I decided to take him up on his offer this past January. In a nutshell, darkhouse spearing involves sitting over a large hole in the ice and throwing spears at passing fish. In reality, though, there's much more to it, and we dive into it in this episode. This episode was recorded in a brewery after one of our days on the ice at -37 degrees. The decline in the numbers of American hunters and anglers is not just bad news for our connections to the natural world and for our heritage. Because the North American Model of Wildlife Conservation is based on the robust sale of hunting and fishing licenses, the decline is hitting us all right where it hurts most: in funding for habitat projects, public lands management, restoration,  scientific research, access, and on and on. What is the answer? FISH Cookbook In today's podcast I sit down with Jamie Carlson and special guest Jon Wipfli. Jon is a Twin Cities chef who grew up in Wisconsin and then went off to get trained at the French Culinary Institute in New York before heading back to the Midwest (Minnesota) where he continued his food journey. He's the founder of Animales Barbeque Co. which sits just outside of Able Seedhouse brewery in the North Loop neighborhood of Minneapolis. He's also the author of the cookbooks VENISON, and the forthcoming FISH cookbook (links below). Jamie, you are probably familiar with as he is a regular contributor on Modern Carnivore and if you haven't checked out a couple of his recent recipes, I highly recommend it. One of them is a nettle pasta and if you think about stinging nettles, they're generally something that you want to avoid when you're in the outdoors because obviously they can create a stingy irritation, uh, to your skin. But Jamie shares with everyone a recipe for turning these wild weeds into this beautiful green pasta, which I think is pretty fascinating. Another recipe he recently did was a venison heart tar-tar. If you have not eaten heart from a large angulate like a, like a deer, you're missing out. The tar tar recipe is, is essentially a way to prepare it raw and, uh, I've had heart with Jamie before and I know he knows how to prepare it very well and so I think you would find that recipe fascinating. Welcome to episode number eight of Modern Carnivore Podcast. Mark:   00:30       Today we're going to talk about Wilderness areas. And more specifically, we're going to take you to the Boundary Waters Canoe Area Wilderness, which is the most threatened Wilderness in the U.S. So before we get into that, let's do a little background on what we mean by wilderness with a capital w. The Wilderness Act was signed into law by President Lyndon B Johnson in 1964 and it created the National Wilderness Preservation System and it also put a legal definition around the term Wilderness. One of the primary authors of this act, Howard Zahniser, uh, defined it this way, "A Wilderness, in contrast with those areas where man and his own works dominate the landscape is hereby recognized as an area where the earth and its community of life are untrammeled by man, where man himself is a visitor who does not remain. BWCAW Hunting and Fishing Mark:   01:43             It's really protective overlay that's applied to certain areas in our country; certain areas of public lands. They could be national forest parks, wildlife refuges, any number of different places. Um, one of the criticisms that has been made in the past about it is the reference to quote man himself as is a visitor who does not remain. But I think that's the critical element of it and why it is really unique. So if you think about it, there are very few places where there are no buildings, no roads, no machines, and the only really semi-permanent structures I can think of would be these throne toilets. Basically a seat to sit on and do your business and the fire grades to control where you, where you do fires. And that's specific to the Boundary Waters where we're at today. And I think that's a pretty special thing in something that is, that is needed in this world. Mark:   02:52

This is a position that is appointed by the Governor of Minnesota. Tom has been in this position for eight years, overseeing the management of wildlife and habitat across the state. Today I'm joined by Tom Landwehr and this is actually a recording from back in 2017 at the Minnesota Governor's deer hunting opener event, and this is an event that's gone on for many years here in Minnesota and I think is a great reflection of the importance of deer camp culture and the deer hunting season to our state, that the Governor would put an event like this together. Commissioner Landwehr is now ending his tour here as the as the Commissioner of the Department of Natural Resources in early 2019, and so I thought it was appropriate to get this podcast recording out as the commissioner of the DNR. He is appointed by the governor to really enforce hunting, fishing and outdoor recreation laws, and also manage much of the public land that exists within the state of Minnesota. There are also federal and county lands, but they're much of it is managed by the state, which is then managed by this organization, the Department of Natural Resources for both recreation as well as industry like timber and mining. They also deal with threats to the land and water like invasive species in diseases like chronic wasting disease, that's starting to affect the deer herd in different areas of the country. Stepping back for a moment, if you look at the North American model for conservation, one of the tenants of it calls for scientific management of wildlife and habitats and state agencies are a big part of that management model. In Minnesota it's called the department of natural resources or the DNR. In other states it's called game and fish or the department of fish and wildlife or ...

They've got 150 wildlife biologists that work with them across the country and they've got nearly 150,000 members that are in, I think over 700 chapters across the country. In this fourth episode of the Modern Carnivore podcast I sit down with Daniel Galhardo who is the founder of tenkara fly fishing company - Tenkara USA. His company designs, manufactures and sells equipment used in this growing trend in fly fishing called tenkara. This simple form of fly fishing has its origins in the mountain streams of Japan where it's been used to catch trout over the last couple of hundred years. The word tenkara literally means "from heaven" or "from the skies". While there are similarities to the Western-style of fly fishing, they each developed independent of each other. Daniel introduced this type of fishing to the U.S. and started Tenkara USA in 2009. Daniel was the first person to bring the method of fly fishing called Tenkara outside of Japan, and he founded Tenkara USA in 2009. This style of fly fishing is an ultra simple way to get out on the water. And that's why I think it's a great way for somebody to really dip their toe into the world of fly fishing. And even if you're familiar with Tenkara fly fishing, I think you're gonna. Enjoy Daniel's story here today, and him sharing what it's all about and why he brought it to the US. We talk about the history of the technique, how we got into it. Uh, and then we touched on the topic of killing fish, which is a complicated discussion. If you're not too familiar with fly fishing, this is a often talked about item because a lot of people who fly fish do not take any fish...it's all catch and release. And so we have a discussion on that. And then I want to point out the daniel references the coming winter in the, uh, in this episode. Land is the President and CEO of Backcountry Hunters and Anglers, a conservation organization focused on public land issues. And Ashley is both a member out of the Minnesota chapter of that organization. Uh, but most importantly she is a new hunter. Just started hunting a couple of years ago. So today's podcast, we talk about public lands and threats to them. And this is important because I think a lot of people don't realize that public lands in the US are truly the backbone of the North American Model of Wildlife Conservation. And without getting into too much detail here, this model was formally articulated, to be honest just in the last couple of decades, but it's built off the attitudes in work of many people in the hunting and fishing community, going way back to the nineteenth century, there are seven tenants to it and the seventh one is about the democracy of hunting, which is really based on inspiration from the work that Ted...

In this second episode of the Modern Carnivore podcast I sit down with Robyn Migliorini who is a vegan turned hunter. Robyn and her husband Nick were strict vegetarians, and then vegans, until their bodies started giving feedback indicating that they weren't getting all the nutrients they needed in their diet. However, considering the idea of bringing meat back into their diet was difficult because they originally became vegetarians in part due to all the problems with "factory farming". As a result they started exploring the idea of becoming hunters and responsibly sourcing meat themselves. Robyn's story is very engaging and her perspectives and thoughtful considerations can be appreciated by all. I am your host for the Modern Carnivore podcast and I'd like to welcome you to this first episode of...our podcast. Really excited about launching this and sharing with you the conversations and interviews we've had with some really interesting people and a lot that we have coming up as many that are known and some that we'll figure it out as we go forward. People like Robyn Migliorini, Robyn grew up in Boston. She was a Vegan, started backpacking in college and eventually transitioned into becoming a hunter and was self taught. She and her husband really figured it out by watching YouTube videos and other things to really familiarize themselves with hunting. So I've got a great conversation with Robyn where she shares this journey into the world of hunting. We've also got a, an interview with Land Tawny. Land is the president and CEO of Backcountry Hunters and Anglers, which if you're not familiar with it, is an organization that is fighting to keep public lands in public hands. The whole public lands issue is becoming really interesting in last few years politically on a national level, and if you're getting into hunting and other outdoor activities, whether it's camping, hiking, or what have you, you're going to want to hear that episode and understand what's at stake and what organizations like it are doing. Land is a Montana native and has really dedicated his entire career to conservation.

This past August, the Minnesota DNR held their "Minnesota Angler and Hunter Recruitment and Retention Conference" to share information on best practices to design and deliver recruitment and retention programs. This audio is a compilation of presentations from Mark Norquist of Modern Carnivore, Matt Dunfee who is the Programs Manager for Wildlife Management Institute and joining them is a new hunter, a gentleman who proclaims himself as an "adult-onset hunter" who takes the audience through his journey from learning in a classroom to finally being outside with his mentor, Mark. Quite the story.
