Nando Chang was born in Chiclayo, Peru and is the chef of Itamae AO, a Nikkei restaurant in Miami, Florida. It is the reincarnation of Itamae, the beloved Nikkei restaurant that began as a family food hall stall and later restaurant in Miami's Design District. Nando's sister, Valerie Chang, who I interviewed on this podcast more than a year ago, opened Maty's, a Peruvian restaurant in Midtown Miami in 2023, and it has gone on to be nominated for pretty much every major media award for U.S. restaurants since then. The plan from the beginning, however, was to install a more intimate version of Itamae in an adjacent space.The new Itamae, Itamae AO, is tasting menu only. Nando talks about why he won't call it an omakase, his thoughts about fish butchery, and how he got into fish aging, but also how he understands its limitations. We also discuss Nando's rap career, which included an album called Ceviche, with a track titled Sushi Chef, and how it's still very much a part of his life. He talks about how he was influenced by other chefs cooking Nikkei food, such as Llama Inn and Llama San's Erik Ramirez in New York, and getting to know Maido's Mitsuharu Tsumura in Lima and how it helped him confirm many of his views about Nikkei food and where it is going.I have probably said this before but there's often this idea of Nikkei food when it gets exported abroad that it is just ceviche and sushi on a menu together. That's a very limited view of this style of cooking, which, to me, is much more about freedom than limitations. The Chang family, who are Chinese-Peruvian by the way, have understood this very well since they started opening restaurants in Miami. Nando talks a lot about not just doing what everyone else is doing, but doing things that make sense to him. We began our show with the booming restaurant chain, Kura Sushi with their Philadelphia store's Manager, Taylor Hopkins. Hopkins joined Kura Sushi when she wanted to transition from Sushi Chef to FOH (Front Of House) responsibilities, and found her perfect opportunity when Kura Sushi opened in Philadelphia's University City. The fast-paced environment was a challenge at first, but Hopkins soon learned the pace and moved up in her position there. But we're here for the love of food, so we further discussed how this energetic environment, coupled with tech-forward ordering systems, offers its rotating conveyor of plated sushi favorites right to your table! And there's even a sweet reward when you dine-in: For every 15 plates, you receive a reward (like stickers, a lanyard, etc.).We next spoke with owners Jessica and Justin Minchak, whose love of cooking led them to meet and eventually open Two Birds Cafe. Although Jessica's love for learning began in Anthropology and Writing, she was drawn to the art of cooking. Which is how they met--inside the kitchen while working for a local restaurant. Jessica's desire to continue learning drove her to attend the Academy of Culinary Arts, which is also where Justin graduated from, and the pair later opened Two Birds Cafe in West Chester, PA. Now, they have a strong focus of creating foods they love with locally-sourced ingredients, creating meals that are deliciously comforting to eat!Jessica's Cafe also offers comforting foods to eat, lending itself to authentic European cuisines. Ermelin "Armen" Saqe, who was born in Albania, emigrated to the US with his family. After many years, and numerous visits with his grandmother, he learned the arduous (yet loving) task of creating everything they consumed from scratch. This process instilled the importance of using fresh, quality ingredients in every dish that he creates. Although he uses as many locally-sourced ingredients as he can, some items (like 00 flour and San Marzano Tomatoes from Italy) need to be imported to obtain the highest quality products for his guests to enjoy. Hubert is a multifaceted chef who has worked here there and everywhere. Starting at an apprenticeship in Hamburg from 18-21, he formed a high standard and tempo, and a resilience from working in such an intense environment. Since then, he's worked everywhere from fine dining, casual dining, private cheffing at the Australian Grand Prix, working on pearl boats, lobster picking in Chatham Islands, private cheffing on yachts, becoming a professional spear fisherman and chartering spear fishing adventures in Indo, and adapting a new tranquil approach to his hospo career. His latest achievement was completing  sushi making education and mastering Japanese cuisine at the Sushi Chef Institute in California led by Chef Andy Matsuda.  All of these components have led into the creation of his brand and business: Sushybyhu. In this first part, Hu takes us through his history and backstory on how he was able to travel the world with practically nothing, and still find himself cheffing in some amazing places. Over the years, he became a deeply-skilled and sought-after omakase sushi chef, rising up in that world, and was just about to open his own place, when the pandemic hit. Literally overnight, he found himself without work, without a vision, without enough money to pay his rent and, to a certain extent, out of hope. But, he still had one thing, his artistic impulse, and it began calling him louder than ever. Not as a sushi chef, but as the visual artist that'd been inside him since childhood. The chain of events that unfolded over the next two years, frankly, is hard to explain in any rational sense. Our guest is J. Trent Harris who is the executive chef at the beautiful new sushi restaurant called Mujo in Atlanta, Georgia, which opened in February 2022. At Mujo there are only 15 seats at the counter made with cypress and he serves an omakase-style tasting menu that changes daily based on the catch of the day. Earlier in his career, chef Harris worked in classic western kitchens, including the Michelin-starred modern Portuguese restaurant Aldea in New York where he was the chef de cuisine. But somehow, he decided to choose sushi as his focus. At the time of this episode's release, Jesse Ito was the Co-owner and chef of Royal Izakaya and Royal Sushi, a 2-in-one restaurant combo in Queen Village. Jesse's claim to fame is his exclusive 10-seat omakase sushi bar, which is one of the very few restaurant experiences in Philly to get a 4-bell rating from the Inquirer. In 2017, Jesse was honored by Eater as a Young Guns Award Winner and made Zagat's 30 Under 30 list. In this episode you'll hear how Jesse got his start as a sushi chef working at Fuji, his father's restaurant in south Jersey. When he was 24, Jesse and his family would sell Fuji and go all-in on bringing the omakase and izakaya experience to Philly. That bet would pay off, as 3 years later they've received the covered Philly Inquirer restaurant rating of 4 bells.

Now, after more than two decades in the industry, he has developed a much deeper appreciation for Japanese cutlery. Jesse Ito is the Co-owner and chef of Royal Izakaya and Royal Sushi, a 2-in-one restaurant combo in Queen Village. Jesse’s claim to fame is his exclusive 10-seat omakase sushi bar, which is one of the very few restaurant experiences in Philly to get a 4-bell rating from the Inquirer. In 2017, Jesse was honored by Eater as a Young Guns Award Winner and made Zagat's 30 Under 30 list. In this episode you’ll hear how Jesse got his start as a sushi chef working at Fuji, his father’s restaurant in south Jersey. This week on Japan Eats, host Akiko Katayama is joined by Keizo Seki, owner and founder of Sushi Zo. Keizo Seki was born in Osaka, Japan. His lifelong desire to become a sushi chef, led him to Tokyo, where he gained valuable experience and knowledge of sushi. In 1991, he moved to Los Angeles, where he learned the business of the restaurant industry and honed his sushi skills. His dream to open a true Edomae style sushi restaurant, came to fruition in March of 2006, with the opening of the first Sushi Zo Restaurant in West Los Angeles. Within three short years, he was awarded a prestigious Michelin Star.
