People love to talk about food, read about food, and -- we hope -- listen to podcasts about food too! In this episode, reporter Ray Dubicki and I kick things off with his article on whether or not Seattle has become a $20 lunch town, dissect the causes and possible ramifications of that trend, and then spin further out to tackle other culinary inspired topics. From the risk to reward ratio of poké, to how the pandemic has reshaped when and how we eat, in taping this podcast we found there is so much to discuss and think about food in Seattle -- and other cities too.As always, you can find The Urbanist podcast on ITunes, Spotify, and other major platforms. Seattle's El Gaucho Steakhouse is a long time upscale dining staple, or as they call it " fine dining of a bygone era". The tuxedoed staff, the table side flambé'd desserts, the dimly lit intimate seating, and the soft trickle of the piano keys set the stage for a luxurious dining experience that feels like you were transported right back into the nostalgically swanky rat pack era. Theirs is a place for fancy celebration or to make an moment worthy of an occasion. Such longevity of service and attention to detail has garnered them a high platform to speak to the art of hospitality and what truly matters most in it; the people. From their family-like employee atmosphere to the level of attention they put into each guest experience, people are at the root of everything they do. The art of hospitality is as important while dining for happy hour, an elegant milestone meal, or receiving a to-go box at home. Listen to Anna Lee, El Gaucho Seattle's event director, speak to the core of hospitality for them and the challenging pivots made during a pandemic while launching the open of a moved restaurant location. Hear the trials and survival that so many restaurants face(d) and the challenges to meet expectations for their guests.El Gaucho has been a special part of my personal story for the last 10 years. An unusual symbol of celebrating life. You'll hear some excerpts of a toast I gave during a celebration of a 10 year milestone, calling us to live life now-don't wait to celebrate occasions. I encourage people to say the things that matter, notice the character traits that carry weight and share what we admire. Dirty Linen chatted to outspoken Seattle chef Eric Rivera way back in episode 10. With the US reopening, It's time to check back and see what's happening at Eric's indie restaurant. Addo is open to small numbers of vaccinated diners, the menu changes daily and Eric is enjoying feeding customers in person. But he's also fighting hard - and frustratedly - against injustice, inequality and virtue-signalling.https://www.ericriveracooks.comFollow Dirty Linen on Instagramhttps://www.instagram.com/deepintheweedspodcast/?hl=enFollow Danihttps://www.instagram.com/danivalentFollow Deep In The Weeds on Instagramhttps://www.instagram.com/deepintheweedspodcast/?hl=enFollow Rob Locke (Executive Producer)https://www.instagram.com/foodwinedine/Follow Huck (Executive Producer)https://www.instagram.com/huckstergram/

On the 133rd episode of the Seattle Foodie Podcast, we're going mano a mano to see which Seattle entree/food comes out on top. It's only fitting since it's March Madness that we selected 8 of our favorite Seattle foods and pitted them against each other in a bracket style tournament to see who comes out as the champion. Will a Cinderella entree make it to the finals? Will a ramen in Capitol Hill knock off one of Seattle's most iconic sandwiches in Round 1? Will a popular Chicken Wing spot steamroll the whole competition? Tune in and listen to all the match ups and upsets and find out who comes out victorious in the Tournament of Champions. In addition, Monica and Nelson eat through the Greater Seattle area this week in their "What are we eating?" section. Nelson visited Cinnaholic up in Capitol Hill for Cinnamon Rolls and more, received a delivery from Jennie's Goodies, stopped by Sip and Smile for the @bambamlambchops Bamdan, revisited Famous Kitchen BBQ, had happy hour at Joey's in Bellevue, and ate burritos at La Chingona Taqueria, El Maestro del Taco, and Carnitas Michoacan. Meanwhile, Monica received new products from Moon Cheese, grabbed cheesesteaks from Tres House of Cheesesteaks, made Cold Brew from Java Trading Co., had a family celebration and picked up takeout from HK Dim Sum, and sampled a Biscoff Cake from local Snohomish baker, Kari Hardy. Thank you so much for listening and we hope you enjoy the latest episode of the Seattle Foodie Podcast!

Angela has made lemonade out of lemons with regards to dealing with this pandemic. As you might recall from episode #45, Angela is the Founder and CEO of Savor Seattle Food Tours. When things started to shut down in Seattle at the beginning of the pandemic, I watched as Angela made really quick changes, pivots as everyone says these days. She created a new path for her company that fits right in with the company’s mission while also supporting local businesses, providing a service to locals and keeping her business alive. I’ve been keeping up with what she’s doing and have been so impressed with how she’s managed to go with the flow and I wanted to bring her back on the podcast to chat. I was most interested in how she knew so early that she needed to make changes and I wanted to find out how she went about making them. This is a shorter, check-in episode that I’m doing today. Lemme know if you like this format and if there’s any past guests that you’d like to hear from and I can reach out to them to bring them back! Just email me at beth@shesboldpodcast.com. OK – with that, please enjoy this conversation with the ever-inspiring, Angela Shen. ***** Have a burning question and want to be featured on a future episode? Eric Rivera owns Addo in Seattle, USA. He's a Puerto Rican in a white city, an ex-finance guy who lost everything and ended up training as a chef. He went on to cook at progressive restaurants including game-changing Alinea and applied his sharp analytical brain to the business and the creative possibilities of restaurants. Through the pandemic, the US mess and Black Lives Matter he's created new dining concepts weekly - and they're kind of crazy. He's the perfect person to round off our week of 'rethinking restaurants'.

Ladies! Please join our Be Bold Facebook Group! "I realized why I was put on this earth is to be a spark for other people. To be that visionary, to drive with my passion and to bring other people along with me." - Angela Shen This week’s guest is Angela Shen. Angela is the Founder and CEO of Savor Seattle Food Tours. Our paths crossed many years ago when we used to get together for these semi-regular brainstorming sessions with a half dozen or so CEOs of local tour companies. We would get together at a coffee shop or over breakfast every couple of months and talk through challenges that we might be having with our business and others would have input. I was always in awe of how focused and directed Angela was (and she still is) in terms of her business. And after getting to know her much better through this conversation, I can see why she is so impressive. She has an academic background that’s played a part in her success but she’s also really creative and, perhaps more importantly, she’s got this passion for what she does and her life goal is to inspire others. During our Seattle Culinary Tours, we take this fantastic walk through Pike Place Market with one of her guides from Savor Seattle. And these guides are always just so much fun and super knowledgeable. I now get that they are either infused with Angela energy or she has just the right radar to find people who are equally as passionate about food that she is. In this conversation, you’ll hear about Angela’s background growing in up a tiny town in Minnesota with her entrepreneurial immigrant parents. She knew that being an entrepreneur was her path but she didn’t just dive right in. She was smart about it and figured out a way to gain as much knowledge as possible about business and branding before moving to Seattle and starting her own business. But as she was growing this business, all while being a wife and mom to two kids, she had a health issue that pushed her over the edge and forced her to take a really honest look at her business and she started to question what it was that made her happy. Basically she realized that working 80 hours a week was not sustainable. She took a good look at her life and then made some decisions (which includes solo travel) about what it was going to take to be happy. Ultimately she feels like 99% of people are going to look at some of those decisions and judge her for making them. In other words, they are quite unpopular for a mom with two kids. What it comes down to is that she’s going against numerous stereotypes including what it means to be a woman (and a Chinese woman at that) and also a mother of two. I really admire Angela for having the strength to make these decisions in order to be her best self. Because if she’s not showing up to be the best Angela that she can be, she’s doing a disservice to everyone—family, friends and colleagues. You’re gonna really like this conversation. On today's THE FOOD SEEN, Scott Heimendinger, aka The Seattle Food Geek, brings the schools of science and cooking together via Modernist Cuisine at Home, a cookbook that will change the way you think about food. For Scott, a scientific background (IBM, Microsoft) combined with the chance encounter of a slow-poached sous-vide egg at Maria Hines' Tilth restaurant, emulsified his past skill set with kitchen intrigue, guiding him to his latest job as, Director of Applied Research for Modernist Cuisine at The Cooking Lab. From the must have countertop tools and conventional cooking gear, to stocking up on a “Modernist” pantry, this episode will give you all the insight into the wonders of Wondra flour, how to fry the best chicken wings, making the meltiest cheese with sodium citrate, and will still have you craving for more of the over 400 recipes! This episode has been sponsored by Fairway Market. “It can't be right because somebody said so or because that's how its' always been don.e The numbers need to add up and the equation needs to be balanced. Being a scientist of any kind can make you more rigorous as a cook.” [10:00] “It turns out that teaspoons and tablespoons are not very precise!” [24:00] “There's no reason to think informal food deserves any less treatment than formal foods. We have an entire chapter on chicken wings in Modernist Cuisine at Home.” [34:00] — Scott Heimendinger on THE FOOD SEEN
