Most businesses start with an idea before getting the right resources to make a product. With Beekman 1802, it was the other way around. Founders Josh Kilmer-Purcell and Brent Ridge had bought a farm together in upstate New York in 2006. Once they lost their New York City jobs in the recession that followed, they had their mortgage to pay and a bevy of goats (owned by a friendly neighbor of theirs, grazing on their land). "We Googled 'What can we make with goat milk?'" Ridge said on this week's episode of the Glossy Beauty Podcast. The first thing that came up, unsurprisingly, was cheese. "But you have to become a Grade A certified dairy, and there's a lot of expenses with that. The next thing on the list was goat milk soap." Ten years later, their beauty business is a successful one -- it accounts for 90% of company sales. This is in no small part thanks to the couple's skill at marketing it on air at QVC and HSN (by way of Evine, now ShopHQ), Facebook Live and YouTube. "I always say TV retail is like door-to-door sales except you are knocking on 120 million doors at once," Kilmer-Purcell said. Ridge added, "That's what unlocked the potential of the brand. Otherwise we'd have just kept growing very slowly, very organically." The two joined the Glossy Beauty Podcast to talk about starting the business with "less than zero" dollars, cold calling department stores and their interest in investment considering the very ripe beauty M&A scene.

This week, cookbook authors Brent Ridge and Josh Kilmer-Purcell, known as the reality television duo “The Fabulous Beekman Boys,” charmingly flaunted two long-standing tenants of Last Chance Foods: Don’t sound like "Delicious Dish," and don’t antagonize the farmers. “If people haven’t had a sweet pea before, freshly picked, then they haven’t experienced the true power of the pea,” said Kilmer-Purcell, who admitted after the taping that Last Chance Foods’ listeners could have heard a double entendre in that statement.  Ridge quickly followed up with this controversial statement: “A frozen pea is often better than a farmers market pea,” he said. Ridge went on to explain that various studies have report that between 20 percent and 80 percent of the sugar in peas and sweetcorn convert to starch within 24 hours. That’s why blanching them right after being picked and freezing them is the best way to preserve freshness. (It’s necessary to blanch the peas in order to kill an enzyme that would continue to break down the vegetable.) “A pea that’s picked and frozen right away is going to be infinitely better than fresh pea that’s sat around for a day before shelling,” explained Ridge. “Farmers are not going to like me for that, but it’s true.” Of course, the caveat is that a fresh pea picked from a kitchen garden and eaten immediately is best of all. That may not be possible at all this year, said Ridge and Kilmer-Purcell, authors of The Beekman 1802 Heirloom Vegetable Cookbook. They grow vegetables at their farm in Sharon Spring, N.Y., and said that everything has come in late this season, given the cool temperatures. (Photo: Brent Ridge and Josh Kilmer-Purcell/Alec Hemer) “The real danger with peas is that they have such a short growing window,” said Kilmer-Purcell. “Because once the... daytime average temperatures get above 70 degrees, they stop growing. They’re done. They stop producing. So if they don’t start growing soon and start flowering, we may not get any.” Even if their pea plants fail to yield any sweet little green gems this season, the leaves will be edible, and the plants will help enrich the soil. “Peas, like beans, they are nitrogen fixers, so they pull nitrogen from the air,” said Kilmer-Purcell. “They have a beneficial bacteria in their roots that grow nitrogen nodules in them.” That means pea plants serve as good companion plants for nitrogen-needing greens like spinach. “If you ever do grow peas, don’t pull them out at the end of the season,” he added. “Just cut them off and leave the roots in the ground, because that’s where all the nitrogen is.” An important part of the garden, peas weren’t always appreciated in their fresh form. They were traditionally dried and used throughout the winter. “In fact fresh peas were kind of a fad in the time of Louis XIV,” Kilmer-Purcell said. “Nobody had eaten fresh peas before that. There’s a famous French diary where [it was written that] women would go home from these huge feasts, and — at the risk of great indigestion — they would eat peas before bedtime.” Shocking! Below is a recipe for spring pea soup, which is a great way to enjoy fresh peas without risking indigestion. Spring Pea Soup From The Beekman 1802 Heirloom Vegetable Cookbook by Brent Ridge and Josh Kilmer-Purcell (Photo: Sugar snap peas at Beekman 1802/Paulette Tavormina) There's still a little chill in the air when the first peas are ready for picking. This soup is perfect in the spring when young lettuces are around. SERVES 4 2 tablespoons unsalted butter 2 leeks, thinly sliced and well washed 6 cups tender green lettuce leaves, well washed and dried 1/3 cup fresh mint leaves 2 cups shelled fresh green peas (see Tidbit) 3/4 teaspoon coarse (kosher) salt 1/2 teaspoon freshly ground black pepper 2 cups chicken or vegetable broth 1/3 cup heavy cream 2 teaspoons fresh lemon juice In a large saucepan, melt the butter over medium-low heat. Add the leeks and cook, stirring occasionally, for 10 minutes, or until tender. Add the lettuce and mint and cook for 5 minutes, stirring occasionally, until the lettuce is very tender. Stir in the peas, salt, and pepper and stir to combine. Add the broth and bring to a boil. Reduce to a simmer, cover, and cook for 5 minutes, or until the peas are tender and the flavors have blended. Working in 2 batches, transfer the soup to a blender and puree until smooth. Add the cream and lemon juice and blend. Serve hot. TIDBIT: To get 2 cups of shelled peas, you'll need to start with about 2 pounds of peas in the pod, so feel free to use frozen peas here (we'll never tell). In the 1920s, New Yorkers grew 2,700 acres of gooseberries. These days, they are a fairly rare sight, even at farmers markets. In part, that’s because growing gooseberries used to be illegal in New York State. The law was enacted in the early 1900s to prevent the spread of white pine blister rust. The federal version of the law was rescinded in 1966, and New York eventually followed suit in 2003. Dr. Brent Ridge and Josh Kilmer-Purcell of the Cooking Channel show “The Fabulous Beekman Boys” are on a mission to help gooseberries make a comeback. “I think gradually it’s catching on,” said Ridge. “We’re going to make gooseberry cronuts or something. It needs a trend, and we’re going to start it.” Ridge and Kilmer-Purcell grow gooseberries on their farm, Beekman 1802, in Sharon Springs, N.Y. “They’re like a tart green grape crossed with a plum,” said Ridge. “When they’re ripe off the vine, they’re edible raw but, most times, they’re cooked.” Gooseberries are just becoming ripe in upstate New York right now. The plants yield fruit for about two weeks, and the berries soften as they ripen on the bush. While gooseberries may seem like a relatively obscure fruit these days, Kilmer-Purcell explained how that wasn’t always the case. “Gooseberries became very, very popular in the 19th century, so much so they were almost a food fad,” he said. “And they spawned gooseberry clubs in England, and there were actually a couple in America.” (Photo: Brent Ridge and Josh Kilmer-Purcell/Tate Tullier) Gardeners would compete to see who could grow the largest gooseberry. The fruit, normally the size of a grape or smaller, could grow to the size of a small plum. Judges would use individual grains of sand portioned out with a feature to get exact measurements of the entries. “In the middle of this craze, England began trading their gooseberries with America and America began trading them back,” said Kilmer-Purcell. “And then... all heck broke loose. We got the blister rust; they got a mildew from our gooseberries.” That signalled the end of the fruit’s popularity but, now, gooseberries are back. Ridge said that they’re are often used in baked goods like gooseberry pies because sugar offsets the fruit’s tartness. Kilmer-Purcell put a modern spin on a classic English dessert with his recipe for goat cheese gooseberry fool. (The recipe is below.) “A fool is actually one of the oldest desserts on record,” he said, adding that it dates back to the Elizabethan era. “It’s basically a whipped cream that is made with stewed fruit... That sweetness of the fruit with the tangy sourness of the goat cheese and whipped cream is really delicious together.” Beekman 1802 Goat Cheese Gooseberry Fool  2 pints fresh or frozen gooseberries 1/2 C honey 1 C soft, fresh goat cheese 3 C heavy whipping cream  In a heavy skillet, heat the gooseberries and 1/4C of the honey over medium heat until the berries have burst and softened. (Approx 4 minutes.) Either mash mixture with fork, or puree. Let cool, and chill in refrigerator. In stand mixer bowl, beat goat cheese with remaining 1/4C honey on medium speed until whipped and softened. Spoon mixture into separate medium mixing bowl. Pour heavy cream to the empty stand mixer bowl, and whip until barely thickened. (Don’t whip until stiff, as one would traditional whipped cream.) Gently fold the whipped cream into the goat cheese honey mixture, and allow to chill thoroughly. To serve, spoon gooseberry mixture into decorative stemmed glasses until about 1/3 full. Top with cream, honey and goat cheese mixture. Garnish with raw gooseberry, or its cousin — red or black currants.

Merde!  Without notice or warning this episode went to shit however with hysterical results!  The boys are in rare form this week and perhaps have shared way too much.  Marc is gearing up for Shakespeare in the Park or as Joey and Matt call it, the show that Marc does everyday in the blazing sun in a 3 piece suit.  The boys have an Oprah's Book Club moment and discuss Josh Kilmer-Purcell's newest memoir, The Bucolic Plague  and the anticipated premier of The Fabulous Beekman Boys.  The Tony Awards hosted by hottie Sean Hayes in a Spider Man costume are discussed and without fail this results in the usual Broadway argument.  Well, it doesn't help that Ricky Martin and T.R.
