What beers have you enjoyed brewing lately? For today's guest it would probably be an alcohol-free Negroni sour, or perhaps an alcohol-free Margarita Gose.Quite the shift from Delirium Nocturnum, the Belgian Strong Dark Ale that helped open her eyes to the wonderful world of beer. But for Caitlín McErlean, part of the team at Manchester-based Cloudwater, her journey in brewing has been anything but conventional.For Caitlín, a love of languages would lead her to a degree in Chinese Studies. Originally from Milton Keynes, a move to university in Durham would not only broaden her linguistic horizons but also broaden her palate, too. In this episode, we discuss Caitlín's early days working at the Head of Steam in Durham and how that helped introduce her to the myriad of beer styles that exist across the globe. We discuss how becoming a brewing apprentice would help her secure a dream job in her dream city and also how, at Cloudwater, she has been able to further pursue her love of creating no- and low-alcohol beers.

Have non-alcoholic cocktail menus gone the way of the BlackBerry? Milan Martin thinks so, and he has good reason to believe it. Milan is the founder and CEO of The Free Spirits Company, a brand of hand-crafted, non-alcoholic spirits and RTD cocktails. Founded in 2020, the company markets zero-proof bourbon, gin, tequila, amaro and vermouth, along with a canned margarita and Kentucky mule. Milan's vision is not to replace spirits from consumers' drinking occasions, but to empower them – and bartenders – with the optionality to create no- or low-proof cocktails, depending on their mood and setting. Free Spirits products are produced using a process it describes as “distillate reconstruction.” The company sources natural ingredients – American white oak, European juniper, and Mexican blue agave, to name a few – and distills their essences while reconstructing the nose, flavor notes and mouthfeel of traditional spirits. Vitamins B3 and B6 are also added to enhance the consumption experience. In our interview, Milan talks about the “aha” moment that led him to create The Free Spirits Co., why flavor improvement is a process, how to convince someone who didn't like a product the first time to give it a second try, and why he's bullish on the brand's RTD cocktails. We went Marvin's in Malmö a couple of months ago. Unfortunately they had a fire before we released the episode and we decided to hold the episode until they reopened. During the summer they have english muffin sandwiches. We reviewed those this episode. During the winter, they have traditional British pies (which are also amazing). If you're a citra fan, this beer is for you. This is an update of a 2017 release and it's a banger. Cloudwater shows why they are kings of British DIPAs. Pentrich has been making waves in the British IPA crowd. Birthdays in Isolation is part of their 4th anniversary that was brewed during COVID lockdown. This TIPA uses citra, simcoe and nelson sauvin. Manchester has a fascinating beer history, stretching back well over two centuries, and into the industrial revolution. What's remarkable is how that history still influences the northwestern city's beer culture today, whether via one of its four, storied family brewers like Robinson's or JW Lees, or one of its modern trailblazers such as Track or Cloudwater. One of the city's most unquestionably influential breweries is Marble, which was originally established in the Marble arch pub in 1997. The brewery has since gone through two expansions, its most recent in 2019 when it relocated from Manchester to Salford (the difference of which is very important to locals). The latest episode of our podcast takes place here at the brewery, where we hosted a panel discussion in front of a live audience, and delved into the recent history of the Manchester beer scene, as we joined in Marble's 25th anniversary celebrations, which took place towards the end of 2022. Hosted by our very own Matthew Curtis, the panel features a host of luminaries from within the Manchester beer scene, including Jason Menzies, Marble's events manager. We're also joined by Stephanie Shuttleworth, a former Marble employee who has worked in and around the Manchester beer scene for over a decade, and is currently working on a PhD centered around pubs and brewing. Last but not least we're joined by John Clarke, chair of Stockport and South Manchester CAMRA, who has been living and breathing beer in Greater Manchester for over three decades. It's a fantastic discussion, and one of our lengthiest to date, as there was so much interesting history to talk about. Graphic designer by day, but drummer for the progressive pop metal band Voyager (and others) by night, Ash is the first musician on the show, and the first guest from Australia! In this show, Ash shares his experiences as a drummer and life on the road across Australia, Europe and beyond, but more importantly, shares his beer adventures and experiences whilst doing so! To name but two, he has visited Cloudwater and Dogfish Head on his travels and hopes to do more on their next tour (TBC for 2023). Ash also discusses their attempt to represent Australia at last year's Eurovision and how they came so close, only to be thwarted by the judging panel. Is that the end of their attempts however? Shōhō Kuebast’s became “cloud and water” priests—traveling to Zen centers to offer the Dharma, meditating amid the mountains, camping in off-the-grid places in their Prius, and being in the boundlessness of now. Kōkyō Henkel has long been interested in exploring how the classic teachings of Buddha-Dharma from ancient India, China, and Japan can still be very much alive and useful here and now, to bring peace and openness to the minds and hearts of this troubled world. Kōkyō has been practicing Zen Buddhism since 1990 in residence at Tassajara Zen Mountain Center, Green Gulch Farm Zen Center, and No Abode Hermitage—all in the Sōtō Zen lineage of Shunryū Suzuki Rōshi—and a year at Bukkokuji Monastery in Japan (with Harada Tangen Rōshi). After living in these monastic communities for almost two decades, Kōkyō was then teacher at Santa Cruz Zen Center from 2010-2020, and has been studying and practicing with no fixed abode along with his wife, Rev. Shōhō Kuebast, since 2020.Kōkyō was ordained as a Zen priest in 1994 by Tenshin Reb Anderson Rōshi, receiving the Dharma name Kōkyō Yakai (Luminous Owl, Midnight Liberation 光梟夜解). He received Dharma Transmission from Tenshin Rōshi in 2010, becoming a 92nd generation lineage-holder authorized to guide others on the path. Kōkyō has also been practicing with the Tibetan Dzogchen (“Great Perfection”) Teacher Tsoknyi Rinpoche since 2003, in California, Colorado, and Kathmandu. SparkZen is a reader-supported publication. Next weekend marks the inaugural These Hills, an intimate, carefully curated two day beer festival taking place in the town of Lewes in the South Downs National Park on the 24 and 25 June. Organised by Beak Brewery, the event features beers from breweries such as Deya, Cloudwater, Queuzerie Tilquin, Kløster, Forest and Main, The Kernel, Wildflower and many more besides.And it has been a whirlwind few years for the team at Beak Brewery. They've expanded, produced a wealth of excellent beers and collaborated with outfits far and wide. So what better opportunity to look back at our conversation with founder Danny Tapper and head brewer Robin Head-Fourman earlier last year.In this episode, originally recorded in February 2021, we discuss how opening a brewery during a pandemic is far from ideal. Life has a funny way of working out, even if you weren't sure what you were looking for in the first place.For Miranda Hudson and her co-founder and husband Bates, a chance encounter at a wedding a decade ago would eventually lead them to up sticks, start a new life in the country and open Duration Brewing – a farmhouse brewery making beers that belong.Duration Brewing secured planning consent to put their brewery on a scheduled monument site in a grade II* building back in September 2017.Early on, they worked with partners such Manchester's Cloudwater and Oslo's Amundsen to produce beers nomadically. That's in addition to an array of collaborations with UK breweries including Deya, Verdant and Burning Sky.But fast-forward and the Norfolk brewery would cap a successful 2021 with a sleuth of awards.This included being recognised with two of the highest accolades in UK Brewing as Best New Brewery and Best New Beer for flagship American Pale Turtles All The Way Down at our own Brewers Choice Awards.Collecting those awards marked the start of a busy few days for the Duration duo with co-founder Bates stepping away from the brew kit to deliver one of the opening talks at our annual Brewers Congress.A rare public speaker, Bates gave an impassioned and rousing talk on how in building the business he has worked in structures and processes to make beers that belong with a deep respect of their impact.As well as discussing circular waste practices he also talked of his ambition to not grow exponentially and perhaps instead do less with more to stay creative while also putting mechanisms in place to allow for owner-operators with staff equity.And we're sharing that very talk as this week's Brewers Journal Podcast... In this episode, we're joined by Marc Siden, Co-founder and CEO of Cloud Water. Marc talks about the challenges of leading his company through the last year of COVID and how they've been able to thrive to become stronger through these unprecedented challenges. Additionally, he shares the difficulties and opportunities in the beverage space, specifically on how to compete against established giants like Coca-Cola. Lastly, Marc shares the importance of understanding your landed costs, distributor margins, retailer margins, shipping and promotional costs, and why this is absolutely vital to your success as a physical products company.
When Cloudwater Brew Co. was founded in Manchester six years ago I was desperate to be the first to get the scoop on this exciting new brewery. This opportunity came in September 2015, when on a typically rainy Manchester day I met a smiling Paul Jones—the brewery's often outspoken owner and founder—at the entrance of his brewery for a tour, tasting and interview. The article I would subsequently write was published by Good Beer Hunting in January 2016, and was one of the first proper dives into what motivates Jones and his brewery, which at the time was single-mindedly focused on producing what it described as “Modern Seasonal Beer.”On re-reading the article in late 2020 it felt to me like it was written about what could be a different brewery. Yes, Cloudwater is still focused on producing high-quality, seasonally reflective beer, but in the years that have passed since, they've become something more. Not only has Jones grown his workforce from just six to over 50 people, but the brewery pays what is an industry-leading wage and is heavily invested in activism. From supporting charities like The Racial Justice Network, to giving breweries like Rock Leopard, Eko and Queer Brewing what Jones describes as a “leg up” by giving them time and space to make beer on its equipment, to its groundbreaking Wayfinder scheme, Cloudwater has since become a great deal more than merely the sum of its parts. This is not without some controversy. The decision to bring sales in house during the pandemic to, as Jones puts it “protect his staff” temporarily cutting off independent retailers from its beers caused a certain amount of ire. This was amplified in early 2021 when the brewery reversed its decision to list in national grocery chains, listing four beers contract brewed by BrewDog, no less, into Tesco. However, this also gave it the opportunity to further the platform of the Black and LGTBQ+ owned breweries it was working with by also giving them a national supermarket listing, the first instance of this happening in the UK. If you also consider that Cloudwater did not make a single redundancy during the pandemic, Paul's malleability in terms of his decision making might not seem so controversial to some. In this interview we discuss all of this and more. It's been a busy few years for Paul Jones and Cloudwater, so this felt like the ideal way to reflect on them, on the Manchester scene, and how its own beers have changed and developed during this time.
