Adding non-essential components to a brew - ingredients sometimes referred to as adjuncts - can evoke strong dessert flavors and even a heavy dose of nostalgia. But does adding more and more adjuncts actually make a beer better? We test it out on this episode by drinking four barrel-aged stouts, with each successive beer adding one more flavor component over the previous. Premise! Also, Craig needs to know if he embarrassed himself in front of MJ Lenderman, we're recovering from a stacked week of March celebrations, and we go further with mint than we ever thought possible. I visited Goose Island Beer Co.'s soon-to-open Salt Shed Pub (1357 N. Elston) on what turned out to be a perfect night for having a 312 on the river. Let's get this out of the way: Goose has found the perfect location and built the perfect brewpub. Located behind Salt Shed and along the Chicago River, Salt Shed Pub is now the go-to for before/after concert drinks and light bites, as well as day drinking in full view of the Chicago skyline. Goose Island President Todd Ahsmann jumped in the car to talk about the new location and Goose Island's long history in Chicago as we ate one of the best smashburgers I've ever had (credit to Executive Chef Henry Pariser). EP 322 - BAD BREW: Battlefield Earth Once every millennia, there comes a cultural event that becomes the defining moment of the culture itself. A moment passed on from elders to the younger generation over a glowing fire in the watches of the night, and a moment which historians reflect upon with bemused wonder. As winter barrel-aged beer releases expand into more adjunct variants and special barrels, you can't overlook the base. For this show, we blind sample six barrel-aged local stouts that are part of a seasonal release lineup - but without any of the added gimmicks. We base our opinions only on the liquid in the glass, and we continue our rich tradition of being terrible at guessing the beers. There are more twists and turns than a high-occupancy vehicle-based action thriller, and we try not to be swept away by the relative viscosity. Blues Brothers 2000 should have never happened. Period. It's an uninspired rehash of one of the great 80s comedies. There is nothing new here; thus, there was no reason for revisiting the titular brothers. Oh, and lest we forget that one of them—John Belushi—tragically passed away in 1982. Without his oversized and all-consuming personality, there is an undeniable void that's never filled. The magic is gone. And no matter how many fake brothers you insert into the mix, it's not going to matter—particularly when the actors are stripped of most of their charm and charisma. John Goodman has never been less magnetic than he is here as "Mighty" Mack McTeer. Did Dan Aykroyd and John Landis—the co-writers/star and director—just refuse to see The Big Lebowski? How could they underutilize him this horrifically? Well, suffice to say, our rage was shared by audiences. Blues Brothers 2000 carries a 37% user score on Rotten Tomatoes (slightly worse than its 46% with critics). And it grossed just $14.05 million on a budget of $31 million. In the end, unlike its predecessor, this one should have existed solely as a Saturday Night Live skit. So sit back, boost your confidence with a Bourbon County Brand Stout from Goose Island Beer Co., and go looking for a fox! I, the Thunderous Wizard (@WriterTLK), Capt. Cash, Chumpzilla, and Mayor McCheese are still trying to fathom just how Aykroyd fit into the dashboard of that car! (00:00) Lingering Questions – There are certainly many, but among them: What musical legend would we most like to hang out with? Trivia Works in Mysterious Ways – Capt. Cash challenges the field to Blues Brothers-themed trivia. (57:31) Recommendations – We offer our picks for the week, and next up in "Hops and Saturday Night Flops," MacGruber! They discuss the importance of creating healthy habits, the benefits of having a therapist, and the stigma of talking about mental health.Joe and Alex also talk about the book, "No More Mr. Nice Guy," by Robert A. Glover, and discuss their own "nice guy" behavior, what exactly that means for them as men, and how they would like to see themselves improve. Drink of the Day- Since Joe hasn't been able to go shopping, he is drinking a classic Miller Light from the Miller Brewing Company, and Alex is drinking a Next Coast IPA from Goose Island Beer Co. in Chicago, IL. Today’s conversation is one of the hardest—and most edifying—that I’ve been lucky to have. It reaches that level of dialogue and storytelling that I think, on occasion, puts the GBH podcast on the level of oral history. It has nothing to do with me. It has everything to do with the quality of people who we’re lucky enough to have share their stories on this platform. And each guest of this caliber serves as a sort of searchlight to others who might find their way here next. Jonny Coffman has been a bartender in Goose Island’s taproom, just down the street from our studio, for some time now. He’s worked in breweries and bars like Chicago’s Local Option, and serves as a warm, inviting face to the world of beer for so many. He’s the kind of unassuming and energetic person that makes you feel like you always made a great choice. But the last four years of Jonny’s life—including a long, sprawling battle with cancer—challenged that disposition in the most profound ways. And they did so over and over again. I recently ran into Jonny at the Goose Island taproom when he was celebrating the national release of the beer he helped design and that he and his colleagues used as a symbol to celebrate his new lease on life. That beer is called Lost Palate—for reasons you’ll hear about in excruciating detail in this interview. It’s a Hazy IPA with cinnamon, lactose, mango, and graham crackers. It’s a wild beer for Goose to have made. But Jonny is kind of a wild guy. In the end, this interview is not about a beer. It’s actually a struggle for me to even talk about the beer itself in the context of this interview, but for Jonny it’s critical that we do. Rather, this interview is about all the things that this simple beer has come to represent—for Jonny, his colleagues, family and friends, and the message he hopes it carries to the rest of the world—as it spreads out onto shelves all across the country. This beer, and Jonny’s story, are going to pop up everywhere. Fair warning that this is a long one—and the listening will be hard-going at times. It was for me and Jonny, too. But I know I walked away better for having heard it. This is Jonny Coffman of Goose Island Beer Co. Listen in.

German Style Koelsch(Description courtesy of Beer Advocate) https://www.beeradvocate.com/First brewed in Köln, Germany, this formerly obscure style is now found at many US brewpubs and a number of breweries have released their own creative takes using American hops and other nontraditional ingredients. Light to medium in body with a soft mouthfeel and a straw yellow or pale gold color, Kölsch has a spicy, herbal Noble hop bitterness that is medium to slightly assertive—less than a Pilsner, but not by much. A somewhat fruity or vinous (grape-y from malts) quality and a crisp, dryish finish make up the rest of the flavor profile. -Color – Straw to gold-Clarity: Chill haze should not be present-Perceived Malt Aroma & Flavor: Malt character is very low to low with soft sweetness. Caramel character should not be evident.-Perceived Hop Aroma & Flavor: Hop aroma and flavor is low, and if evident, should express noble hop character.-Perceived Bitterness: Medium to Medium High-Body: Low to medium-low. Dry and crisp.-ABV: 4.8%-5.3%-Glassware: Stange (Stan-ge) (Slender Cylinder Glass) -Examples (courtesy of Beer Advocate)(https://www.beeradvocate.com)Summertime | Goose Island Beer Co.Goose Island Beer Co. A Kölsch beer brewed in the traditional German fashion, you’ll find yourself enjoying and savoring each sip of Summertime as much as you do those hot summer days and cool summer nights.California Kölsch | Ballast Point Brewing CompanyBallast Point Brewing Company California, United Statesballastpoint.com ABV: 5.20%There's no wonder why our Pale Ale is so popular--it is skillfully crafted in the style of the Kolsch beers of Cologne, Germany. We've chosen German hops for aroma, and rounded out the recipe with a blend of American and German malts. While it is very much like a pilsner, our Pale Ale is fermented at ale temperatures, giving it a subdued fruitiness--a perfect compliment to the crispness of the wheat and maltiness of the Munich malt. If you like a lighter brew but also like the complexity of craft beers, then our Pale Ale is for you. Support our Sponsors! Finally, I got to sit down with a Chicago original, Goose Island Beer co. Thanks to Renee for putting this together and getting me Keith Gabbett (Brewmaster), Mike Siegel (Research & Development), and Bjorn Johnson (Lead Brewer). We got to explore a little about what drove them all to beer and ultimately Goose Island. We talked about some new beers they have in the works, and exactly what it takes to get them from idea states to actual products. Bjorn, broke down a little about process on how to create some beer. Of course we talked Bourbon County Stout and where the beer world is going. Social Media: Website Instagram Facebook Twitter Youtube

It’s a high concept week in the bunker as we gamify our cellars by letting a roll of the dice determine the show’s lineup. Both Craig and Ryan dug deep into their closets to offer up a range of twelve interesting offerings that go from forgotten oddity to valuable rarity. Each host rolls a six-sided die three times to determine the six beers for the show, and the tension is more than could’ve ever been imagined. This was a crazy fun time to record, and we hope you enjoy the results - you’ll have to listen to find out the final lineup. There’s also some stuff about Doomsday Preppers, perpetually wet floors, Pappy Kong, and a cuvee of dolphins. (Also, mark your calendars for Tuesday, May 14th as we bring Saisonathon to Forbidden Root!) Our Twelve Cellar Offerings, in order of dice value Craig Transient Artisan Ales - Sporadic #2 (Wine barrels) Hoppin’ Frog Brewery - Barrel Aged B.O.R.I.S. With a secondary price tag higher than our mortgage payments, this show is an embarrassment of riches in flavor and in rarity. But will we be embarrassed by our blind rankings of eight barrel-aged vanilla stouts released in 2018? You bet your sweet tooth we will. We are joined by Ryan Tracy at his Park Ridge establishment, Beer on the Wall, as we fumble through our guesses and evaluate these high gravity beers based only on what’s in the glass. It’s a fun way to hear our beer careers come to an end. If that’s not enough, we talk about confusing road signs, classic Chi-Chi’s commercials, the best doorbells to lick, and waffles. And it’s totally not scripted, we swear. Wood and Barrel-Aged Strong StoutThese are a Stouts aged in either a wooden barrel or in contact with wood. English Stout - Stouts are typically dark brown to pitch black in color. A common profile among Stouts, but not in all cases, is the use of roasted barley (unmalted barley that is kilned to the point of being charred) which lends a dry character to the beer as well as a huge roasted flavor that can range from burnt to coffee to chocolate. Traditional English Stout recipes rely on bitterness from the roasted grain to provide a dry finish and consequently tend to show very little hop character.Wood and Barrel Aged Stouts are aged with the intention of developing unique attributes imparted by the wood and/or by liquids that had previously been stored in contact with the wood. Wood aging does not necessarily impart wood flavors, but does result in distinctive sensory outcomes. Used sherry, rum, whiskey, tequila, port, wine and other barrels are often used, imparting complexity and uniqueness to a beer. A balance of aroma, flavor and mouthfeel results from the marriage of new beer with attributes imparted by the wood or barrel. We age our Stout (5.3 % ABV) in Jim Beam Barrels. Welcome one and all to a New Year. A year full of plans, resolutions, and good fortune. Of course that is if you manage to avoid the wanton drunken destruction Cock and Croc seek to wreak simultaneously upon your sobriety and eardrums. Barely a week into 2019 the boys bring you their latest meandering through the Beer world and they have decided to start the year off with some big beerz. A tour-de-force of some of the finest stouts on offer and as per usual the boyz ramble incessantly, imparting very little knowledge, while luxuriating in the depths these glorious brews. Clean the litter box and grab your pooper scooper, ‘cause this week the BnB crew is bringing us Animal Ghosts! Melissa goes for a potty break first with the tale of the Red Owl of Hermitage, a bird who’s a little bit racist and oddly sexual, paired with Modern Times Beer’s Ice Pilsner. Then Vanessa straps on a harness for an undead trio of a goose, a chicken and a bear (oh my!), paired with Goose Island Beer Co’s Goose Four Star Pils. Who will win in the battle of poop shoes VS grumpy bears? Listen and find out!
Happy Black Friday everyone! Ryan, Evan, Brett, and Michael share thoughts on the annual Thanksgiving share hosted by Ryan. We blind taste different years of WeldWerks Brewing's Medianoche barrel aged stout, enjoy some Open Spaces by Side Project Brewing, and discuss how we are out to get our allotments of Bourbon County Brand Stout from Goose Island Beer Co. Chicago's FOBAB (Festival of Wood and Barrel-Aged Beers) also just finished and we review winners and how great it is for the city. Cheers!!
This week's show notes include stories about why brew pubs are great bets for big breweries and small ones too, the Independent Label movement to buy Budweiser and why nitro beers are so much fun. Why big breweries want to go local We don't have to travel far back in our beer time machine to revisit the year when Goose Island Beer Co. still had only one brewpub, its venerable but not exactly cutting-edge Clybourn Street location. That was 2014, three years after Goose Island's sale to Anheuser-Busch InBev. Russo: Nitro-infused beer just another toy for craft enthusiasts Setting aside the more obvious things like quality and economic benefit, what really sets craft beer apart is a sense of play. If you have tried a lot of craft beers, or even if you have just read a lot of craft beer descriptions while out to dinner, you have seen some odd combinations. Brewers Association Jokingly Seeks To Buy Anheuser-Busch, With A Serious Goal In Mind Craft brewing's lobbying association announced today that it's launching a crowd-funding campaign to buy Budweiser's Belgian parent company, Anheuser-Busch InBev (AB InBev). It needs $213 billion to do it. The Brewers Association (BA), the Colorado-based trade organization that represents craft breweries, calls its campaign "Take Craft Back," and so far it includes a new website, hashtags and videos of brewers and others talking about why craft matters.
This week Doug and Tony talk Porters season, craft beer independence and exporting the brewpub idea for breweries big and small. In the Home Brew FAQ we talk about finding the right balance during fermentation. The stories that inspired our conversation are below. Feel free to reach out to us with questions or suggestions. Russo: Fall is brown beer season; here's why that's a good thing In really broad terms, beer follows the season. Prevailing temperatures notwithstanding, if you think of spring beers as a little more yellow, summer as a little more golden, fall as a little more amber and winter as black, we're pushing through the end of the amber and moving toward black. Bitter rivalry: conflict brews as craft beer makers take on big firms A civil war is brewing in the normally convivial craft beer fraternity, as anxiety grows about the threat posed by multinational companies' insatiable thirst for every last drop of the market. Heineken and Molson Coors are both "associate members" of the Society of Independent Brewers (Siba), a situation that rankles with some of its members.

The 4B Flight, Episode 4 – Today on The 4B Flight, John’s opening his 2010 Bourbon County Brand Stout, RARE. We are back with the fourth of six episodes for this week’s mini-episode-extravaganza that we call The 4B Flight. In case you missed what’s going on here, we’re releasing a new mini-episode of Four Brewers everyday for a week. Why? Because we like you. 2010 Rare Bourbon County Brand Stout If you’re familiar with the very much frowned upon “craft beer black market”, then you know how much moolah this bottle can fetch. It’s a ridiculous amount. This is a beer Johnhas held on to for the last six years, and rather than succumb to greed and unethical activity, he decided to open his ultra-whale, a 2010 Bourbon County Brand Stout Rare. Things got a little weird on this episode. Feathers were ruffled (just a little bit, though) on both sides of the 4B studio table, but in the end, we all agree that it’s a great beer, but certainly NOT worth selling a kidney for. Tune in tomorrow for the next beer in The 4B Flight! BREW THE SHIT OUT OF IT. Season 2, Episode 7 - The time has come. The moment has arrived. This week is part one of our epic blind tasting of bourbon barrel-aged stouts from across the United States. We’ve been hyping these episodes for a few weeks now, and they have finally arrived. Here’s the premise of these shows: Episode 7 (part 1) is going to be the introduction of the blind tasting, and why the beers were selected. We’re going to drink four of the nine beers, and rate them according to aroma, appearance, flavor, mouthfeel, and then a final overall rating. Episode 8 (part 2) will feature the final five beers and the results of the blind tasting will be revealed. But, let’s take a step back and briefly discuss how this came about. The Blind Bourbon Barrel-Aged Stout Bout Back when Goose Island’s Bourbon County Brand Stout (BCBS henceforth in this post) was released in 2014, beer geeks on the internet went apeshit trying to find this beer. Our friends on social media posted pictures of this beer being purchased by the case, and Black Friday officially became known as BCBS day for all of us (beer geeks). The ironic part about all of this is that Goose Island Beer Co. is owned by AB-InBev (ABI henceforth in this post), who to many beer geeks, is the “enemy” of the craft beer movement. They are owned by a macro brewery, to put it in simple terms. BCBS is a macro beer. Sure, it’s still made by the hard working and passionate folks at the Fulton Street Brewery (Goose Island Beer Co.) in Chicago, Illinois, but that brewery is exactly what ABI purchased back in 2011, along with the Goose Island brand. Now, before you write us a nasty email telling us that “ABI didn’t buy the Goose Island brewpubs, and that’s where the beer is made, so technically it’s not a macro beer”, go ahead and pump your brakes, homeboy. This beer is brewed at Fulton Street, and it’s a macro brew. As long as you’re willing to concede to the fact that by purchasing BCBS that you’re purchasing an ABI product, then we’re all good. Just because Goose Island Beer Co. is now owned by ABI doesn’t mean that BCBS is now a “quality compromised” beer. ABI actually bought Goose Island Beer Co. to help expand the brewery and essentially, get more BCBS to the masses. BCBS is still a great beer. Hell, Goose Island was the first brewery to put stout in bourbon barrels, and they’ve pretty much perfected it at this point. ABI bought this company to get a leg in the craft beer door as it were, and screwing with this beer would be, well, idiotic. That being said, this beer brings a lot of hype along with it, and that’s precisely why we decided to do this blind tasting. Does this beer live up to the hype? Let’s find out! We picked nine bourbon barrel-aged stouts. We tried to keep this tasting as pure as possible by eliminated any beers that have known adjuncts in them, such as vanilla, coffee, and cacao nibs. We wanted stout aged in bourbon barrels. That’s what BCBS is, and you can’t compare this beer fairly to others made with adjuncts. We also wanted fresh examples of each beer. As fresh as possible, anyway… In no particular order, here are the beers we chose and were able to acquire: · Firestone Walker Brewing Co. – Parabola, 2014· Goose Island Beer Co. – Bourbon County Brand Stout, 2014· Hangar 24 Craft Brewery – Pugachev’s Cobra, 2014· The Bruery – Black Tuesday, 2014· Sierra Nevada Brewing Co. – Bourbon Barrel-Aged Narwhal, 2014· Dark Horse Brewing Company – Bourbon Barrel-Aged Plead The 5th, 2014· Bell’s Brewery – Black Note Stout, 2014· Bottle Logic Brewing – Darkstar November, 2014· Avery Brewing Company – Uncle Jacob’s Stout, 2012 We have a special guest pouress for the next couple of shows, who is also a 4B Patron on Patreon, Ms. Dana Parker (@MissTurkeyBowl). Dana is the only one at this point who knows which beers are which. The beers were kept outside of our studio, and she brought them to us randomly. We’re not going to list the tasting notes on the blog post, but you can view them on this week’s show outline. Next week in episode 8, we’ll drink the final five beers and announce the results of the blind tasting. So, until then… BREW THE SHIT OUT OF IT. Special shoutouts go to “Cougar” Steve Saavedra for hookup on the Michigan beers, and Scott McElhone for inspiring the titles of episodes 7 and 8. Four Brewers Patrons get 50% off Firkfest tickets!
