Looking for the perfect holiday drink? Meet Coquito, Puerto Rico's creamy, coconut-infused answer to eggnog—and the recipe comes straight from Nick Mautone, the mixology mastermind behind the $10 million Honey Deuce cocktail at the U.S. Open. When asked what makes the Coquito so special, Nick said, “You almost can't screw it up. It's rich, indulgent, and full of those sweet holiday spices that make everything feel festive.” Nick's take on Coquito skips the evaporated milk for more coconut richness, blending coconut milk, sweetened condensed milk, dark rum, and a dash of warm spices. Shake it up in a cocktail shaker, serve it chilled, and garnish with nutmeg or a cinnamon stick for the perfect holiday toast. Whether you sip it in a martini glass or over ice, it's a little taste of the tropics with a festive twist. This recipe is easy-peasy, even for the directionally challenged (yes, I've been known to rescue instructions from the trash one too many times). So grab a shaker, channel your inner Tom Cruise, and toast to the holiday season! Here's Nick Mautone's Holiday Coquito Recipe! Holiday Coquito By Nick Mautone Coquito is an eggnog-like alcoholic beverage, but without eggs! A traditional Puerto Rican holiday drink it is creamy, decadent and filled with sweet spices like cinnamon, clove, nutmeg, allspice and ginger. The key ingredients are coconut milk or cream of coconut and condensed milk. Many home recipes include evaporated milk, I skip that in favor of more coconut milk and its exotic flavor. If you want to go completely dairy free (I often do!) there is sweetened condensed coconut milk available online and in specialty markets, or use coconut cream instead of condensed milk – just be sure to mix it well. 2 oz coconut milk 1 ½ oz Dark rum 1 oz sweetened condensed milk Generous Dash of apple or pumpkin pie spice or your favorite blend of sweet spices like cinnamon, clove, nutmeg, allspice and ginger Garnish: Grated Nutmeg and/or Cinnamon Sticks and/or Coconut Glassware: Shot Glass, Martini up or Rocks glass over ice Pour all ingredients into a cocktail shaker filled with ice. Shake vigorously, strain into preferred glass or rocks glass filled with ice. Garnish Pro tip 1 Adding a dash of another brown spirit such as bourbon, brandy or a sweet sherry will add a real depth of flavor and complexity. Pro tip 2 Multiply this recipe by 10 or more and stash in the fridge. It will last a week or so, ready for all your holiday entertainment. Pro tip 3 Add a tablespoon of pumpkin purée to the recipe for a very decadent pumpkin pie “nog” Pro tip 4 Add a tablespoon of apple butter to the recipe for a very decadent apple pie “nog” Pro tip 5 Add a ½ ounce of peppermint schnapps or white crème de menthe to the original recipe for a very decadent peppermint bark like version. Coquito TradicionalMakes about 5 ½ liters60 oz. / 5 cans evaporated milk60 oz. / 4 cans cream of coconut (such as Coco Lopez)2 Tbsp. good-quality vanilla extract6 long cinnamon sticks (preferably Mexican cinnamon)3 Tbsp. ground nutmeg4 whole star anise6 whole cloves2 liters aged Puerto Rican rumAdd all of the ingredients, except the rum, to a large pot and bring to a boil, stirring to combine. Immediately remove from the heat and let cool to room temperature. Add the rum and stir, then strain out the solids, saving the cinnamon sticks and discarding the rest. Using an immersion blender (or a blender, working in batches), blend for at least 90 seconds. Bottle for use or for gifting, adding a cinnamon stick to each bottle. Keep refrigerated. To serve, pour chilled into a small cup or glass (or add to coffee), and grate fresh nutmeg or cinnamon on top, if desired.

Go ahead and grab the ingredients below (Reina Gascon-Lopez starts listing them at 1:03) before starting the episode.Coquito CookieMakes 36 cookiesCookies2 1/2 cups (300 grams) all-purpose flour1/2 teaspoon baking soda1/2 teaspoon kosher salt1 teaspoon ground cinnamon1/2 teaspoon grated whole or ground nutmeg2 sticks (1 cup/226 grams) unsalted butter, at room temperature1 1/2 cups (300 grams) granulated sugar2 large eggs, room temperature1 teaspoon coconut extract1 teaspoon rum extract1 1/2 teaspoons vanilla bean pasteIcing1 1/2 cups (60 grams) sweetened coconut flakes, toasted, for garnish2 cups (120 grams) confectioners' sugar, sifted1/4 cup waterHeat the oven to 350°F. Line 2 baking sheets with parchment paper or silicone baking mats.In a large bowl, sift or whisk together the flour, baking soda, salt, cinnamon, and nutmeg. Set aside.In a stand mixer fitted with the paddle attachment, cream the butter and sugar until light and fluffy, 2 to 3 minutes. While the butter and sugar are working, in a small bowl, whisk together the eggs, coconut extract, rum extract, and vanilla. Slowly pour into the creamed butter and sugar mixture, beating until fully combined.To avoid making a mess, turn the mixer off and carefully add the dry ingredients into the bowl. Turn on at the lowest speed and beat until just combined, making sure no floury patches remain. The dough should appear sticky and tacky. Chill the dough for at least an hour in the fridge.Using a tablespoon or small measuring scoop, scoop and roll the cookie dough into balls about 1½ inches in diameter. If your dough is very soft, you may want to use wet hands to roll the balls. Place on the prepared baking sheets spaced 3 inches apart. If you don't want to bake all of the cookies at once, simply freeze the rolled dough balls and portion them in a plastic freezer bag for another day. Thaw in the fridge overnight, then flatten and bake as you would with fresh dough.Using the bottom of a cup or mug, or just the palm of your hand, flatten each dough ball into a round, uniform shape about ½ inch thick. Repeat with the rest of the cookies.Bake for 12 to 15 minutes or until the edges are light brown, rotating the pan halfway through. Remove the baking sheets from the oven and tap them on the counter a few times to release the cookies from the parchment paper.Let cool for 5 minutes on the baking sheets, then remove the cookies to place on wire baking racks to cool completely before glazing. Make sure to keep the parchment and place it underneath the wire rack for easy cleanup when it's time to glaze and garnish the cookies.Make the icing: To toast the coconut flakes, place them in a dry large skillet or frying pan. Cook over medium heat until they're a light golden brown color, 3 to 5 minutes, making sure to stir often to keep from burning them. Transfer to a plate to cool.In a small mixing bowl, whisk together the sifted confectioners' sugar and water until it forms a thin, smooth glaze.
