Kevin Scoles & Natalie Cilurzo. Almanac Beer Company's Kevin Scoles and Natalie Cilurzo from Russian River Brewing Co. join Brew Ha Ha hosts Herlinda Heras and Harry Duke. Kevin is assistant director of sales at Almanac Brewing and Russian River Brewing Co. is a Brew Ha Ha sponsor. They begin with two Russian River Brewing Co. beers. Citra Flash Mob IPA is mostly Citra hop and was just canned this week. Blind Pig IPA is a classic west coast style, a clear beer about 6.4% ABV. Blind Pig is close to Vinny Cilurzo's original recipe started at his original brewery, Blind Pig Brewing Co. in Temecula, which he opened in 1994. Flow Pale Ale Almanac Beer Co. is introducing Flow Pale Ale, their new west coast style pale ale. Herlinda remembers tasting the third R&D batch. It's light bodied, with a clean finish. The Flow Fest on July 9 will be the premiere event. The brewery is located on the old Alameda Naval Air Station. Admiral Malting is their next-door neighbor. Their facility was built in 1938 entirely out of redwood. Their name comes from the Farmer's Almanac, which has been published since 1888. It was known as a history of weather patterns, for farmers. They want the brewery to represent agriculture and the local farmers who produce what goes into the beer, which also ties into their menu. Their motto is, “Beer is agriculture.” The brewery was founded in 2011 to apply farm-to-table principles with beer. They have been in their current facility for the last four years. Kolsch is one of their core beers, the fastest growing beer in their lineup. It is 5% ABV and he calls it their “Sunday lawn mowing beer.” It's a kind of cross between an ale and a lager. They have picnic tables inside and a large outdoor area and food trucks, and free parking. The outdoor space has been a life-saver for them during Covid. Russian River Brewing Co. is open in Santa Rosa on 4th St. and at their big Windsor location. Visit their website for up-to-date hours, menus, beers and more info. Pliny the Younger has a positive economic impact in Sonoma County due to the tourist traffic that it generates. Today Natalie describes some 2022 statistics that show increases that were reported in the Press-Democrat. The 6.1 million dollar impact is a 20% increase over last year. It includes spending on hotels, restaurants, etc. “It means a lot to us,” says Natalie. Kevin describes his journey into beer, which actually started in music. He worked for an guitar and accessory maker, the Ernie Ball company. As a home brewer, he knew he would enjoy working in the brewing business. He started in a distribution company and there, he got to know the two co-founders of Almanac Brewing. About a year ago he began working for them. They are tasting an Adambier, which is a German style, not very well known. It is a strong, dark lager originally from Dortmund. It is 6.7% ABV with a hint of tartness.

Many lobbed accusations that without their own brick-and-mortar locations, the beer start-ups that pursued these models didn't have enough "skin in the game." But since then, this approach to the business of brewing has become fairly common among hopeful entrepreneurs looking for a flexible, less risky way to enter the industry. In recent years, breweries like Sweden's Omnipollo, California's Almanac Beer Company, Maryland's Stillwater Artisan Ales, plus Evil Twin Brewing in New York and Mikkeller in Denmark (led by their infamous pair of feuding twin brothers) all built their businesses this way, and have later gone on to invest in their own breweries or bars after proving themselves with this model. Their example makes it clear that this method is no longer reserved for those making private-label beers for giant corporations and restaurant chains. I, too, find myself looking at a possible shared space for my own brewing project instead of investing heavily in my own build-out. So how does one apply this model to another industry—one that's directly connected to the brewing supply chain? Nick Impellitteri of The Yeast Bay in Portland, Oregon runs a boutique microbiology lab that supplies the beer industry with a wide variety of yeasts and bacteria. Most of his production is housed at a much bigger facility, home to perhaps the biggest name in craft yeast: White Labs in San Diego, California. On today's episode, I speak with Nick about where he sources his yeast, what's new from the Yeast Bay, and how he runs the business according to this same alternating proprietorship model. We also go deep into the results from a bio-prospecting hike we did together in the hills outside Berkeley, California, where we captured some microbes Nick is very excited about. The Dudes descend to the seventh layer of the cinema to review PRINCE OF DARKNESS! Is the second film in John Carpenter's "Apocalypse Trilogy" a heck of a good time - or does it deserve to stay buried in the bowels of movie hell (a.k.a. the $5 bin at Walmart)?
This week marks the first Encountering Silence "Field Recording" in which one member of our team (in this case, Cassidy Hall) records a face-to-face interview with a person whose life is deeply engaged with silence. Today's episode features Cassidy in conversation with a Benedictine monk, Fr. Stephanos Pedrano, OSB. Cassidy Hall and Fr. Stephanos Pedrano, OSB Father Stephanos is a monk of Prince of Peace Abbey in Oceanside, California. The Encountering Silence team met Fr. Stephanos online, through a small social media group for artists, writers, and others who explore the intersection between art, spirituality, justice, and authenticity. In that context Fr. Stephanos is a voice of calm, deep spirituality, and good humor. Since he lives so close to Cassidy Hall, it seemed natural for her to pay him a visit, and during her time at the monastery, to record the interview which we are now sharing with you as our 11th episode. Even though this is the third episode to feature an interview on the podcast, it is actually the first interview to have been recorded (back in October of last year). Fr. Stephanos tells his story, from his early yearning for liturgy and community, to discovering intentional silence through prayer, to eventually discerning his call to monastic life — which in turn took him to the threshold of silence. He reflects on how the wisdom of Saint Benedict has shaped the monastic experience of silence, and the relationship between silence and love. He goes on to talk about Mother Teresa — a modern saint who "suffered" the silence of God, whose voice fell into absence as she responded to her vocation to serve the poorest of the poor. He explores some of the "silent wisdom" of the Rule of Saint Benedict, such as can be found in Benedict's twelve steps of humility — which on the surface seems so counterintuitive to the values of our age, but actually points to treasures such as the spiritual beauty of silencing one's own ego, in response to the love of God. Stephanos also explores why the word "contemplation" never appears in the Rule of Saint Benedict, and also talks about the heart of lectio divina, the deeply contemplative monastic practice of meditative reading of scripture, and how silence has given him insight into the dynamics of his own personality — and into love. But, before we get to the homebrew, we’ve got some cans fresh off the line from Almanac Beer Company, and four questions in the 4B Mailbag. Beers from Almanac and Modern Times Yeast is THE most important component of beer. Well, fermentables for the yeast to consume are also important, but, yeast is priority one. Poor yeast health and viability can completely ruin an otherwise great beer. Three of the four questions in the mailbag pertain to yeast, two of which are specific to lager yeast. The topic of yeast leads right into Jason’s latest beer, his New England session (accidental) IPA called, Mirkwood. The brewday for this beer went relatively well, outside of Jason’s poor wort efficiency. We get into why that may have been, how to fix it, and how important mineral additions are to the finished brew. Jason’s mash pH was also a bit on the low side, around 4.7, (normally, most homebrewers experience pH readings that are too high, which is easy to fix in most cases) and we discuss how to raise it using said mineral additions. We finish up with the latest “juicy” release from Modern Times Beer, Attack Frequency. Opinions about this beer are mixed among the group, but all agree that Jason’s brew definitely killed in comparison to this beer. Jason-1, Modem Tones-0. That’s our boy! Jesse Friedman and Damian Fagan of Almanac Beer Company stopped by to talk about their beer and what it's about. it's an interesting take on how to launch into the brewing business. which is to start of brewing smaller batches of seasonal beer which you can hear about on the podcast or read on the Almanac website. before the name was Almanac it was going to be called Old Oak Beer Company. but a deep trademark search showed that they might have problems with that name so the two owners decided to rebadge the company prior to having any beer in the market to avoid future confusion. barrel aged beers have proven to be popular in market. and while European beers have been made in wood barrels for centuries it hasn't been until the last decade that barrel aging was done in the American market. and this is especially true for beer distributed outside of the brewing area done intentionally instead of just a brewers experiment made as a novelty for the people that visit the brewery. somebody will point out that some US breweries have had their beer on wood since they started brewing it. yet it's not the flavor of the wood that is the reason. in the case of beer that is "Beechwood Aged" the wood is used to increase the surface area available to the yeast. it also makes a neat marketing differentiation for the product. the homework was to try beer that is barrel aged. we gave a few examples on the show. and if you aren't sure what is or isn't a beer from a barrel program ask your retailer or beer geek. or you can ask here as well. http://www.almanacbeer.com/ call the Beer School Robot! 424-242-3375 Beer School everywhere: http://www.facebook.com/beerschool http://youtube.com/beerschool Follow JohnFoster and BeerSchool on Twitter.com Be sure to visit City Beer Store in San Francisco, CA Email us at info@beerschool.com Good noon!
