Det goda franska köket av Simone Beck, Louise Bertholle och Julia Child. Disciplin, lydnad vid grytorna och underkastelse är de tre viktigaste ingredienserna i denna klassiker från 1961. Det finns kockar och det finns kockar. Det finns kokböcker och det finns kokböcker. Och så finns det Julia Child och hennes Det goda franska köket. Julia Child liknar föga dagens arga tv-kockar, men det var hon som satte i gång alltsammans. Hon var inte den första att laga mat i TV, men det behövdes bara några minuter då hon lagade en omelett för att genren skulle leva upp. Och för den som verkligen vill lära sig laga klassisk mat är Det goda franska köket lika grundläggande som notsystemet för en musiker. Därmed sagt att både författaren och boken är i en klass för sig själva. När Julia Child öppnade köksdörren i tv, öppnade hon också dörren till en annan värld och en annan tid, bägge skrivs Europa. Som en Linné ordnade hon smakernas rike så att alla skulle kunna laga mat och förstå vad de åt. Det handlade förstås om djup kunskap men lika mycket smakens centralperspektiv. Julia Child var en Mat-Missionär. En omelett är inte bara en omelett.  Precis som i alla sagor så var de goda féerna tre: Julia Child kom från USA och såg, nästan en och 90 lång, inte ut som reklamens husmoder. Hon hade arbetat som copywriter och sedan under kriget med olika former av underrättelsetjänst. Simone Beck och Louisette Bertholle träffade Julia Child i Frankrike dit hon åkte efter kriget eftersom hennes man hade en lägre befattning på franska ambassaden i Paris. Nu blev den sysslolösa före detta underrättelsebyråkraten kock. Hennes franska väninnor visade riktningen och hon lärde sig snabbt. En station var Cordon Bleus berömda köksskola. Det där var inte Julia Child, det var myten om Julia Child. För hon har förstås porträtterats många gånger, här av Merryl Streep. Det goda franska köket har jag haft länge, den där hemma är alldeles kladdig så nu har ajg skaffat en ny. Speciellt sid 347 återvänder jag till. Lammstek penslad i en slags smet med senap, olivolja som huvudingredienser. Det jag gillar med Det goda franska köket är den passionerade kyligheten. Inget inbjudande tjatter om läsarens personliga smak, inget utrymme för subjektivitet. Det är inte mer improvisation när man tillagar en lammstek än när man monterar en kulspruta. Matlagning är först vetenskap, sedan hantverk, sedan möjligen, om begåvningen finns där konst. Men först vetenskap. På engelska heter boken Mastering  the Art of French Cooking.  Bemästra är nyckelordet. När Det goda franska köket var färdig så refuserades den av ett förlag med motiveringen av att den var mer en uppslagsbok än en kokbok.  Titeln speglar nog Childs ansträngningar att ta sig från salongen till köket, men uppslagsverk är då inte boken. Nej, snarare då en motsvarighet till Shakespeares samlade verk. Här finns allt. Ljud Boeuf Bourgignon Numera är det vanligt med kokboksförfattare som så där lite i förbifarten förandligar maten, gör kulturella kopplingar de näppeligen behärskar. Julia Child sysslar inte med sådant. Hon förmedlar en samlad kunskap från generationer av kockar, en kunskap som är en lika självklar del av fransk kultur som Descartes eller Sartres böcker. Som amerikan fick hon erövra detta enorma kulturarv, som tv-kock måste hon i sin tur erövra publiken. Hon gör det trygg i förvissningen att mat är viktigt.    Naturligtvis var hon en rätt bisarr figur i dåtidens tv. 2009 gjordes ett försök att skildra henne på film i Julie och Julia om en ung matintresserad kvinna som bestämmer sig för att laga sig igenom Julias recept. Julia spelas av Merryl Streep. Här ett par klipp. Först Merryl Streep, sedan den verkliga Julia.  Det är förstås något övermänskligt med Julia Child, hon var liksom i Cinemascope format redan från början. Därför är hon omöjlig att förkroppsliga.  I kokboken avslutar de tre författarna sitt förord med att likt en idrottstränare be läsaren öva sina händer och fingrar de är underbara instrument förklarar de. Det är kombinationen av disciplin och dold sensualism som fascinerar. All denna träning för att framkalla njutning. Och det är förstås värt att tänka på när jag är lite stressad inför helgernas måltider. Matlagning ska ju vara roligt, inget arbete. Fast skulle Julia ha sett det så? Nej, hon gjorde nog ingen skillnad mellan arbete och njutning.   Det märks i henens fulsnygga kök, numera utställt på museum. Också jag har två spisar, professionell fläkt. Diskbänk som man kan skära direkt på osv. Men för Julia Child var köket en scen. Eller kanske ett slagfält. Eller en plats för riter.  Det är något oåtkomligt med hennes sätt att luta sig fram mot tittaren. Något med den där totala övertygelsen om att slaget vid kastrullerna kan vinnas men att det handlar om något annat än mat. Suck Undrar om jag kan ändra lammreceptet och ta mer ingerfära. Nej, då kommer Julia och spökar i natt. OK, så är efterrätten kvar. Det gäller att skärpa sig. Man måste förstå att det som är skrivet som ett matrecept egentligen är ett recept för hur livet ska levas. Kan man inte erbjuda gästerna evig kärlek och lycka bör de åtminstone få chokladmousse. Ancestry.com recently added 220 million searchable historical records from Mexico, including birth, marriage and death records. These records date back to the 1500s. In addition, they launched Ancestry Mexico, a Spanish-language interface for those who want to use their tools to search their family histories. We are joined by our friend Leticia Manzano for an entertaining conversation about the actors and actresses we love, both for the “babe factor” and their acting.
