners with TEN20 Craft Brewery with 'Churchill Downs Light' BeerWhistlePig Whiskey Toasts 4/20 With Marijuana-Flavored Maple Syrup Want to grow a better beard and become a legend? We're taking another style deep dive ABV-style with the pride of Munich: the Helles Lager. We try a German classic before exploring four local interpretations of the unfussy easy-drinking style, but as always, it's the variations that make it interesting. Also, Ryan is in desperate need of some Inception Pants, Craig won't even stand up for fewer than three decoctions, and we reminisce about cool record stores. And remember: puns don't provide pants. In this week's episode, I kicked things off with some deep appreciation for the lager that inspired the show: Bierstadt Helles. It's a beer that proves complexity doesn't require flash—sometimes, the most profound impact comes from simplicity done right. Bierstadt Lagerhaus, based in Denver, Colorado, has earned a cult following for its reverent dedication to traditional German brewing. Their Slow Pour Pils gets a lot of love, but it's their Helles that quietly steals hearts. This beer is a love letter to patience, balance, and restraint. At just 4.9% ABV, it's a masterclass in malt character, subtle floral hops, and soft carbonation that leaves you wanting another pour… and another. I shared a bit about my first encounter with Bierstadt's beers—how it felt like discovering an old world secret at altitude. Drinking their Helles reminds me that not every beer needs to punch you in the face with hops or roast. Sometimes, a well-executed classic is the soul-soothing comfort we didn't know we needed. Live tasting? Of course. I cracked a can and walked through the golden hue, the fluffy white head, the bready nose, and that impossibly clean finish. If clarity and calm had a flavor, this would be it. To wrap it up, I dipped into the internet's worst takes with a few ridiculous 1-star reviews. Spoiler alert: if you complain a Helles “tastes like beer,” you might be missing the point.

Master Brewer Hagen Dost delves into Dovetail Brewery's traditional brewing techniques, from open fermentation to coolships. Hagen starts by sharing his journey of getting into brewing, with an emphasis on his German heritage growing up and the sensory class that helped him develop skills that he feels would benefit any brewer. He then explains how he became a Certified Master Brewer and discusses traditional European brewing methods, including decoction and the use of a coolship. Plus: the art of identifying fermentation flaws, the science behind crafting classic European beer styles, the significance of the German beer purity law, and the shelf life you can typically expect from beer you buy at your local craft brewery. After the beer break, Haagen discusses their Wet-Hopped Hopfenlager, a lager brewed with freshly picked hops from Michigan, characterized by subtle hop flavors and a lack of bitterness. He also explains what a coolship does and why it's so rare, why some brewers prefer to serve full pours over flights, and the history of the lauter grant faucets behind Dovetail's bar. Plus: what piece of equipment is Dovetail actively using that used to belong to the oldest brewery in the world (and how did they acquire it)? The Humble Sea (https://humblesea.com) origin story told by cofounder and brewmaster Nick Pavlina is a common one: Avid homebrewer turns pro at the urging of family and friends. Yet that early experience with brewing, brewing, and brewing some more—on a one-barrel system—instilled a discipline for testing, evaluating, and adapting that stays with Humble Sea to this day. A 2022 World Beer Cup silver medal for Munich-style helles gave them the validation they sought for the nascent lager program—but rather than anchor them in place, that success put more wind in their experimental sails. They continue to tinker with that beer, testing mash-step times and temperatures as well as fermentation parameters, in an ongoing quest to make it as perfect as possible. Meanwhile, they've hitched a ride on the swift current of hazy IPA—or, in their lingo, “foggy IPA”—but they've done so in ways inspired by their West Coast locale. The result has been significant growth, and the brewery now has five different ports they call home. In this episode, Pavlina and brewing operations director Nate Chesser discuss: developing a house lager style by assembling pieces of various traditions and the practices of brewer peers changing and adjusting their medal-winning helles despite its success embracing decoction for both its tangible and intangible benefits choosing and sourcing Noble hops for helles and pilsner fermenting lagers with a less common yeast strain building their initial “foggy” IPA out of a Pliny the Elder–inspired recipe leaning into their unique water profile spunding IPA for natural carbonation And more. The world may know Austin's Meanwhile (https://www.meanwhilebeer.com) for the GABF and World Beer Cup medals they've won, including golds for Helles and Pilsner, and silver for Secret Beach IPA. But the locals know it as a great beer garden with a playground for kids, an outdoor concert stage, a wide array of food trucks, and tasty beer that can be either dissected or just digested. It's a beautiful place to spend time with friends over beer, with beer that's worth talking about (if that's your thing). In this episode, Director of Brewing Operations Robert Fulwiler, himself an alum of Seattle's Fremont, discusses some of the keys behind Meanwhile's successful lagers and IPAs, including: Blending pilsner malts for color and character Managing mash thickness with a slightly high-gravity brew Adjusting for the low alpha of the 2022 German hop harvest Building a range of hop flavor with addition timing and a variety of hops and formats Using Augustiner yeast and embracing the best side of sulfur Slow carbonation for more delicate lagers “San Diego-style IPA” and what it means Managing hop creep with ALDC Controlling the expression of funkier hop characteristics through temperature And more.
