Ludo Lefebvre is a chef, restaurateur, author, TV personality and twin dad. He is one of the most influential chefs in Los Angeles who is credited with starting the pop-up restaurant phenomenon. You may have eaten in one of his award-winning restaurants such as Petit Trois or seen him on one of the many TV shows he's hosted. In this episode we discuss his childhood in Burgundy, France as a young culinary apprentice and how he eventually made his way to Los Angeles in the 90's. Eddie Lin, the blogger behind Deep End Dining, risked his stomach on raw chicken and lived to tell about it on Evan Kleiman's Good Food. He began his well-known food blog Deep End Dining around fall 2004. Almost immediately it began to receive critical attention as one of his entries was selected to be in the 2005 food anthology Best Food Writing. Eddie is the author of Lonely Planet's Extreme Cuisine, a guidebook about exotic foods around the globe. His extreme food exploits and essays have been covered by NPR, PBS, the Los Angeles Times, OC Weekly, BlackBook Magazine, Food & Wine, the Daily Telegraph, the Guardian, USA Today, and others. Eddie was an on-air contributor and segment producer for KCRW's long-running Good Food and has appeared on Visiting with Huell Howser, Bizarre Foods with Andrew Zimmern, Freakiest Foods, Eat St., KABC Eyewitness News's The Man Who Eats Everything, and CSI: NY. Eddie Lin was a guest judge on Top Chef Masters, among other popular tv food competition shows, such as MasterChef. Eddie's ideal job as a tasting judge kept him busy traveling the country to vet hopeful cooking contestants for shows like The Taste with Anthony Bourdain, Nigella Lawson, Chef Ludo Lefebvre, and Chef Marcus Samuelsson. He also appeared on Knife Fight in 2013 alongside Top Chef Ilan Hall. His long ago attempted YouTube series, Kamikaze Kitchen, featured unsuspecting chefs who are ambushed at their restaurants with a "mystery ingredient" and usually it's something you would not find on the menu, like alligator. Eddie is currently a contributor to LA Taco and LA Times, covering restaurants and interesting food stories around the city. As is common with a lot of small businesses, Gabe Kennedy and his co-founder Hudson Gaines-Ross launched Plant People with a few thousand dollars in their pockets. With unique individual backgrounds and a shared interest in holistic healing after both endured serious injuries, they decided to create Plant People. For Gabe, using natural, holistic methods to heal after his spine injury was a no-brainer. But throughout his long road to recovery, he realized just how unique his story was. San Diego joined the world's dining elite Monday, when the city's first Michelin star was awarded to the luxurious Carmel Valley restaurant Addison. At a ceremony for the inaugural Michelin Guide California in Huntington Beach, which was attended by a who's who of the state's top chefs and restaurateurs, Addison executive chef and San Diego native William Bradley accepted the illustrious award for the 13-year-old bastion of fine dining at the Fairmont Grand Del Mar. “We're just so happy and so honored to be part of such a prestigious guide representing San Diego and Addison. It's just amazing,” Bradley said after the awards were given out. “It was surreal. To be standing on that stage with that backdrop and with all those amazing chefs. It's a dream.” Among the celebrated chefs in attendance were José Andrés, Michael Cimarusti, Michael Mina, Niki Nakayama, and Ludo Lefebvre. A total of 90 California restaurants were awarded stars at Monday's reveal event, 69 with one star (for “High quality cooking, worth a stop”), 14 with two stars (“Excellent cuisine, worth a detour”) and seven with three stars (“Exceptional cuisine, worth a special journey”). Among the three-star recipients, all were repeat winners; no new three-star designations were given. The feast is in the first bite. I came across this phrase recently listening to a science program on the radio about how human taste buds function. It was scientifically explained that in fact with each subsequent bite of food, there is a diminishing sensory enjoyment insofar as the taste explosion in your mouth. Jon and Vinny met in culinary school 15 years ago, where they share they first thought about opening a restaurant together. With his new book being released next week, Ludo Bites: Recipes and Stories from the Pop-Up Restaurants of Ludo Lefebvre, we were able to visit with him, and eat some favorite dishes from his many pop-ups at a recent event at Quiksilver in Fashion Island, Newport Beach. We also were given a chance to screen a new short film that Ludo appeared in for Quiksilver titled "Chef and The Sea" which was filmed several months ago when Ludo and Krissy hosted their pop-up in the Big Island of Hawaii.
