Documentary film director Laura Gabbert has made critically acclaimed films that deploy humor and emotion to tell penetrating, character-driven stories about American culture and society. Among her documentaries, Food and Country, premiered at the 2023 Sundance Film Festival and was released theatrically in October 2024. Laura's film, Ottolenghi and the Cakes of Versailles, explores chef Yotam Ottolenghi's collaboration with the Metropolitan Museum of Art. She also directed City of Gold, which is about Pulitzer Prize winning food writer, Jonathan Gold. Any urban street in America is guaranteed to be lined with popular fast food chains, the readily available nature of their products being the main attraction, with people barely giving a thought to the process behind getting the food from the farm to the table — or more likely, the take-out box. Joining host Robert Scheer on this week’s Scheer Intelligence are two people who dedicated their recent film, “Food and Country,” to understanding this process behind food in the United States and how big business, as usual, has almost complete control of the system. Renowned former food critic for the La Times and New York Times, former editor of Gourmet magazine, author of cookbooks and memoirs and PBS food guru, Ruth Reichl and film director Laura Gabbert discuss some of the key takeaways from the film. Gabbert asserts that big agriculture’s firm grasp on the industry is where the problems begin. Its lobby is amongst the biggest and Gabbert explains that there is no incentive to try and remedy the problems that come from this monopolization of an industry so essential to human survival. “I think that is really the crux of the whole problem, is money in politics,” Gabbert says. Reichl takes it back to what happened after World War II and how the U.S. government made an attempt to fight communism by cheapening the food making process, which turned farms into factories. “Almost everything that's wrong with America comes from that policy. We've destroyed our health, our environment, our communities,” Reichl tells Scheer. The heart of their story lies with the farmers themselves, and how, despite being in charge of the most important aspect of human survival, they still tend to struggle the most in society. Reichl explains their significance in the film, stating, “I just wanted for us to be able to listen to their stories that they tell themselves about what has happened to them and what the American system has done to them.” Check out the film’s website here for screening information.

Laura Gabbert found purpose during the Covid 19 pandemic creating her documentary Food and Country. In collaboration with renowned food writer and critic Ruth Reichl, Gabbert created a film that depicts the early days of the pandemic as told through people on the front lines of local food. From farmers and ranchers in rural America, to fine dining restaurateurs in urban settings, to small minority-owned businesses that are the epicenters of their communities, everyone had to forge a new path to survive. Gabbert even spent time in Ohio with Lee and Bob Jones of The Chef's Garden in Milan, Ohio (about an hour west of Cleveland). The film shares many emotional, personal stories and interviews delivered via Zoom, and beautiful, inspiring visuals from across America that depict the resilience, ingenuity and hope of food producers. While the pandemic is in the rear view mirror for most of us, it will take you back to that time and remind you just how far we've come since. The documentary Food and Country, which premiered at the 2023 Sundance film festival, takes a close look at the broken food system in the United States through the lens of the COVID pandemic, as restaurants closed and both workers and farmers struggled. Both director Laura Gabbert and producer/chef/food writer Ruth Reichl grew concerned about their friends and colleagues in the restaurant business during the shutdown. Laura wanted to do a short piece about how restaurants and workers were being affected, so she connected with Ruth through a mutual friend. Ruth began checking in over Zoom with people she knew, originally just as research. Ruth followed her own curiosity as she spoke with dozens of people across the country. As a seasoned chef and food writer, Ruth is good at getting people to open up, and people felt safe talking to her. The shutdown also made people feel very isolated and vulnerable, so over time, they were able to record incredibly intimate conversations. Laura began to see a more comprehensive documentary taking shape: the pandemic was only exacerbating the problems that already exist in the American food system. They began widening the scope of the film, and when it was safe to travel again, Laura and cinematographer Martina Radwan went out to shoot and interview farmers, ranchers and restaurant owners in the field. The documentary team had to watch hundreds of hours of Zoom video, which also informed what they would shoot as they traveled across the country. Cinematographer Martina Radwan kept everything naturally lit, and they shot most of the interviews outside due to the pandemic. She chose to use mainly wide shots and close ups, shooting open vistas and landscapes of the farms. It helped create more energy in the film and alleviated the monotony of the closeups from the Zoom videos. She shot with Canon cameras and lenses, because she liked how the camera renders contrast and color especially for exteriors. Martina enjoyed learning about the food system and getting a behind the scenes look at where our food comes from. As someone who has been writing and thinking about food for fifty years, Ruth thought the pandemic would finally be the turning point in the American food system. If farmers and restaurants were going to fail, people would finally realize, as they were forced to stay home and cook, how important food is to everyone. She hopes that people are awakened to the fact that we need to raise enough food to feed ourselves in this country, without relying on huge international agribusiness. The pandemic did change some things about the food system, and certainly raised awareness about working conditions and pay for restaurant workers, ranchers and farmers.
