Douro Tinto is often called a “Steakhouse Wine” but that really doesn't do it justice. This fabulous wine from the Douro region of Portugal - an area most famous for the fortified wine Port - is a rich, smooth, and lovely drinking wine that needs to be on your table. Grown on very steep hillsides, the variety of the grapes in the blend can include up to 50 varieties, but the majority of the blend is usually Touriga Nacional, Touriga Franca, and Tinta Roriz - which is the Portuguese name for Tempranillo, most famously in Rioja wines from Spain. Because of the wide-variety of grapes used, the blends can vary, but overall you can expect a lush, juicy wine with enough acidity that it pairs amazingly well with food. If you are looking for an alternative to your rich Syrah or Bordeaux or Napa Cab, and you want a wine with more balance and less punch-you-in-the-face oak, Douro Tinto is a wine you have to seek out. Hello wine friends, and welcome back! Today's guest is none other than Ernst Loosen - widely regarded as Riesling royalty and the visionary behind Germany's legendary Dr. Loosen estate in the Mosel Valley. In this episode, we dive into Ernst's bold reimagining of Mosel Riesling, including an extraordinary 27-year lees-aged wine experiment that continues to evolve and amaze. We explore what makes Riesling so uniquely expressive in the Mosel's slate soils, cool climate, and dramatic river bends, and how Ernst has helped shift global perceptions of the grape - from sweet to serious. From reviving his grandfather's dry wine traditions to employing lees aging, oak fermentation, and extended maturation, Ernst shares how he crafts age-worthy, structured wines. With a global perspective shaped by work in Washington State (Chateau Ste. Michelle), Australia's Clare Valley (Jim Barry), and beyond, he compares Riesling styles across continents and spotlights an unexpected collaboration with Spain's Telmo Rodríguez, a skin-fermented dry Riesling you won't see coming. This is a rare, in-depth conversation with one of Riesling's greatest modern champions. A journey through time, terroir, tradition, and transformation. If you want to skip ahead: 03.00: Ernie's accolades and biography 04.00: Taking over the family wine business in 1987 06.00: Vision for business: improve wine quality with indigenous yeast, better selection. 08.00: Tough decisions managing old estates, including employee retention in 1987 harvest. 09.30: Focus on leftover grapes during the harvest as an innovative solution. 10.00: 1987 vintage turned out well despite early challenges. 16.00: Discussing the 1981 Wehlener Sonnenuhr ‘Indutiomarus' Riesling left on lees for 27 years. 18.00: History influences winemaking practices, referencing Mosel's 1800s Rieslings. Reflexiona sobre el apagón y la gestión de la energía
A bottle of wine carries more than fermented grapes. It embodies intellectual property worth billions in global markets. From the tapas bars of Barcelona to the vineyards of Australia, wine names spark international incidents with real-world consequences. When a small Spanish bar named "Champanillo" (little champagne) faced the wrath of the powerful Comité Champagne, it revealed how geographical indications function like luxury brand protections. No actual champagne was sold, yet the European Court of Justice ruled the mere evocation of champagne's prestige violated EU law. Similarly, Belgian customs officials destroyed thousands of Miller High Life beer cans for daring to call themselves "The Champagne of Beers" despite using the slogan for over 120 years. These battles extend beyond Europe's borders. Croatian winemakers watched helplessly as their traditional Prošek dessert wine, despite being nothing like sparkling Prosecco, was blocked from registration after Italian opposition. Meanwhile, Australia and the EU reached a trade negotiation impasse over whether "Prosecco" refers to a grape variety (as Australians argue) or a protected place name (as Europeans insist). The dispute demonstrates how a single wine term can become geopolitical leverage worth potentially billions in trade.Luxury producers fight equally fierce battles, with Château Petrus winning a €1.2 million judgment against a cheaper wine called "Petrus Lambertini," while even Prince's estate successfully challenged an Ohio winery's "Purple Rain" wine. Counterfeiters face serious consequences too, fake Lafite bottles distributed through nearly 2,000 supermarkets resulted in an $11 million judgment, while Europol's "Operation Epigraphy" dismantled a multinational fake Rioja network spanning three countries.Whether through trademarks, geographical indications, certification marks, or patents (as seen in the competitive synthetic cork industry), wine intellectual property serves as the legal foundation for an industry that blends agriculture, culture, commerce and law. What's inside the bottle is only half the story, the rest lies in who has the right to tell it.Listen now to understand why every sip comes with a side of intellectual property law, and why the words on a wine label can be worth millions in courtrooms worldwide.Send us a text
It's the Dish Easter special and Nick and Angela are joined for dinner by JADE. JADE is a singer/songwriter already making her mark as a solo artist. Born and raised in South Shields, JADE was part of the chart conquering girl group Little Mix, who were formed on The X Factor in 2011. Little Mix went on to release six studio albums and won a BRIT Award for British Group in 2021 before going on hiatus. JADE has since released her debut single Angel of my Dreams, followed up by the single FUFN, the video for which stars our very own Nick Grimshaw. JADE's had a busy start to 2025 with a massive night at this year's BRIT Awards, where she landed a huge performance and won her first BRIT as a solo artist. Alongside the release of her debut album, JADE is also due to perform at Glastonbury, with Nick and Angela hoping to be on the front row. She is also a huge fan of roasts. And we mean huge. Which is lucky because Angela has prepared two recipes by Paul Gamble; Roast lamb with boulangère-style vegetables and Chargrilled green vegetables with wild garlic salsa verde. This is accompanied by El Rayo Olarra Rioja Crianza. The conversation begins with a mojito, a cocktail making its Dish debut. This episode is the perfect Easter lunch, with JADE bringing her passion for roasts, gravy and potatoes while looking back at her first steps as a solo artist - including that big night at the BRITs. Side notes; Sadly the pistachio Easter egg mentioned by Nick was so popular it sold out! But we're confident you will find an equally moreish alternative in store or online. We are doing a live episode in Sheffield! On Friday 4th July, Dish will be at The Crucible Theatre at Crossed Wires Festival. Nick and Angela will be joined by a special guest for their second ever live show. Tickets are available now at crossedwires.live. You can now watch full episodes of Dish on YouTube All recipes from this podcast can be found at waitrose.com/dishrecipes A transcript for this episode can be found at waitrose.com/dish We can't all have a Michelin star chef in the kitchen, but you can ask Angela for help. Send your dilemmas to dish@waitrose.co.uk and she'll try to answer them in a future episode. Dish from Waitrose is made by Cold Glass Productions.
