"It's not always easy to tell when it's time to make a change. You may be waiting for a sign that never arrives, or feeling paralyzed by fear and anxiety of the unknown. So what happens when you finally step off the ledge and take the plunge into uncertainty—and the entire world changes as a result? Jester King Brewery outside Austin, Texas, is known for their rustic country beers, a focus on ingredients, and being one of the best mixed culture ale producers in the country. Under the watch of their head brewer, Averie Swanson, the brewery continued to be a sought after destination for beer geeks from around the world. Averie recently struck out on her own and founded Keeping Together, her Saison and farmhouse-inspired beer project in Chicago, Illinois. Operating out of Half Acre Beer Company, her business model for Keeping Together is an unconventional one, and on today's episode we discuss how and why she chose to leave Texas to bring her brewing knowledge to the Midwest, our mutual love for wild ales, and the challenges of starting a new endeavor in the shadow of COVID-19.

Whether or not you're a fan of craft beer (and if you weren't a fan before 2020, honestly...what else will it take?), we can all acknowledge that the growth of the craft beer industry was unquestionably one of the defining food and beverage trends of the 2010s. The number of craft breweries in the US skyrocketed from around 1,500 to north of 8,000, and - in the process - Americans learned that beers could come in different colors beside "dehydrated urine yellow." We learned that bars could be built around things besides sports games and local cover bands. We learned not only how to pronounce gose, but also what they taste like. (Editor's Note: they're disgusting.) Our guest on the podcast this week was there for all of it. After starting as the weekend bartender in Half Acre Beer Company's taproom, Lee McComb did just about every job in the brewery before eventually becoming the Specialty Beer Manager overseeing Half Acre's program of award winning small batch and limited release beers. (They have nearly 250 different rated beers on Beer Advocate!)  From a simple hobby to a decade-long career, Lee has been able to translate his interest in home-brewing into not only a profession but a true craft. Lee shares a few of the things that make Half Acre so special as a brewery, the impact #COVID has had on their business, and how he balances good beer vs. good business. Give it a listen while #daydrinking at your desk this week. And then go out and buy a six-pack from your favorite local brewery! Half Acre Beer Company is a Chicago craft beer luminary, and we invite Dennis to try 6 of their beers with us. Dennis brings his experience as a food writer to the show and makes us eat a Subway Flatizza and drink Boone’s Farm Fuzzy Navel. It was horrible. But the show is great, and so are the beers. It gets so weird.

While we taste and talk about some of Half Acre's canned offerings, Gabriel Magliaro (founder of Half Acre Beer Company) tells us about Half Acre's start, their recent brewery expansion - including a beautiful new taproom and, of course, our favorite, collaborations. Our guest hosts include: Drew Fox of 18th Street Brewery and Justin Maynard of the Illinois Craft Brewer's Guild. Note: after several beers into waiting for our super-duper, unfashionable late, guest host, we began recording. This may explain the awkward beginning.... (Sorry, Justin, had to get that last one in!) Music: Juice - Keep It Moving
