Welcome to episode 1100, in which host Polly Hammond interviews Nicole Rolet, this week on Uncorked. This week, we are joined by the lovely and talented Nicole Rolet, CEO and driving force behind Chene Bleu. We forego wine-talk and instead jump directly into the blood, sweat, and tears of building a modern luxury brand. From solving spreadsheets and finding the right partners, to acting strategically and overcoming fear of rejection, we're talking about the non-obvious demands (and rewards!) of our industry. Let's get into it. More about today's guest: Nicole Rolet Nicole left her career in International finance and David Rockefeller's geopolitical think tanks, to join her husband Xavier and his family in the Rhone to restore a historical vineyard, derelict but magnificently wild, and its abandoned Medieval prior – a hidden gem in the heart of a UNESCO biosphere. Increasingly convinced of the site's exciting potential to produce Grand Cru-quality wine, she studied at WSET then UC Davis, and called upon her inner entrepreneur to transform this medieval Sleeping Beauty into a cutting-edge wine estate. Chêne Bleu wines were launched in 2010 to critical acclaim. She remains deeply committed to reconciling business success, social responsibility, ethical and sustainable practices, pushing the boundaries of sustainability. Knighted as Chevalier de Tastevin in Burgundy and the Echansonnerie in Chateauneuf-du-Pape, she co-founded the International Grenache Symposium and Association in 2010, then a wine school, and founded FM4FW in 2017. She splits her time between Barcelona, Auckland, and Napa, consulting, writing, and speaking about the trends that impact today's wine businesses. She's an advisor to New Zealand Trade & Enterprise, host of Uncorked with the Italian Wine Podcast, cohost of the Real Business of Wine with Robert Joseph, and, occasionally, a knitter. Polly is a graduate of the University of Southern California, where she earned degrees in International Relations and French. Those studies led to a deep and abiding love affair with behavioral Economics, and her wine work is based on insights into all the crazy and irrational reasons consumers engage with brands. With over 20 years' experience in growing successful companies, Polly knows first-hand the challenges faced by independent businesses. She approaches each client experience with empathy and understanding for what it takes to adapt and thrive in the real world. Laura McGilley and Andriana Duckworth from Sonoma Valley Wine join Steve Jaxon, Dan Berger and Harry Duke on California Wine Country. Andriana Duckworth is the Executive Director and Laura McGilley is the Marketing and Communications Manager for the Sonoma Valley Vintners. The Sonoma Valley Vintners and Growers Alliance, known as Sonoma Valley Wine, is the voice of the Sonoma Valley wine region where there are 6 AVAs and 14,000 acres of vineyards. Dan Berger points out that in 1879 at Kunde Ranch, at the time called Dunfillin, made the first Cabernet Sauvignon in California. The Valley of the Moon Vintage Festival Sonoma Valley Wine is promoting The Valley of the Moon Vintage Festival in the uniquely beautiful town of Sonoma, on October 7 and 8, 2022. They have taken over the longest running festival of its type. The festival will be located mainly in the Sonoma Plaza. Friday October 7 is the Sonoma Legends dinner where wineries will host tables and bring their cellar wines. Saturday October 8 is the Grand Tasting with 45 or more wineries pouring. Don't miss the Grape Stomp on Saturday during the daytime festival, from 10 am to 4 pm. There will be live music, beer, wine, barbeque, kid zone, artisans and craftspeople. Valley of the Moon is the name that Jack London gave to this area. Dan Berger says the side roads in the area go through some of the most beautiful land anywhere. If you come for the festival, plan to take an extra day or two. Dan's cellar wine today is from Joiefarm, a Canadian winery in British Columbia. It is a 2012 called A Noble Blend. This wine is not available in the US but if you visit Canada, look for it. It is a blend of Gewurtstraminer and Riesling and others. It has a very interesting flavor profile. There is great diversity in the Sonoma Valley and Dan points out that there is also great quality. It is the birthplace of California wine, with Buena Vista being the first licensed winery in California. Three Tastings from Sonoma Valley They are tasting a 2019 Walt Chardonnay from San Giacomo Family Vineyards and Steve Jaxon really likes it. Dan says it is “really high quality wine” and that it is made to age two or three years, in order to show the oak against the fresh fruit flavors. The second wine is a Rose of Grenache from Hamilton Family Wines, an estate grown Sonoma Valley vineyards. Jess Wade is the winemaker who also has his own label. They do Rhone style wines very well in the Sonoma Valley. This wine is very dry but succulent. At room temperature, the earthy component of Grenache and a trace of cranberry are coming in. The third wine is a 2016 Muscardini Cellars Merlot from San Giacomo Family Vineyards, as is the first Chard. The famlly has been growing grapes for almost a hundred years. “Delicious” says Dan Berger.

For the first episode of season 4, the Cupboard is pleased to welcome Nelson Boschman to speak with us about his book, The Growing Season, and to lead us in an informative wine tasting. A pastor, teacher, and musician, Nelson considers himself a wine enthusiast rather than an expert. He sees in the vineyard and wine-making the stuff of life and spirit.   We hear some of Nelson's story, about concepts of identity and challenge and change that are present in wine-making and in the spiritual life. We see, in Nelson's love of the vineyard and the process, that often the most enduring spiritual lessons come in paying close attention to the things that we love.   Tasting Notes: We learned a great deal from Nelson about the ways we can experience and enjoy wine. “80% of the wine experience is olfactory, it happens through the sense of smell. To look, swirl, sniff are the first three steps to taste.” The wines we tasted on today's episode are both available at BC Liquor Stores. The first was the 2018 Cairanne from Boutinot and the 2020 Gigondas from Dom Brusset, both from the Rhone region in France.

Welcome to Episode 1076 Cynthia Chaplin interviews Iris Rideau, in this installment of Voices, on the Italian Wine Podcast. More about today's guest: Iris Duplantier Rideau was born in the Crescent City section of New Orleans in 1936. She learned how to “pass for white” from her light-skinned grandmother. To escape the blatant racism of the South, Rideau convinced her mother to move to Los Angeles when Rideau was 12 years old. Forced to drop out of school when she became pregnant at 15, Rideau enrolled in night classes, determined not to spend her life working in dead-end jobs available to women of color. On her own, she landed a front-office job at an insurance agency. In 1967, Rideau founded her own insurance business, becoming the first minority/woman-owned firm to specialize in federally funded programs. She assisted LA's Mayor Tom Bradley in developing the city's first Affirmative Action Program. In the 1970s, she founded Rideau Securities and Investment Firm that specialized in pension planning for municipalities, ultimately leading to her illustrious career as California's state director for a national pension planning company. She was awarded the city's Deferred Compensation Plan contract, resulting in $500 million under management by the time Rideau retired in 1999. Rideau left Los Angeles to build her dream home in the Santa Ynez Valley. Nearby, she discovered an abandoned Santa Barbara Historic Monument adobe house built in 1884 sitting on 22 acres of property. Combining her love of entertaining with her business savvy— (though nothing in the winery world!)—Rideau boldly purchased the property and restored the old house. She planted the vineyards to imported Rhone vines from the south of France, built the winery, and created the award-winning Rideau Winery, one of California's top wineries in the Santa Ynez Valley. Rideau has always given back to her communities, first Los Angeles, then the Santa Ynez Valley. As a woman-owned winery, she hired female winemakers, assistant winemakers, and tasting room staff —something unheard of in the 1990s. During her lifetime, Iris Rideau has proved that her belief in a higher power and her confidence in herself have guided her successful life's journey—shattering those glass ceilings one by one. Rideau's memoir, From WHITE to BLACK: One Life Between Two Worlds chronicling the events in her extraordinary life will be published on Juneteenth (June 19, 2022) in hardcover, softbound and e-book formats. To learn more visit: Website: Iris Rideau Website Instagram: Iris Rideau Facebook: Iris Rideau About today's Host: Cynthia Chaplin is a VIA certified Italian Wine Ambassador, a professional sommelier with FIS and the WSA, a member of Le Donne del Vino, and a Professor of Italian wine and culture. They found it in the Adelaida District of Paso Robles and built one of the best wineries in California. Jason Haas of Tablas Creek. Photo from Tablas Creek   Jason doesn't just oversee the business, winemaking, and sales and marketing operations, he also is actively involved in the Rhone Rangers (they promote Rhone varieties in California), the Paso Robles Wine Country Alliance, Family Winemakers of California, and he is a talented and prolific writer. His clear and educational writing has been published in many wine publications as well as the award-winning Tablas Creek blog.      Jason is a big advocate for Paso Robles but also a passionate champion of more sustainable, earth-friendly solutions in the wine industry. He is a pioneer of the regenerative organic viticulture program in California, which we will discuss, and he is the first premium winery in California to put his wine in the sustainable 3 liter bag in box. This is Jason's third appearance on the show and this time he updates us on all the work that he and Tablas Creek have done to push forward in making their vineyard and winery ever more gentle on the environment. They are leaders in California and in global thinking in wine and they are forging a path for the others to reduce their impact on the earth in wine. I'm excited to have Jason on the show again and I think you will love this show.   The wines of Tablas Creek. Photo: Tablas Creek Website   Here are the topics we cover:   We discuss how Tablas Creek moved from organic, to biodynamic and now to regenerative farming. Jason explains the difference between regenerative farming, biodynamics, and organics so we have it all clear.     Jason talks about some of the limitations of organics and biodynamics. He is nice enough to indulge me in a conversation about the famed biodynamic “cow horn” and why the idea behind it and many other biodynamic concepts are great but overshadowed by the more “cosmic” stuff in the philosophy.     We discuss dry farming and the conditions for it to work. We talk about how important it will be in the future.     The sheep of Tablas Creek. Photo from Tablas Creek Jason talks about wine's biggest impact on the environment: Packaging waste and transport. He tells us about his decision to put Patelin de Tablas rosé into box and the positive reception it received. We discuss the many ways packaging and transport can and may evolve to make wine's impact on the earth minimal. We talk about the possibility of everything from bottle washing (We briefly discuss Caren McNamara from Conscious Container) to wine in bladder transport.     Jason shares some other ideas about how we can move to a more sustainable future for wine and some of the important logistical challenges we must face to be successful in the fight against climate change.   Patelin de Tablas Rosé in box Photo from Tablas Creek   Podcasts referenced Ep 414: The Refillable Wine Bottle Revolution to Combat Climate Change with Caren McNamara of Conscious Container Ep 432: Agroforestry -- An Answer to Wine's Biggest Environmental Challenges with Jean-Baptiste Cordonnier of Château Anthonic in Moulis-en-Médoc   Previous shows with Jason Ep 281: 30 Years of Tablas Creek with Jason Haas Ep 162: Jason Haas of Tablas Creek in Paso Robles, CA Documentary on Fungus:   Fantastic Funghi _______________________________________________________________ Thanks to our sponsors this week: Our new sponsor: Wine Spies! Today Annie Sargent talks with Brian Revel about a trip he took in France with his father on the theme of the Napoleon Route. The Villages on the Napoleon Route This route takes visitors from the Mediterranean all the way to Grenoble in the Alps. It is spectacular because the landscapes are ever changing and often breathtaking. The big hits are the village of Castellane in the Verdon, Tauleanne, Senez and Barrême, Chabrieres, Sisteron, Gap and all the way up the Rhone. And since it's all tied to the steps of a fallen Emperor making his way back up to Paris to reclaim what he saw as his rightful place makes it a wonderful story. Accommodations Recommended in this Episode La Maison du Bois Doré B&B in Montagnac-Montpezat For a Deeper Dive into the Napoleon Route Des Racines et des Ailes brief summary of the Napoleon Route on YouTube (in French). The authentic way to retrace the steps of Napoleon is to walk it. This is the walking path between Castellae and Sisteron called GR 406. You'd rather ride or drive it? Look for la Route des Grandes Alpes between Lac Léman in Switzerland and Nice. These guys did it with electric bikes. They did it in a "camping car" (travel trailer) and their cat. A group that did it on motorcycles and tents (and a dog!). With fancy cars and a drone. You get the idea, there are many ways to do this! Bastille Day in Paris Brian spent Bastille Day in Paris and shares tips on where to stand to watch the parade. It is also quite different in Paris than in other parts of France. Dan and Steve. Steve Situm from Carol Shelton Wines is our guest today on California Wine Country with Steve Jaxon and Dan Berger. Steve Jaxon begins by reading the story from Carol Shelton's website, about how her mother played a game with her where she had to identify spices by their scent. She has been making wine for forty-two years and was the winemaker for Rodney Strong who made all of their award-winning wines. Since she did not get the recognition that she thought she deserved, she started her own label under her own name. Carol Shelton has been on California Wine Country on this February 6, 2019 episode, and again on this other episode from July 22, 2020. Steve Situm started in wine in 1962 as a salesperson, and he worked with many of the greatest labels in the business. He considers her to be the greatest winemaker he has ever worked with. Dan Berger says that Carol Shelton is also great at selecting vineyards. It takes years of analysis before she purchases a vineyard. Steve Situm has been in wine sales since the early 1960s. Carol Shelton wines are in 43 states and “the wine speaks for itself” when he is making a sales presentation. Carol Shelton tells her story on her website about the resistance she encountered as a woman winemaker. Dan remembers that Carols was making wine in the mid and late 1970s and later, in the 1980s she showed a sixth sense for varietal character and personality in wine. Click the logo to visit our sponsor Rodney Strong for the latest on the 2022 Summer Concert series. The 2021 Coquille Blanc Rhone-style blend is a good example of that. This has Grenache Blanc, Roussanne, Marsanne and Viogner, the four best of the Rhone varieties. Carol's style is all about balance. She also uses no pesticides and organically farmed fruit. Carol Shelton Wines tasting room is 3354-B Coffey Lane in Santa Rosa, in the Coffey Business Park. Reservations are required at the website or by calling (707) 575-3441. There is nothing like the wines that Carol Shelton makes. Now they are tasting the Coquille Rouge, the other blend. Dan mentions that in the 1940s and 50s, the wines coming from this region were rather generic blends all called “Burgundy.” This blend is similar to those but it is more stylish in the way it represents the Rhone Valley in France. Some of these wines are from 100-year-old vines in Contra Costa County. There are 5 varieties in this blend, all barrel fermented in French oak. Dan says there is nothing like this coming from any winery, with a great bouquet and a silky finish. Steve mentions this is Carol Shelton's signature style. It is also an incredible value, at about $26. Click the logo to visit our sponsor Bottle Barn online for the coolest bargains on wine, beer and spirits. Carol Shelton has more awards than any winemaker in the country. She has been awarded Winemaker of the Year eight times. Four of her wines have been in the Wine Spectator's Top 100 in the last eight years. The third wine tasted is a Rockpile reserve. The vineyard is gorgeous, says Dan. Carol Shelton recommended that the grower make some changes which had a great effect on the wine. The wine gets about 18 months in mostly French oak. It tastes more like a Cabernet than a Zinfandel, he thinks. This 2019 is as good as the 2018, which was the best Dan tasted that year. At well under $40 at Bottle Barn, it is a great value.

Our wine mystery keeps traveling the world to Dubai, Hong Kong, Bordeaux and Portugal uncovering motives and phylloxera intrigue. Malcolm, Corvina and Brian uncover a remedy developed for a phylloxera outbreak before the outbreak breaks out. Tres suspicious! There are also shadowy investors buying patents for this remedy that would have no value until those nasty little aphids are put into action destroying the vineyards of the world. Can our heroes get to the root cause and save the world's wine from phylloxera? Listen to this second podcast to find out. What we can tell you without spoiling the novel, is that when phylloxera actually decimated wine crops around the world in the late 1800s one Texas man, Thomas (T.V.) Munson, was hailed as the conquering hero for developing over 300 disease resistant grape rootstocks that were grafted into the world's grapevines to make them phylloxera resistant. He is truly an unsung hero, so we lift our glasses to him today…filled with lovely Texas wine of course! We are saluting Munson's passion for viticulture with two more William Chris wines: a 2020 Artist's Blend Red, made with four single vineyard Rhone style grapes, and Black Jacques, a red dessert wine made in the Madeira style. The Artist's Blend brings the character of all the grapes combined to create a peppery, smoky, fruity red that coats the drinker's mouth. The Black Jacques, on the other hand, is sweet, caramelly and balanced, like a heat-soaked version of an ice wine. Elizabeth (Liz) Gabay, Master of Wine, is the world's foremost expert on rosé and a big part of her career has been studying, writing about, and understanding rosé. Ben Bernheim, her son, is now learning from her wisdom and and is a specialist in his own right. The two of them have just completed the excellent book “Rosés of Southern France” (which is now available on Amazon for purchase. Liz is largely responsible for shifting the tide on rosé and helping people to understand that this wine is its own serious category that deserves thought, study, and consideration. In addition to the new book, Liz is the author of “Rosé: Understanding the Pink Wine Revolution,” and she is also a contributor on rosé in Decanter, The Drinks Business, The Buyer, SevenFiftyDaily, Meiningers, and many more prestigious publications. Photo: https://www.elizabethgabay.com/about/   The wisdom these Liz and Ben have on the subject of rosé is vast, and they are so fun, engaging, and real, that they make it all so interesting and accessible. This is an incredible education on rosé and will enjoy every minute of listening to these fantastic humans. Photo: Ben Bernheim, taken by me when we were partners in a Beaumes de Venise mini-class in the Rhone Valley 4/22 Here are the things we discuss in the show: Liz talks about her background and how she got into wine. She discusses how, when she took the MW, it was a professional certification, and how it has changed dramatically over time. She discusses how she got into rosé, and how Ben got involved in it as well. Then we get into the nuts and bolts of rosé Liz and Ben define rosé (harder than you think!). We discuss he book's intro and what rosé is really about: “We love rosé. We love its diversity, its complexity, and the infinite combinations of terroir, grape variety, vintage variation and winemaking that we find around the world. Many people think we're crazy. They see rosé as a pale pink lightly alcoholic swimming pool tipple that somehow tastes better if you're wearing a bikini. That isn't what this book is about. “ Photo credit: Canva Liz and Ben tell us about rosé winegrowing: Grapes that are commonly used(red AND white!) The role of terroir in rosé The picking decisions and harvest parameters that matter in making rosé Climate change and how it is affecting grapes for rosé We talk next about rosé winemaking We discuss the various ways to make rosé – direct press, limited maceration and saignée We talk about some of the key factors in rosé winemaking: Time on the skin Yeast strains Co-fermenting with whites Fermentation vessel (oak v. stainless) Temperature control in fermentation Malolactic fermentation vs. no MLF Aging/storage vessel and time – oak, cement, glass, amphora, etc Photo credit: Canva  Liz and Ben tell us why rosé, can be ageworthy and why most isn't. We also talk about lightstrike and why clear bottles are the worst thing for rosé.   We cover the wines of the southern Rhône -- Tavel, Luberon, Ventoux, the rosés of Provence and Bandol and the wines of the Languedoc-Roussillon. We have an interesting conversation about Costieres di Nimes, which really drives home how certain regions can be outstanding but if they don't send in samples to writers, or market their wines, they remain unknown.   Liz and Ben help us understand how to buy better rosé. They provide some shortcuts for finding better wines – like looking for sub regions in Cotes de Provence such as Ste. Victoire and La Londe. We talk about how using Google maps to see where the winery is located can help you get better wines (e.g., If it's in a cool mountain area, it may be crisp, if it's nearer the ocean the wine may be fatter). They discuss how essential it is to find out about the producer, since often producers want you to see the name “Provence” and buy the bottle…if you poke around a bit you may get a better idea about what you are getting so it's not a surprise or disappointment   Liz and Ben tell us about the trends in rosé – why it has become so popular, and what are great regions we should keep an eye on. Liz's recommendations for countries/regions that have been making intresteing rosé (besides France!): Austria, Greece, Sicily (Etna especially), Spain (Clarete from Sigales, Rioja, Ribera del Duero, Navarra), Portugal (Douro, pink Port), Israel.   We end with a conversation on the future of rosé and what Ben and Liz hope for the category.   This is a fantastic conversation about a category of wine that is experiencing a big paradigm shift. Liz and Ben are some of the most normal, kindest, smartest people I've met in wine in a long, long while and the show is sprinkled with a ton of industry information – insider things that can help shed light on what goes on with producers, negociants, and writers.  I hope you enjoy and you are motivated to buy their wonderful book!
