Abra Berens, cookbook author and culinary director at Granor Farm in Three Oaks, offered a risotto recipe that works as the perfect catchall for your farmers market finds this spring. After you hear her tips, find the full recipe below: Spring Risotto This risotto can absorb any random spring vegetables like asparagus or ramps even baby carrots or radish. I just slice them thinly or into a small dice and then add in place of the peas. The broth is a great way to use up old parmesan rinds, but isn’t strictly necessary. 1 onion, sliced thinly 4 cloves garlic, minced ½ cup dry white wine 1 ½ cup risotto rice 8 cups water, parmesan broth, or stock, brought to a boil 2 cups shelled peas, fresh or frozen 1 lemon, zest and juice In a large frying pan, heat a glug of olive oil over medium heat Add the onion and garlic with a hefty pinch of salt and sweat until soft but not browned Add the wine and reduce until dry Add the rice and toast for a couple of minutes Add a ladle full of hot liquid to the rice and stir continuously until the liquid is absorbed Continue with an additional ladle of liquid and stir until that is absorbed Continue adding ladle after ladle of liquid allowing to absorb fully between additions When the rice is 90% cooked, add the peas and an additional ladle of liquid Finish with the lemon zest and juice along Taste and adjust seasoning as desired To serve finish with a hefty glug of olive oil and any herbs or pea shoot over the top See omnystudio.com/listener for privacy information.

One Distillery, Two Time Zones, and Corsets and Whips, Oh My! Husband-and-wife team BIll and Johanna Welter came to whiskey through very different paths - thankfully, their union has produced not one, but two distilleries from which Journeyman's whiskies and spirits spring forth. Bill's passion for golf led him to St. Andrews, Scotland; Johanna's path led through hospitality, drinking whiskey at a time when "most women were drinking cosmos". Somehow, Journeyman is still an under-the-radar distillery, albeit one with two locations (in Three Oaks, Michigan and Valparaiso, Indiana). For those in the know, they're producing some of the best wheat and wheated whiskey in the country, and for this episode I got to try their high-rye cask strength bourbon which, for my mind, might be even better than their wheaters. And to be clear, their wheated products are exempt from my recent distaste for wheaters...they are complete whiskies, whether one grain or multiple, and remain some of the few I'd have on my shelf. Journeyman also holds distinction as a long-tenured distillery in the craft scene, launched in 2011 during the end of the first wave or beginning of the second (Bill wasn't quite sure, so we'll hedge!). They've turned that presence into their own formal and informal mentorship programs, lending help and knowledge to a new generation of distillers. We also touch on the impact of recent tariffs and their Ingrained program, opening up contract distilling to producers without their own capacity in Journeyman's new 140,000 square foot Valparaiso location. Back to Michigan for Part II of Whiskey Business! I have a great interview for you with Bill Welter, the owner of Journeyman Distillery in Three Oaks, Michigan. I got this interview the same day (in the same room) as the one from episode 46 with Marty Duffy. Bill's got some stories about starting out craft distilling in the early years, and we talk about Three Oaks, a beautiful little spot just two miles from Lake Michigan. Then I get a teensy bit political, but not in the way you're maybe thinking. It involves gospel music, beer, and home-baked cookies; how bad can that be? I've also got some news about my new book, coming out this fall, and I taste a 19 year old wheat whiskey. Next episode: not 100% sure. Okay, I have no idea at all. I've got two weeks; anyone want to do an interview? Cheers!
