If you've ever entertained a visiting brewer from overseas, one of the first questions you are normally asked is - where can we go for a great pint of cask beer? As decorated author Des de Moor tells us in his new book, cask beer is a unique format of fresh, live draught beer that, at its best, delivers a taste experience unmatchable in any other way. But despite it being revered by fans across the globe, sales of cask beer in the UK continue to suffer. In his latest article for The Brewers Journal, former Fuller's brewing director John Keeling observes that throughput is down, inspections are less rigorously enforced, and training is intermittent. To many, John Keeling surely needs no introduction. But for those unaware, John is the former brewing director of Chiswick, London-based Fuller's. Regarded and respected the world over for his ability to create and brew beers defined by balance and flavour, John is using his retirement to collaborate, consult and create with breweries across the globe. In this episode, we speak to John about his early career, what got him into beer and also brewing as a profession. We discuss his move to Fuller's and what he learned from colleagues over the years such as Reg Drury, Derek Prentice and Georgina Young. We ask him what he makes of the current brewing landscape and the challenges facing it, along with the advice he has for people working in and running breweries today. We discuss his love of music and also the beer industry, both in the UK and overseas, and how that can sometimes influence his travels with wife Symone.
Last year's release of Prize Old Ale was a real highlight for many fans of excellent beer. But the journey of this storied beverage, that classic fruity, strong, dark ale, goes back somewhat further.Originally a recipe from George Gales & Co, a great deal of interest was generated by the latest version of Prize Old Ale, which was brewed at Dark Star by head brewer Henry Kirk.According to John Keeling, the former brewing director at Fuller's and a previous colleague of his, Henry made a version of great character and personality – much like himself.For those that don't know, Henry is a celebrated brewer. Previously the head brewer at Dark Star and has worked in a variety of breweries including Fullers over the past 12 years.He is also passionate about old British styles and cask beer. John Keeling joined the brewing industry as a laboratory technician for Wilson's Brewery in Newton Heath, Manchester in 1974 and, inspired by what he saw, left in 1977 to study for a degree in Brewing and Distilling at Heriot-Watt University in Edinburgh. January, 1981 saw him join Fuller's as a Junior Brewer. He has since held various positions at Fuller's culminating in his promotion to Brewing Director in April 1999. During his time as Director, over £60 million has been invested in developing the brewery. In January 2017, he handed over the reins to Georgina Young, Fuller's first ever female Head Brewer, but remains a Global Ambassador for the company.John is an acclaimed judge and speaker at many beer competitions around the world including several Beer World Cups and the Australian International Beer Awards.

Fuller Smith & Turner—or Fuller’s as it’s more commonly known—is the oldest surviving brewery in London, as well as being one of its largest. Fuller’s has been brewing at The Griffin Brewery in Chiswick, West London, for more than 160 years. The face of the British brewing industry has undergone tremendous change many times over during the course of its existence. Now, in 2018, the brewery faces fresh challenges. For instance, finding relevance in a market that constantly craves the rare and the new, while still championing traditional styles in an age of Hazy IPAs and Pastry Stouts. Surprisingly, this hasn’t phased Fuller’s one bit. Along with some of the UK’s other historical breweries, such as Adnams in Suffolk and Harvey’s in Sussex, Fuller’s is ensuring that styles such as Porter and ESB remain as relevant to the beer market as ever. Behind it all is the ebullient Brewing Director, John Keeling, who has been employed by Fuller’s for 37 years. Keeling has worked in the brewing industry since the 1970s, initially for the now-defunct Watney’s, then studying brewing science at Heriot Watt University before finally settling at Fuller’s. He became Head Brewer in 1999, a role he passed on to Fuller’s current Head Brewer Georgina Young in January 2017. Over this time he’s witnessed Fuller’s shift from being a completely manually operated brewery, to one that is almost entirely automated and state of the art. Keeling has been instrumental in ensuring that Fuller’s legacy be preserved. Be it by reviving historical recipes from the archives, by collaborating with the UK’s latest crop of brewers such as Fourpure and Cloudwater, or by constantly championing the simple pleasures found within a pint of Fuller’s flagship beer, London Pride. In October 2018 Keeling will retire, leaving an illustrious brewing career behind him. The industry won’t be getting rid of him that easily, however, as he’s just been voted chairman of The London Brewers Alliance, a guild that supports the collective interests of London’s independent breweries. Over the next hour we discuss—or perhaps I should say John discusses—subjects ranging from the history of Fuller’s, to the importance of cask ale, to the price of beer, all the way up to his favorite subject: the philosophy of brewing.
