At last year's Festival of Barrel-Aged Beers in Chicago, a relative newcomer grabbed both the silver and bronze medals in the Wild Beer Mixed Culture with Fruit category, immediately sending the crowd to flood the pouring table with requests for tastes. The brewery brand—Idyll Forest Artisan Ales—is the wild, mixed-culture passion project of Pryes Brewing (https://www.pryesbrewing.com) cofounder Jeremy Pryes. The small production facility he's built about 20 minutes from the main brewery is his culture and flavor laboratory. Despite founding the brewery over a decade ago, Pryes still spends time on the production brew deck and then makes time for his acid-forward labors of love, but the long days are worth it for Pryes. There are too many ideas to try, too many experiments to work out, and too much to learn to slow down now. In this episode, Pryes discusses both their classic approach to “Midwest IPA” as well as the wild path he's forging with Idyll Forest. Earlier in November, the Illinois Craft Brewers Guild put on the 21st Festival of Wood and Barrel-Aged Beers to recognize some of the breweries making the finest wood-aged beers around. We got our hands on five (out of the eleven) Illinois medal winners - and our first-ever Best of Show beer - to help us audition to become FoBAB judges some year. We share some FoBAB “by the numbers” and recap the awards with a slight angle towards our Fantasy FoBAB league interests. American Latinos have long been a part of America's beer history. Many Quad Cities breweries have their version. Some even feature local barrels from Mississippi River Distillery. Barrel-aged December is now officially underway, and we’re delighted to crack open four medal-winning Illinois beers from this year’s Festival of Wood and Barrel Aged Beers. Once upon a time, brewing barrel-aged stouts was a simple case of putting one batch into a barrel then pulling it out and releasing it. But for Revolution Brewing, a happy accident led to a new way to think about blending stocks of barrel-aged beers in order to achieve more depth and complexity. Today, the brewery now intentionally brews to replicate that effect, and has extended the concept behind it across the various styles of barrel-aged beers they brew. In this episode, they discuss the details of this process—manipulating mash temperatures to produce sweeter and drier versions of each of their base recipes, aging those different versions for different lengths of time, and blending percentages of beer at different ages and sweetness levels to create beers that achieve the metrics they’ve developed for “balance value” and “malt complexity value.” “[By having] all these barrels with extended aging and different finishing gravities, it allows us to put a metric on it and create and design a beer rather than just having it go into a barrel and then emptying it every year," says Scott. The DC Beer Show visits Sapwood Cellars in Columbia, Maryland, where Adam and Richard speak with owners Scott Janish and Michael Tonsmeire. Scott has recently released the book The New IPA: Scientific Guide to Hop Aroma and Flavor. Michael is the author of American Sour Beers. For our brief, annual sabbatical, we drink ten different craft sodas while recapping our experience at this year’s Festival of Wood and Barrel-Aged Beers. We attempt to review the sodas, with five produced locally, but spend a lot of time reliving our favorite FoBAB moments.
