The Canadian Celiac Association successfully presented two virtual conferences in 2020 and is now gearing up for the 2021 Conference. I speak with Nicole Byrom RD from the CCA who is organizing the conference. This conference will be somewhat different from all other CCA conferences in the past, in that of the two days, November 13th and 14th, the first day will be geared towards those who have been diagnosed for two years or less. The second day will focus on information for those who have been diagnosed longer than two years. Certainly, anyone is welcome to join either day, but I find it intriguing that this distinction was made. Some good news on this podcast from Julie Greene of the CCA and Marina Michaelides of Kinnikinnick. Kinnikinnick has partnered with the Canadian Celiac Association in celebration of their 30th birthday. Partnering with the CCA means helping them with ongoing special projects. As the pandemic has progressed, organizations have become more creative in adapting their annual events to still continue, but in a different format. That is certainly the case with the Scotiabank Run being held in Toronto. The CCA is heading up Team Celiac and inviting anyone across the country to Step Up for Team Celiac and participate in whatever way they can – choose a suitable distance, walk and run, challenge yourself with more than one distance, or run during the in-person event in Toronto. Other cities host Scotiabank Runs and some of our celiac groups are very involved in the events in their own locations, but if you can't participate locally, or the Toronto run is your local run, head to the CCA website to sign up to Step Up for Team Celiac. Julie and I also discussed the upcoming virtual CCA conference, which has a different format this year. The first day is for the yet to be, or recently, diagnosed with the second day being for the those of us who have been diagnosed more than a couple of years. The CCA is also asking for our help in formulating their proposal for labelling of some foods, including supplements that do not currently fall under the labelling regulations for food. I spoke with Lisa Rigney on Episode 180 of the podcast about what happens when a child gets diagnosed. Realizing it actually becomes a diagnosis for the entire family, I asked Lisa back to talk about some of the resources she found and used after her daughter was diagnosed. On this episode I speak with food blogger and recipe developer Cinde Little, also known as The Everyday Gluten Free Gourmet. Over the past year, Cinde has pivoted her in-person baking and cooking classed to online classes, and this is where I spent an enjoyable evening this past week. This may not seem like a big deal, but Cinde has worked to achieve a high quality of audio, video, timing and student experience. On this episode I speak with Lisa Rigney of the Edmonton Chapter of the Canadian Celiac Association about her family's experience of having a child diagnosed with celiac disease. Lisa takes us through what happened, and more importantly, how the family coped. We all understand a serious diagnosis is overwhelming, but I think by sharing our experiences, it lets us all realize that we can only do our best in trying times. Lisa explains some of the situations she wasn't prepared for, as well as the discussions she had with other family members, friends and the school. At the end of our conversation, we agreed to meet up again soon to talk about the support systems available to families of the newly diagnosed, and expectations as the child gets older. On this episode I speak with Ellen Bayens of theceliacscene.com to discuss the many topics and articles she brought to our attention over the past month. To begin the conversation, I invited Tamir Barzilai from the company honeycomb.ai. Tamir's company is developing an app which will allow you to set a profile with your dietary restrictions, and give you specific meal suggestions at restaurants to meet your needs. The app will be released in late summer or early fall, and will charge for use on a monthly basis. This week I talk with Carla about working out. We both reminisce about when we were younger and able to work out without very soon injuring ourselves. We've learned that celiac disease was often the culprit behind our bone/muscle weakness. Nevertheless, as we get older, we can't exercise with our bodies, as well as we can imagine in our minds, and even though we are eating better and healthier, we (or at least Carla and I) are still prone to injury. We each try and formulate a plan for going forward, so at least we see a way, and hopefully have the will. Carla has discovered Brazillian cheese bread, and she can actually fit in her down days with intermittent fasting. A Conversation with Desiree Nielsen and Ellen Bayens A plant-based diet has many formats and can go by many names including vegetarian and vegan. On this episode I speak with Ellen Bayens about her recent pivot from gluten free to a plant-based gluten free diet. There are many things that those of us on a gluten free diet must learn quickly once we receive our diagnosis. For many of us the most challenging is how to prepare and safely eat a gluten free diet, while living in a household that eats gluten. Carla and I discuss this common situation. We offer different suggestions for day-to-day coping and highlight the idea that every family situation is different. What might work for you and your family may not be workable for another. The strictness of the diet is something we all have in common, as well as the frustration of educating our family members. Both Carla and I agree that over time, as a family you will settle into routines that are work-able for your situation – family members begin to understand and accept, children get older and have a greater understanding, and the celiac family member gets better, which makes it all worthwhile. On this episode I speak with Jon Murthy, Head of Global Marketing for BRCGS. This is the organization that certifies foods for the CCA gluten free logo, as part of their many certification programs. Originally, this operation was performed by a relatively small, but knowledgeable group in Canada, but moving this important function to a multi-national, multi-discipline certification body, brings an entirely new perspective to gluten free food safety. Jon discusses the process a company must go through to achieve certification, as well as the complexities of companies producing and exporting ingredients and prepared foods to maintain their certification status. It's the beginning of June and that means another informative conversation with Ellen Bayens of theceliacscene.com. This past month Ellen has brought us a great deal of information. We start out with a couple of studies, the first into attitudes among celiacs towards dating. There is much hesitation, social anxiety and a tendency towards risky behaviour (gluten-wise). Although Ellen and I are not in the target age group for this study, we can relate to many of the hesitancies from our own lives that are amplified in the dating scene. The second study is an eye-opening look at the awareness of celiac disease in the dental profession. Dr. Melissa Ing, whom I have interviewed for this podcast, surveyed a group of dental professionals before a celiac information session and then again after. She was able to teach them a great deal in a short time regarding questions to be asked when certain symptoms are identified. Ellen has once again brought us new resources, we didn't even know we needed. Sick Kids Hospital in Toronto has come out with new teaching modules about celiac disease and the gluten free diet. These modules are interactive and suitable for young children to do with parents, or for older kids to do on their own. The information is set out in an easy to use format that would be useful to educate other family members and friends. Ellen shows us a novel way to use the restaurant translation cards from celiactravel.com. On a different level Honeycomb.ai brings us an artificial intelligence solution to finding just the right meal at just the right restaurant to meet your specialty diet needs. Ellen introduces us to Desiree Neilsen RD, who has started a new podcast called The Allsorts Podcast, in which she gets down to earth with practical diet knowledge that will help us all make better food choices. She is a proponent of a plant based diet, and that suits Ellen just fine. Two related topics are discussed – the 10 biggest challenges faced by the gluten free community, and how to order a gluten free meal at a restaurant. There's lots of overlap here. Finally Ellen tells us about a study that is being done for US patients on atopic dermatitis, and you can get paid to participate. So much news, I think this is my longest interview episode yet. On this episode I catch up with Melissa Secord, Executive Director of the Canadian Celiac Association. Melissa, along with her small staff is handling the promotion of May, Celiac Awareness Month from a big picture, national perspective. We chat about some of the initiatives that are being done to “Shine a Light” on celiac disease, by having iconic buildings and structures across the country lit up green during this month. A Conversation with Lukas Hahn This episode started from a discussion with Ellen Bayens of theceliacscene.com for the April roundup episode 166 when she told me the story of a student from abroad, studying in Victoria in a homestay program, who was having difficulty as she required a gluten free diet. Ellen assisted in solving the problem, but it brought so many other questions to my mind about homestay and a special diet. A Conversation with Dr. Melissa Ing, Djenane Lemaire and Miranda Boynton Every once in a while, I hear from one of my previous guests on the podcast that they've done something that might be of interest to my listeners. This was the case when Dr. Melissa Ing, who I spoke with on Episode 106 “Celiac Disease and Dental Education”, contacted me recently about research and a poster project a couple of her students had done. On this episode, I speak with Dr. Ing, and two of her students Djenane Lemaire and Miranda Boynton about testing they did on common materials used in dental offices to determine if they contained gluten. The testing included soaps and hand lotions, as well as materials that went directly into a patient's mouth. The poster was very well received, being awarded second place in a large competition and being chosen for presentation at a major dental conference. We talk about how dentistry can be a first line to diagnosis and how rewarding it was for the students to have their research project about gluten exposure in the dental office so widely received. This week is a delightful and very informative conversation with Mike Rose. Both Mike and his wife Shirley require a gluten free diet. They were considering leaving their home to move to a retirement residence when Mike got to work researching and investigating the options available to them. Mike was a tireless worker for the Canadian Celiac Association for many years and he brought all that knowledge to help him find just the right residence that would be able to provide a good healthy variety of gluten free options to the couple's meals. On this episode I speak with Tabitha who has an Instagram page called Gluten_Free_Canada. The page caught my attention because it only had gluten free grocery store foods. I reached out to Tabitha and was curious to see why she started the page, and what her best food finds were. Tabitha has been diagnosed celiac for more than ten years and enjoys both grocery shopping and reading labels. She makes sure to only feature foods she enjoys. Reading labels is a skill that must be acquired over time and is particularly difficult for the newly diagnosed. Tabitha features some foods on her page, which I didn't realize were gluten free. I suppose we all get into a routine with our food choices and often don't take the time to look for new options. Tabitha is now doing that for me. Let's start the blog with the show notes for this Episode – On this episode I speak with my daughter Deanna regarding a curious question she posed to me recently about some newly launched seltzer drinks appearing in the beer stores here in Ontario. These drinks contain barley malt, so off limits to us. The problem is the same drinks are in our LCBO (liquor stores) in Ontario, same branding, but with vodka or another alcohol and no barley malt. This means that we should be able to drink the ones bought from the liquor store. The problem boils down to the branding. These two different drinks have the same name, the same branding and packaging. The malt beverage says in very small letters on the packaging “malt beverage”. Deanna and I discuss this problem and what issues we see it causing for those of us requiring a gluten free diet. It's the beginning of March and time again to talk with Ellen Bayens of theceliacscene.com to delve into some of the studies and information she has brought us over the past month about celiac disease and the gluten free diet. Ellen and I talk about a new non-invasive patch that might make diagnosis of celiac disease easier and might be a great tool where patients don't have access to sophisticated medical labs. Also, there is a study Ellen has highlighted done in the UK looking at why the diagnosis of celiac disease is often missed or slowed and what steps could be taken to overcome these issues. The necessity for a gluten challenge to diagnose those who have already started a gluten free diet has long been an issue for our community. Ellen tells us that researchers are working on a test that might allow those already on a gluten free diet to still be properly diagnosed. I was curious to learn from Ellen about one of the directions of research into Covid-19 that might have repercussions for celiac disease. Long-haul Covid-19 patients are showing signs of an autoimmune reaction which the researchers find curious and may lead to more investigation into the triggers for autoimmune conditions including celiac disease. We've spoken before about some of the differences in the diagnosis of a child as opposed to an adult. On this episode I speak with Lisa Rigney about how her daughter was diagnosed and some of the immediate changes it made to the family dynamic. It's easy in hindsight to look back and see some symptoms in a child that were clearly missed as the family went about their daily lives. Lisa has recently begun working with the Edmonton Chapter of the CCA and hopes her family's story will help others on the difficult journey of having a child diagnosed with celiac disease, when neither parent has been diagnosed. Diagnosis stories are always interesting. Some are very short, some take longer, and some standout because of their complexity. On this episode I speak with Dr. Jenny Jagers, who has a doctorate in medicine, but is not a medical doctor. She was able to recount her time before diagnosis, as well as the varied symptoms that led to confusion and a negative test for celiac disease. The real story though occurs after she receives her diagnosis. Jenny is from a very large family and what she did next had a profound effect on so many others. Jenny is now a volunteer with the Calgary Chapter of the CCA and it's very clear, she is going to continue to make an impact on the lives of so many going forward. This week I'm thrilled to be speaking with Hayley Repton, producer of the short film – “Glutened”. The film is a fast-paced look at a young woman's rollercoaster journey after diagnosis; how her life changes and how she comes to terms with the many aspects of her new lifestyle. Hayley let us in on some behind the scenes information, along with some of the rational for the many threads she pulls together to weave the story. I admit to Hayley that I cried at the end of the film, and when I've re-watched it, my emotions are still so close to the surface. This is an important film to watch, both for the diagnosed and those around them. Ellen and I talk about a couple of studies, one to do with universal testing of children for celiac disease and the other is a very small study looking at managing the gluten free diet. I recently spoke with Dr. Jocelyn Silvester for Episode 149 of the podcast regarding the “Doggie Bag” Study which looked at the actual amounts of gluten that were contained in our seemingly gluten free diet. Dr. Silvester has gone on to look at some of the everyday ways we handle our food to identify, then quantify the risks of contamination from gluten containing ingredients. Her experiments included cooking gluten free pasta, sharing a knife with gluten foods, and using a toaster along with risks for children in the classroom. The results of her studies are surprising and somewhat concerning. The Canadian Celiac Association has looked at these findings and believes that more research needs to be done on this topic. No one is ready to change the recommendations for handling gluten free foods to avoid contamination with gluten, but these studies do give us pause to think. I was concerned about the interpretation of these results and decided to invite Ellen Bayens of theceliacscene.com onto the podcast to discuss how some of this information can relate to our day to day lives. It's December and that means the arrival of the Holiday Survival Guide from the The Canadian Celiac Association. On this episode I speak with Melissa Secord, Executive Director of the CCA about the guide, including some special covid related content. It's a year like no other, we will all have to be content with smaller gatherings, but that doesn't mean we can't make those times special with traditional baking and giving. Covid has taken a toll on a significant portion of our population, which we must remember and assist at this difficult time. One initiative of the CCA is a program to identify gluten free donations to foods banks, so they can be saved for those requiring gluten free. On this episode we talk again about gluten free baking. Specifically, we look at flour blends. Almost everyone who has baked gluten free will agree that one flour – rice flour, almond flour, oat flour, none of them can stand alone and always need to be blended with another grain or starch to get the taste, texture and mouthfeel in the final ingredient. Cinde Little, who online is known as the Everyday Gluten Free Gourmet has developed a guide to the different flours and suggestions for combinations to make a wide variety of baked goods. I also talk with Saima from a new company called Breadables. Saima has worked hard to develop a flour blend for roti, which is an Indian flatbread. I know from some of my previous podcast guests, and my own investigation and trials, that roti made gluten free was an elusive thing. Ellen Bayens is back with us for her monthly roundup of news from theceliacscene.com. We chat about a new study released from the Mayo Clinic regarding giving children antibiotics under the age of two and if that puts them at a greater risk for other diseases and conditions as they get older – celiac disease figures into this study. Some good news – a recent study finds those with celiac disease are not at greater risk of contracting Covid-19. This was very welcome news during this time of increasing cases. Ellen and I were pretty much both on the same page when it came to discussing the adoption of a gluten free diet by those without diagnosed celiac disease and now there is a study to dig deeper into this. We looked at some innovative gluten free products – of note – Gluten Free Oreo cookies, authentic rustic corn tortillas and emergency preparedness meals from two companies that offered gluten free options. It was a year and a half ago that I first heard about a new study, teased at a forum of high level business people and researchers put together by the Canadian Celiac Association. Two doctors hinted at tidbits of their findings when they looked at the actual amount of gluten in a gluten free diet. At that time, I spoke with Dr. Jocelyn Silvester, and she promised to speak again with me when the study had been properly submitted for publishing. This episode is that long awaited conversation. Is there gluten in the gluten free diet? The answer is yes. But the research study, performed in Manitoba, was able to tell us so much more. The study is referred to as the “Doggie Bag Study”, but it has a lengthy proper name – Determination of Gluten Grams Ingested and Excreted By Adults eating Gluten-free. On this episode I speak with a very enthusiastic researcher, Dr. Diana Mager, who is also a Registered Dietitian. Dr. Mager is working on a project developing a food guide for young people diagnosed with celiac disease. This resource would take into account the special requirements of growing children and youth on a gluten free diet. After working with families facing the diagnosis of a child, and requests from the celiac community, Dr. Mager has put together a team, and funding to develop the resources families need to cope in switching a child to a gluten free diet.
