It's rich, indulgent, and full of those sweet holiday spices that make everything feel festive.” Nick's take on Coquito skips the evaporated milk for more coconut richness, blending coconut milk, sweetened condensed milk, dark rum, and a dash of warm spices. Shake it up in a cocktail shaker, serve it chilled, and garnish with nutmeg or a cinnamon stick for the perfect holiday toast. Whether you sip it in a martini glass or over ice, it's a little taste of the tropics with a festive twist. This recipe is easy-peasy, even for the directionally challenged (yes, I've been known to rescue instructions from the trash one too many times). So grab a shaker, channel your inner Tom Cruise, and toast to the holiday season! Here's Nick Mautone's Holiday Coquito Recipe! Holiday Coquito By Nick Mautone Coquito is an eggnog-like alcoholic beverage, but without eggs! A traditional Puerto Rican holiday drink it is creamy, decadent and filled with sweet spices like cinnamon, clove, nutmeg, allspice and ginger. The key ingredients are coconut milk or cream of coconut and condensed milk. Many home recipes include evaporated milk, I skip that in favor of more coconut milk and its exotic flavor. If you want to go completely dairy free (I often do!) there is sweetened condensed coconut milk available online and in specialty markets, or use coconut cream instead of condensed milk – just be sure to mix it well. 2 oz coconut milk 1 ½ oz Dark rum 1 oz sweetened condensed milk Generous Dash of apple or pumpkin pie spice or your favorite blend of sweet spices like cinnamon, clove, nutmeg, allspice and ginger Garnish: Grated Nutmeg and/or Cinnamon Sticks and/or Coconut Glassware: Shot Glass, Martini up or Rocks glass over ice Pour all ingredients into a cocktail shaker filled with ice. Shake vigorously, strain into preferred glass or rocks glass filled with ice. Garnish Pro tip 1 Adding a dash of another brown spirit such as bourbon, brandy or a sweet sherry will add a real depth of flavor and complexity. Pro tip 2 Multiply this recipe by 10 or more and stash in the fridge. It will last a week or so, ready for all your holiday entertainment. Pro tip 3 Add a tablespoon of pumpkin purée to the recipe for a very decadent pumpkin pie “nog” Pro tip 4 Add a tablespoon of apple butter to the recipe for a very decadent apple pie “nog” Pro tip 5 Add a ½ ounce of peppermint schnapps or white crème de menthe to the original recipe for a very decadent peppermint bark like version. In this episode, Will talks about the newest signature cocktail at JSTR, Rudolph's Night In, as well as three cocktails created just for Bourbon drinkers - Jingle Bell Smash, Christmas Kentucky Buck, and a Cinnamon Old-Fashioned. Below, find the recipes for each drink and the recipes for the three Simple Syrups used in the cocktails. All ingredient amounts are per drink.Simple Syrup 1 cup water 1 cup white sugarCombine water and sugar in a small saucepan. Bring to a boil, stir until sugar dissolves. Remove from heat and allow syrup to cool slightly. Pour syrup into a sterilized glass jar and cool completely. Store simple syrup in the glass jar with a tight-fitting lid in the refrigerator for up to 1 month. Rosemary Simple Syrup 1 cup water 1 cup white sugar ¼ cup rosemary leavesCombine water, sugar, and rosemary leaves in a small saucepan. Bring to a boil, stir until sugar dissolves. Simmer for 1 minute. Remove from heat and let syrup steep for at least 30 minutes.Pour syrup into a sterilized glass jar through a mesh strainer to remove rosemary leaves; let cool.Store simple syrup in the glass jar with a tight-fitting lid in the refrigerator for up to 1 month. Cinnamon Simple Syrup 1 cup water 1 cup white sugar 4 Cinnamon Sticks ½ teaspoon Pure Vanilla Extract (optional)Combine water and sugar in a small saucepan. Bring to a boil, stir until sugar dissolves completely.Reduce the heat and add the cinnamon sticks. Cover and simmer for 5 minutes. Remove from heat and let syrup steep for at least 1 hour and up to 6 hours depending on the level of cinnamon desired. Remove cinnamon sticks and stir in vanilla extract. Pour syrup into a sterilized glass jar with a tight-fitting lid. Store in the refrigerator for up to 2 weeks. Rudolph's Night In 4 oz. of Canada Dry Ginger Ale (or the Ginger Ale of your choice) ½ oz. Rosemary Simple Syrup1 oz. Lemon Juice 2 oz. Pomegranate Juice 2 oz. Bacardi White Rum (or any white rum of your choice)Stir all ingredients together and pour into a martini glass or other stemware.To make drinks look a bit more festive, rim them and add a garnish! For Rudolph's Night In, crush peppermints into small pieces. Take a martini glass, wet the rim with lime juice, and dip it in the crushed peppermint. Hang a miniature candy cane from the rim or add it into the drink and prepare for oohs and aahs from your guests.Jingle Bell Smash 2 oz. Elijah Craig Small Batch (or the Bourbon of your choice) 2 oz. Cranberry Juice 1 oz. Rosemary Simple Syrup 1 oz. Lemon JuiceStir all ingredients together and pour into a tumbler. Garnish with a few fresh cranberries and/or a sprig of rosemary. Christmas Kentucky Buck 2 oz. of Woodford Reserve or Maker's Mark 46 Bourbon (or the bourbon of your choice) 1 oz. Lemon Juice 1 oz. Simple Syrup 2 oz. of Cranberry Juice 2 oz. Club SodaStir all ingredients together and pour into a tumbler. Garnish with a mint leaf sprig.** For a more pronounced mint flavor, muddle a few mint leaves in the bottom of the glass before building the cocktail. To Muddle means to mash or crush the leaves, herbs, spices, or fruit so that the aroma and essence of it adds to the drink. Do not pulverize the item. Cinnamon Old-Fashioned 1 thin Orange Slice 2 oz. of Bourbon 1 oz. of Simple Syrup Dash of Bitters ¼ cup of orange juice 1-2 oz. of Cinnamon Simple Syrup Cinnamon StickMuddle the orange slice in the bottom of an Old-Fashioned glass. It really was just a coincidence that an Irishman is on our show the week of St. Patrick’s Day. I promise it wasn’t planned! And what a pleasant coincidence it is to have James Goggin of Maverick Drinks on the show today. I actually met James at the Embassy of Ireland almost one year ago and I knew he would make a great guest. He has that wonderful quality of making you feel that you are the only one that he is telling his tales to. A natural bon vivant and born for hospitality, his role as Brand Advocacy Manager for Maverick Drinks, the Craft Spirits distributor, fits like a glove. But let’s start with how he got from a small town in county Carlow to New Zealand and back again. Our Cocktail of the Week is the Teeling Irish Coffee: Ingredients 40ml Teeling Small Batch 120ml Freshly Brewed, Robust Coffee 20ml Spiced Stout Syrup* Fresh Cream Freshly Grated Nutmeg Method Preheat glass with some warm water and discard Add the Teeling Whiskey, stout syrup, brewed coffee and stir to combine Warm a large spoon and gently pour the cream over the back of the spoon and onto the coffee. Garnish with a light dusting of grated nutmeg and enjoy with friends! *Spiced Stout Syrup (makes approx. 1.5L of syrup): 1L Irish Stout (Guinness or similar) 1kg Demerara Sugar ½ Cup Whole Cloves ½ Cup Pimento/Allspice 3 Cinnamon Sticks 1 Whole Orange Zest 2 Inch Fresh Ginger Grated Pinch of Salt 3 Whole Star Anise Pods Add all ingredients to a saucepan and bring to the boil, allow to simmer for 10 minutes. Remove from heat and allow to steep for 5 minutes. Strain through a fine sieve and cheesecloth and bottle. Keeps for 2 weeks refrigerated.
