    Restraint, by Institution Ale Company, is a brown ale that balances toasted dark malts and American hops. Hard maple wood adds a woodsy dryness and slight maple sweetness. When Institution Ale Company became Camarillo's first brewery and tasting room in 2013, the craft beer wave had just begun to hit Ventura County. Roger Smith co-owns the company with his sons, Ryan and Shaun. Institution began as a nanobrewery, or a scaled down microbrewery, in the industrial area of Camarillo, brewing three 100-gallon batches of beer every week. Between supplying two taprooms and distributing draft beer to bars and restaurants in Ventura and Los Angeles counties and the Central Coast, the brewing operation in Camarillo is nearly maxed out!     Black Walnut Dunkel, by Perennial Artisan Ales, is a chocolate brown German Dunkelweizen aged in Missouri-grown black walnuts. Big aromas of banana sit on top of this malty wheat beer, and it finishes with a nice black walnut nuance on the palate. Pairs with roasted quail and desserts made with chocolate or bananas Perennial Artisan Ales' philosophy is to brew beer with the adventurous craft beer drinker in mind—focusing on hand-crafted, small batches of beer, using local, seasonal and organic ingredients as much as possible.     Zombie Dreams was created with the idea of bringing the flavors and notes of a cranberry mimosa to beer. After letting their in-house lactobacillus culture sour their wort, they added cranberry puree and Sauvignon Blanc grape juice to the fermentation. This resulted in smooth aromas of sweet cranberry with hints of tropical fruit. On the palate, the carbonation brings forth the mix of fruit during fermentation with a backend acidity to round things off. Mikkeller Brewing started when Mikkel and his childhood friend, Keller, began working on a series of ‘physics experiments' using malt, hops, and yeast in their home kitchens in Copenhagen. The kitchen experiments lasted for two and a half years and while they continued, Mikkel and Keller also began brewing beer on a larger scale at the Danish microbrewery Ørbæk. In the beginning of 2007, Keller left Mikkeller to pursue a career as the editor of a music magazine, while Mikkel remained on his own to continue pursuing his dream of taking Mikkeller to another level. Mikkeller's growth was rapid, and in 2010 Mikkel decided to bid farewell to his students and colleagues at the school he taught at and decided to commit himself full-time to the brewery.     It all started in 2013 with a fateful interoffice email exchange between two strangers who had never heard of each other. Soon after their face-to-face encounter, Chris and Brandon quickly learned that they had more in common than their jobs in advertising – art, food, music, and most importantly a good craft brew. Their journey began with building a small pilot brewery in Brandon’s garage, which quickly became nicknamed “The Lab.” Not sparing any expense, their brewery consisted of everything that would help them brew a high-quality product similar to the commercial breweries that they loved. This included everything from a ½ BBL brewing system, to microscopes for counting yeast cells to ensure perfect pitching rates. While they couldn’t legally sell the beer they made, they used the lab as a way to tinker with various beer recipes. Chris and Brandon became truly committed to the art of brewing and spent countless hours reading and researching to refine their recipes for the perfect brew. After years of learning from their mistakes and experimenting with a myriad of recipes in “The Lab,” they realized that they were onto something - something that sparked a feeling that coupled their passion and newfound knowledge of craft brewing. It was only natural that the next step was to own and operate a brewery of their own – Paperback Brewing Co. Every Paperback has a story to tell, and this is just the beginning.
