A Digital Media Empire Embraces Cider at The Newt The Newt in Somerset is a world-class estate blending cider-making, luxury hospitality, and horticultural excellence. The estate is owned by South African owners Karen Roos and her husband Koos Bekker, who is a South African tech entrepreneur known for his innovative ventures, including transforming media group Naspers. Bekker's vision extends beyond digital media into luxury hospitality and agriculture, mirroring his approach at Babylonstoren in South Africa, The Newt's sister property. Ciders tasted at The Newt in Somerset A Cathedral to Cider at this Luxe Estate The Newt's cider operation began in 2018, a year before the estate's gardens and hotel opened. Designed with a focus on creativity and the visitor experience, the cidery features state-of-the-art equipment, including Voran presses, hypoxic apple storage, and multiple fermentation tanks. The cider is predominantly crafted for guests visiting the estate, which receives up to 200,000 visitors a year. Charlie Inns: The Cider Maker's Story Charlie Inns, the cider maker, brings a deep passion for microbiology and biochemistry to the operation. His journey began with home brewing in his youth, later gaining professional experience at Lilly's Cider. At The Newt, Charlie focuses on crafting ciders using estate-grown apples from 65 varieties, many of them heirloom. The orchards, covering approximately 70 acres, are planted with traditional, full-size trees spaced widely to minimize disease spread and reduce the need for chemical treatments. Parrotdog (https://parrotdog.co.nz) has been a craft-brewing mainstay in New Zealand for nearly 15 years, and with national distribution and a production brewery and taproom steps from the beach and Wellington's airport, they reach a broad audience of consumers across a range of styles. While their core line features everything from a classic C-malt IPA to pils with “vivid passion fruit and white-wine notes,” they also constantly iterate and experiment on the brewery's five-barrel pilot with everything from fresh-hop lagers to saturated hazy IPAs. This week, cofounder and brewing director Matt Warner joins the podcast to talk hops (of course) and how they employ both domestic and Pacific Northwest varieties across a range of styles. Along the way, he discusses: growing from a contract brand to a small brewery to a regional production brewery scaling from homebrew recipes to commercial batches in the early days designing “zingy” New Zealand pils that snaps across and cleans the palate rebalancing blends of Riwaka and Nelson Sauvin yearly to adapt to crop-year differences how Motueka changes over the picking window with a bit of “ginger crunch” character instability in Motueka after pelletizing using hops to build bigger mouthfeel in otherwise dry beer new Bract Program experimental hops that show promise And more.
In Wellington, New Zealand, the Fork & Brewer (https://forkandbrewer.co.nz) has to live up to a reputation, and head brewer Brayden Rawlinson is up for the challenge. Under the leadership of previous head brewer Kelly Ryan (now with Freestyle Hops), the downtown brewpub garnered numerous awards, and the expectations placed on his successor were huge. Yet Rawlinson brings his own style and swagger to the role, alongside a deep love of fermentation in all its forms, and he's continuing the legacy with different takes on beer that are equally medal-worthy (https://brewersguild.org.nz/2024-nz-beer-awards-winners-announced/). In this episode, Rawlinson discusses: pressure fermentation at warmer temps for faster, pub-centric lagers that win medals brewing pils with 100 percent Riwaka hops added everywhere, from mash and first wort through a dip-hop addition and dry hop achieving a more herbal, Noble-like character with Riwaka sculpting a slightly drier NZ pils applying Italian-style method to beers made with New Zealand Sauvignon Blanc grapes and Nelson Sauvin hops balancing the acidity in wine-grape beers with low pH but not overt sourness And more. While hop-forward lager may be a relatively new phenomenon in the States, New Zealand brewers have been brewing their own version of pilsner for decades using homegrown hops. Yet threading the needle in a precise style with hops that can have strong notes, such as mineral and diesel, is no small feat. In this episode, Paweł Lewandowski, the award-winning head brewer at Mount (https://mountbrewingco.com) in Mount Maunganui, on the North Island, walks us through the creative and technical process behind their “beer geek pilsner”—a beer that multiple brewers recommended to us as a standout example of the style. Motueka, Nelson Sauvin, and Riwaka work together in a golden ratio with two pilsner malts, wheat malt, actively managed fermentation temperatures, and concise lagering to produce a pilsner with 45 IBUs and a full body that expresses the more structured side of the country's signature hops. During the episode, Lewandowski discusses: the style's origin, beginning with Emerson's (https://emersons.co.nz) in the 1990s building a heftier body with pilsner and wheat to support strong hopping his experiments with step-mashing that led back to single-infusion using Motueka, Nelson Sauvin, and Riwaka at various points during the boil, whirlpool, and dry hop year-over-year flavor variation in New Zealand hop varieties balancing selection criteria to work across a range of styles warmer lager fermentation, with a 24-hour temperature drop early on lower pH and shorter lagering times for bright, hop-forward pils contrasts between New Zealand and West Coast pils using the “golden ratio” for hop blends And more. New Zealand is pretty far from everything, so competing on price for commodity bittering hops was never a great strategy for the country's small number of hops growers. Things were pretty grim in the early 2000s, when fifth-generation farmer Brent McGlashen joined his dad working on the family farm, Mac Hops (https://www.machops.co.nz), just outside the town of Motueka on the north end of South island. But then something mysterious and wonderful happened: Craft beer took off, and creative brewers exploring new flavors and possibilities found ways to use New Zealand's uniquely expressive hops to make beers that no one had tasted before. In this episode, McGlashen tells the family's story—which mirrors the bigger story of hops in New Zealand, going from struggle to global spotlight. He also talks about their move to the next chapter: gaining a deeper understanding of the science behind how flavors develop in the hops, and the factors that influence those flavors. Through the hour, he touches on: breeding hops with a difference in order to stand out learning what brewers want through the selection process the impact of soil type on expression and even cone shape in hops such as Nelson Sauvin planting different hop varieties in different soil blocks to support their unique growth patterns why West Coast–style IPA brewers gravitate toward Nelson grown in sandy, stony soil, while hazy IPA brewers consistently select those grown in heavier clay soils how pick timing affects flavor and aroma impact the range of characters in popular varieties such as Nelson Sauvin, Motueka, Nectarine, Superdelic, Riwaka, Wakatu, and Rakau how New Zealand hops affect the shelf life of hop-forward beers And more. Homogeneity is the name of the game in certain circles of brewing—from massive brewers who standardize their hop lots by blending before pelletizing, or hop companies that blend lots to iron out highs and lows in a particular crop year. But for Garage Project (https://garageproject.co.nz) and Hapi Research (https://hapi.co.nz)'s Pete Gillespie, that search for the least offensive middle way removes the incentive for everyone to optimize for quality, expression, and individuality that's core to the idea of craft beer. In their brewing program, and in their partnership to pursue new hop varieties, character and unique experiences are the name of the game, and they're putting significant investment behind the pursuit. In this episode, Gillespie discusses: using supporting hops to accentuate lead hop characters the impact of pick time on hop expression variations within single field blocks of hop varieties the dynamic shift in Nelson Sauvin over the picking window terroir's impact on hop flavors and aromas exploring diverse growing areas for hops in New Zealand surprise impact in this year's hops like Southern Cross the inscrutable challenge and benefit of Riwaka Hāpi Research's investment in developing new NZ varieties secrets of selecting Southern hemisphere hops And more. Another week brings an new collection of beers. Up first is from a hot new Finnish brewery Factory Brewing. Cosmic Dance is an exciting hazy DIPA made with Citra, Nelson Sauvin and Galaxy hops. We're looking forwad to trying more of their beers. Hopfully we get some Sweden soon. We paired it with a 3F Oude Geuze Blend No 49 from season 23/24. It's a 6% gueuze that gives lots of apple and funky notes. For a young gueuze it's really exicting. #beer #craftbeer #drinks #dipa #neipa #gueuze

So far they have released over 30 beers. It's great to try so many different styles from so many different local breweries. We tried three releases this episode. Beer Barons released a pilsner coming at 4.7% ABV and made with Nelson Sauvin hops. Next is BarlinBeer with a hazy IPA. It's 7.2% AVB with simcoe and citra hops. Finally we have Örebro Brygghus with a 5% ABV zwickel pils. If you see these on the shelf, grab some and try something from a local brewery. #beer #craftbeer #drinks #pilsner #ipa #zwickel

Ask most American brewers about their first experience with New Zealand hops, and nine out of ten will probably name one single beer—Alpine Beer's Nelson. Alpine founder Pat McIlhenney was one of the early ones to import southern hemisphere hops, and it's hard to speak about the hop now without acknowledging the importance of that singular beer. Son Shawn McIlhenney inherited his dad's love of hops and experimentation, and today continues to push the limits of ingredients and techniques through McIlhenney Brewing. (https://mcilhenneybrewing.com) In this episode, McIlhenney touches on: the evolution of San Diego IPA using enzymes to manage a flaked rye mash combining Nelson Sauvin and Nectaron hops for maximum effect first wort hopping for less aggressive bite blending whole leaf hops with advanced hop products like Incognito pushing the fine line between enough and too much selecting Southern hemisphere hops recipe considerations when scaling up to double and triple IPA avoiding the flavor effects of over-aeration rediscovering the personal joy of making beer And more. This Saturday we're returning to the world of Lovecraft in episode 80, The Curse. Based on the classic story The Colour Out of Space, this picture tells the tale of a struggling family farm that is rocked when a strange object from space lands in a field one night. What at first seems like a godsend quickly turns into a living nightmare. To pair with this, we found Look Into the Air Hazy Pale Ale with Nelson Sauvin hops, which @luabrewing was kind enough to provide. It's a thrilling story that may or may not make a thrilling picture, but we have a great beer. Thanks for listening! Check out our website SUBSCRIBE: to the show on Apple Podcast or Google Play. Don and Em chat with Brent McGlashen of Mac Hops and Ron Beatson of NZ Hops.Today, New Zealand hops are known for their tropical, fruity flavors, but it wasn't always that way. The McGlashen family itself has been growing hops for five generations and have watched New Zealand hops evolve from a commodity crop that was profitable based purely on maximum output, to the specialized, premium product it is today, highly sought by craft brewers around the world.Much of that change is the result of hops breeding, which has improved the agronomics of hops, but also taken advantage of New Zealand's unique soil and climate. Beatson is such a legendary hop breeder, they named a hop after him - Nectaron, but he is also responsible for breeding such legendary hops as Nelson Sauvin, Motueka and Riwaka. Beatson discusses what makes New Zealand hops unique. This Episode is Sponsored by:Estrella GaliciaEstrella Galicia is an independent, family-owned brewery in northwest Spain, founded in 1906.Estrella Galicia Cerveza Especial is a world class lager, brewed using the finest Spanish malts, locally cultivated Galician hops and the best brewing practices, in a state-of-the-art facility in A Coruna. New Zealand's population is smaller than the state of Colorado, but country's exports have had an outsized impact on craft beer over the past decade. From hops such as Nelson Sauvin, Motueka, and Riwaka, to the cutting-edge thiol-optimized Phantasm powder, New Zealand has made undeniable contributions to the flavor evolution of American IPA over the past decade. Jos Ruffel, cofounder of the Wellington-based Garage Project, has had a front seat for his country's evolution from craft beer follower to craft beer influencer. An avowed geek whose pivotal beer experience involved Pliny the Elder, Ruffel and partner Pete Gillespie founded the brewery with Pete's brother Ian in 2011. Their goal was to tap into the creative energy they felt from influential independent breweries half a world away. Today, they've become creative drivers, pushing exploration with their local hops, developing new ways of creating signature Southern Hemisphere thiol-driven flavors, and embracing dramatic service strategies in public-facing events. In this episode, cofounder Jos Ruffel discusses: engaging with ingredients as any chef or brewer should bringing transformational growth to the NZ hop industry through the Hāpi Research center using less glamorous but incredibly important supporting hops in blends maximizing for thiols using a variety of brewing techniques thiol stability and expression in fermentation phantasm powder and the variety of ways to use it in the brewing process the entourage effect between thiols and terpenes the outsized impact of thiol optimization in combination with other hops considering texture and time in beer flavor experience And more.
