I have decided to continue "The Art of Weiqi War" sub-series because I like the topic and because last night in my dreams I got a visit from Ip Man 葉問. Ip Man was a master of Wing Chun Kung Fu 詠春功夫 and I've spoken about him in my very first podcast: Ip Man drinks tea. In my dream, I found myself entering a warmly lit Hong Kong street cafe. The kind that served Chinese fried Cheung Fun alongside more western spam and scrambled eggs. Real scrambled in a wok eggs - not the microwaved egg stuff most cafes in Sydney like to serve. I couldn't see outside of the cafe but I guessed it was dark. Inside the cafe, it was busy and most people were enjoying Hofun rice noodles in soup. And the lady at the cash register next to the front door motioned me to sit at the only available free space opposite Ip Man. Now, because I have already had my choices experience dealing with the dreamworld in my teenage years (with dreams being just another path along spiritual transcendence), I could sense that I was in a dream and that Ip Man was now a part of the afterlife. But still, to be sitting with Ip Man was a martial arts blessing I wish to share with my fellow wayfarers along the martial arts journey. He was sitting with his Gaiwan and had in front of him a Weiqi board that stood empty except for a single black stone placed upon it. In the dreamworld, you don't really "see" with your eyes, so I didn't know where the black stone was. I just "knew" of its existence and that the next move upon the Weiqi board was mine. Seated opposite him, we saluted in the Kungfu style: Closed fist inside a clenched palm. Sun and moon combined. "So, are you alive or are you dead?" Ip Man asked me. What an unusual question. I am dreaming and because I know I am dreaming, I'm trying my darnedest to not wake up. I placed a white stone on the board. I "think" I know where I placed it upon the Weiqi board but if I were to tell you now, it would be a fabrication. So which was it? Dead or alive? Do I even remember walking into the cafe or did I just move through the door? I couldn't think straight. The background sound of a Wing Chun practitioner training on a wooden dummy was distracting me. Ip Man just smiled and I felt that pulling sensation one gets just before they wake ⚔️圍棋戰聖

We've been wanting to explore chaxi on Talking Tea ever since we visited the Tea Institute at Penn State University back in 2016. Tea was prepared and served to us by students in the Chinese tea track at the Institute with a degree of artistry and calm precision we had never quite witnessed anywhere else, and when we asked some of the students where they learned to prepare tea in this way, they suggested we speak with one of their teachers and mentors, Stéphane Erler, to learn more about chaxi, an artistic expression of tea originating in Taiwan. It took us a couple of years, but we finally caught up with Stéphane recently on one of his visits to the US, and we're proud to welcome him to Talking Tea. Stéphane is a tea educator, seller and blogger based in Taiwan - he hosts the very well-respected Tea Masters Blog - and, among other things, Stéphane practices, teaches and writes about chaxi. We talk with Stéphane about his own beginnings in tea, his study and work with tea master Teaparker, and about the history of chaxi in Taiwan, and then we delve into the practice and principles of chaxi. Chaxi means "tea play", and Stéphane chats with us about how chaxi is a kind of performance but also a way of creating a tea mandala, a picture of a harmonious world through tea. We discuss the priorities of function and art within chaxi, and we explore the question of how the host can best express the character of the leaves as well as the host's own sentiments and feelings through the chaxi.  In this context we talk about the choice of teaware, the importance of colors and visual harmony, the use of flowers or plants, the addition of music or other background art, and most importantly the skills and mindset needed to prepare the best possible tea in a beautiful setting, finding resonance and harmonious connections between the tea, the teaware, the setting and the participants. Judging by the Gaiwan 蓋碗 tea utensils, he's most likely drinking either Keemun or Yunnan black tea. Very fitting, if it were, because he was a known smoker. ☷ When I look at the photo and seeing him smiling back, it makes me wonder about the quieter areas of Hong Kong. I could just imagine myself as the one who took the photo. As a martial artist who does Baguazhang 八卦掌, this photo allows me to honour him in my own way. ☵ May he be blessed up in Kung Fu Heaven while I sip from my own Chinese tea cup Pu-erh. ☲ I bring him up because martial arts is like tea. We all have our styles and preferences. But at the end of the day, it's all tea. Essential coming from the same plant Camellia Sinensis. And at a certain level, whatever the martial art, we all end up at the same place being at one with each other. ☳ That place for high level Kung Fu masters involves tea. Tea symbolizes in a graceful way that the Tao of Martial Arts is more than just training and fighting. I wish I could explain it all here, but it's something that you have to be there to understand. ☶ It is like visiting Hong Kong itself. At the bottom end, where most tourists start off, Hong Kong is all bright lights, big city, shopping, shopping and shopping. Eating and eating. And too many people crammed into a tight space. It's exciting for the first few times... But then it starts to wear thin. ☴ Every soul in Hong Kong finds their Place of Recomposure. For most people it will be a small cafe serving fusion Canto-western cuisine or a teahouse frequented by those guys in pyjamas and white vests. The kind of place tourists typically rush past without noticing or if they did, dare not enter because they look at bit dodgy. ☱ I guess in a way, I have taken you down the river to where the river flows to: Rambling that make no sense to a person just starting on the Martial Arts Path. Today on Talking Tea we focus on the nuances of flavor, and how to fully appreciate the taste of tea by engaging all of our senses. Guiding us through this exploration of tasting is Billy Dietz, a tea development specialist based in Montreal. We chat with Billy via Skype as he shares a little of his own remarkable tea journey and then takes us through two methods of preparing a tea he selected for this episode, a Muzha Tie Kwan Yin oolong from Taiwan provided by Naivetea. We compare the preparation of this tea in the traditional Chinese covered cup known as a gaiwan with the professional tasting method known as "cupping". (In the image here the gaiwan is in the left foreground, the cupping set to its right.) Billy explains the purpose of each of these brewing methods, gives us details on brewing tips in each style and discusses how these details of preparation affect the taste. We chat about how the other senses come into play as well - the visual aspects of the dry and infused leaf and the brewed tea, the aroma, the tactile sensations of the tea after we sip it, and even how we breathe before and after taking a sip - how to fully engage with all of these to allow a fuller discovery of the tea. This week on Talking Tea we look at the growing popularity of tea and tea culture among youth and teens. Chatting with us (via Skype) is Connor Adlam of Tching.com, the well-known blog and online forum for tea information. Connor, the intern social media editor at Tching and also a member of this demographic, shares his perspectives both from a personal standpoint and from his work at Tching. We chat about what makes tea and tea culture attractive to younger drinkers, the role of social media in breaking through misinformation and stereotypes, and how tea connects with the rising interest in mindfulness and spirituality among young people.
