Well, we did it boys, on this episode, I sit down with the legend himself, Keizo Shimamoto. To many aspiring ramen chefs, Keizo is considered one of, if not the best ramen chef in America. His passion for ramen is unrivaled and his dedication to the pursuit of ramen is truly inspiring. Many outside of the world of ramen know him as the creator of the viral sensation the ramen burger, but to bill him just as that, is really selling him short of what he truly is. In Japan he would be considered a shokunin. A craftsman who dedicates his life to the pursuit of excellence in one specific field. Think of the Jiro from Jiro dreams of sushi. like that but the ramen version of that. This was a challenging interview for me to do just because of the sheer amount of things I wanted to talk about and ask him. We went for 2 and a half hours and I still felt I had so many more things that we could have covered. Yume wo katare is a dream workshop, a place where people can come and declare their dreams publicly while also eating a huge bowl of Yume ramen. In this episode, which is very different than other episodes of this podcast, Jake shares how his encounter with Yume wo Katare and its creator Tsuyoshi changed his life. Jake didn't just learn to make great ramen, he learned to become a better Jake through ramen. In Tsuyoshi, Jake found a father figure who was not only willing but also able to put him on a path to live up to his true potential and I think that's something we're all searching for in life. On today's episode I sit down with Professor Ken Alabala, A food historian from the University of the Pacific. Ken has written 25 books on the history of food, one of which was completely dedicated to noodle soups. Ken came onto my radar when I was doing research for my homemade katsuobushi project. Elivin in the discord server pointed me to Ken's blog and his appearance on Japanese TV where he flew to Japan to learn to make katsuobushi at a real factory there. I thought it might. be fun to get him on the show to talk about his own katsuobushi experiments and his 2 years of research on noodle soups and his experience in Japan filming a documentary-style TV show. Ken is not a ramen chef or nerd like many of us, but his takes on food and the industrialization of food were fascinating. In May of this year, Ernie was a sushi chef who had just begun selling ramen kits to supplement his income due to his hours being cut by Covid-19. Fast forward 5 months later, he is in the final stages of opening Modesto's first craft ramen shop. On today’s episode I sit down with Alex Ryutaro Aramaki who runs a shop in Vancouver British Columbia called gyopara. Alex is actually a 3rd generation ramen chef, with his grandfather actually operating a ramen shop in post war Japan in the 1950s which I thought was quite rare. After he helped open a few ramen franchises in the BC area, namely Jinya and Danbo, Alex brought back Gyopara which was his dad’s restaurant from the 90s with the intent of making food from scratch which if you listen to this podcast a lot you’ll know isn’t all that common with many ramen restaurants outside of Japan. Alex park, who also goes by @darth.gastrameny on Instagram, is a traditionally trained chef who has been the ramen scene for around 10 years. With 17 years working in professional kitchens, Alex has skills that many of us home ramen cooks are pretty far from developing on our own and it really reflects in the ramen he makes. We have a, truly incredible guest on the show today. I have no idea how this happened, but we have Nakamura-san, Shigetoshi Nakamura from Nakamura NYC on the show today. For those of you who are unfamiliar with Nakamura-san, he is widely considered to be one of the top ramen chefs in the United States. He opened his first shop at the age of 22 in Japan and became known as a rising star after being featured in ramen magazines. He then went on to help his brother create the menu at the mega-successful ramen chain Afuri. In this episode we talk about his history with ramen, his philosophy on what chefs should focus on when making ramen, the differences between making ramen in a restaurant and making ramen at home, and where he thinks and hopes ramen will go in the west. In today’s show, we sit down with the one and only Mark Noguchi who is lovingly known here in Hawaii as Chef Gooch. For people outside of Hawaii, which is probably most of you listening, Chef Gooch is the man here. He’s one of the faces of the local culinary scene and a true to life celebrity chef for all intents and purposes. At one point in his life Chef Gooch was operating 3 restaurants and a catering business here in Hawaii. He’s a graduate of CIA and has worked in some of the best restaurants in Hawaii. He’s also very well known for his love of saimin, Hawaii’s local version of ramen. So much so that he even has a local TV show about it called Saimin says which was broadcasted statewide on tv and on all Hawaiian Airlines flights. Ivan Orkin is someone who really needs no introduction to ramen fans. He's a legend. As a foreigner, he opened Ivan Ramen in Japan and quickly rose to stardom there. After years of operating his shops in Japan successfully, he returned to the US and opened Ivan Ramen in NYC to critical acclaim. He's been featured throughout the gamut of media in both Japan and the US and its surreal that he is also on this little podcast.
