As the founder of the Test Kitchen Education Foundation (TKEF), he created the Elliott Test Kitchen (ETK)—a one-of-a-kind afterschool program that used food and mentorship to bring academic support to students in rural Iowa. Dass sich zu wenige Menschen dagegen auflehnen und dass ein großer Teil der Gesellschaft offenbar nicht aus der Geschichte lernt. Und doch kennt er keinen Hass – trotz allem, was seiner Familie widerfahren ist und was er selbst an Anfeindungen erlebt hat, darunter zwei Attentatsversuche. Seine Freude am Streiten ist inspirierend, im Austausch mit anderen, aber auch mit sich selbst. Wenn er mit Leidenschaft spricht, ist das immer ein wilder Ritt, und er schreckt auch vor Selbstironie nicht zurück. Begegnungen zwischen Mensch und Tier können eindrückliche Erlebnisse sein, auch in der Stadt. Respekt gegenüber der Wildnis ist dabei das Wichtigste. Nachhelfen kann der Mensch, indem er die nötigen Lebensräume schafft. «Nahrungsmittelhilfe» für wildlebende Tiere ist aber nicht nötig und oft schädlich.
