Le tea time anglais, ou afternoon tea, est aujourd'hui l'un des symboles les plus reconnaissables de la culture britannique. Pourtant, cette tradition si codifiée est née assez tardivement, au début du XIXᵉ siècle, et doit beaucoup à une femme aujourd'hui presque oubliée : Anna Russell.Pour comprendre son origine, il faut d'abord regarder les habitudes alimentaires de l'Angleterre victorienne. À cette époque, les classes aisées ne prenaient que deux repas principaux : un petit-déjeuner relativement léger et un dîner servi très tard, souvent entre 19 et 21 heures. Entre les deux, la journée pouvait sembler interminable, surtout pour les femmes de l'aristocratie, soumises à un emploi du temps rigide fait de visites, de promenades et de réceptions mondaines.Anna Russell, septième duchesse de Bedford et proche de la reine Victoria, se plaint régulièrement d'un malaise très précis : ce qu'elle appelle the sinking feeling, une sensation de faim et de fatigue en milieu d'après-midi.
