Chef Bio: Fueled by passion, grit and a knack for artful innovation, David Burke is one of the best known and most respected chefs in modern American cuisine with his signature whimsical, boundlessly creative approach to food. In addition to being an internationally celebrated chef, Burke is a restaurateur, artist, philanthropist, businessperson, author, educator, art collector, puppeteer, minister and a doctor of business administration, honoris causa. David Burke Hospitality Management (DBHM) owns, manages, licenses, and consults with restaurants, hotels, clubs and schools worldwide. Currently, Burke and his DBHM team operate or orchestrate the culinary component of 20 restaurants and a retail- commercial bakery. They also oversee a growing roster of David Burke branded products, including cookware, bakeware, steak sauce, cutlery, and wine. At just 26, Burke's kitchen mastery won him the executive chef position of New York City's legendary River Café, where he earned a prestigious three-star review from The New York Times. While at River Café, he became the first (and remains the only) American to win the prestigious Meilleurs Ouvriers de France Diplome d'Honneur, cementing his status as a leading chef on the global culinary stage. He subsequently won Japan's Nippon Award for Excellence, and the Robert Mondavi Award of Excellence, all of which earned him a place in James Beard's Who's Who of Food and Beverage in America. Burke has been nominated twice for James Beard's Best Chef and was a familiar face on the popular Top Chef TV show. After opening several restaurants with the founder of the iconic Smith & Wollensky steakhouse brand, and having established a remarkable reputation, Burke set his sights on growing his brand. The first building block was the highly regarded David Burke & Donatella, which debuted in 2003. He went on to form a hospitality company that owned and operated numerous award-winning restaurants around the country. It was during this period that Burke gained US patents for several innovations, including his famous Himalayan salt dry aging process for beef. In 2015, he founded DBHM to further expand his footprint and to showcase what had become he culinary, decorative, and operational hallmarks of the David Burke brand. The advent of the Covid-19 pandemic threatened that growth; however, Burke continued to push forward. He created the #Feed the Heroes program, which prepared and delivered more than 100,000 meals to frontline workers and charities. And, rather than retrenching, he opened eight new Burke-branded restaurants in North Carolina, Saudi Arabia and his home state of New Jersey between March 2020 and the send of 2022. A feat that helped earn him an Entrepreneur of the Year Award from Ernst & Young. In New Jersey, where he now has nine restaurants and a bakery, Burke also established the David Burke Scholarship at Brookdale Community College for which his annual donation of $10,000 pays the tuition for two students every year – one a culinary arts major, the other majoring in hospitality management. With the pandemic in the rear-view mirror, he is focusing on building a national presence for what is now Dixie Lee Bakery by David Burke, establishing Red Horse by David Burke as a burgeoning steakhouse brand along with that of The Fox & The Falcon by David Burke. In 2023 he opened the second and third Red Horse, along with the first and second Fox & Falcon. Indeed, 2023 was a banner year for Burke with the opening of six restaurants and being awarded an honorary doctorate in business administration by Johnson & Wales. It also saw him enter the fast casual arena with the December debut of the innovative Park Ave Kitchen by David Burke, a restaurant showcasing two concepts – a 50-seat European-style grab-n-go cafe with service and a chic modern American brasserie for upscale dining. So far in 2024, Burke has opened Bernie's at the Red Horse by David Burke in New Jersey's historic Bernards Inn as a live entertainment venue and launched the G.O.A.T. Pizza brand, with its first Cornelius, NC location, his third brand launch I three years. Burke is currently building out a waterfront restaurant in Palm Beach County; it's 2025 will mark his first entry into the Florida market. From the 1960s through the 1990s, the most common job for women in the United States was clerical work. Even as college-educated women obtained greater opportunities for career advancement, occupational segregation by gender remained entrenched. How did feminism in corporate America come to represent the individual success of the executive woman and not the collective success of the secretary? Allison Elias argues that feminist goals of advancing equal opportunity and promoting meritocracy unintentionally undercut the status and prospects of so-called "pink-collar" workers. In the 1960s, ideas about sex equality spurred some clerical workers to organize, demanding "raises and respect," while others pushed for professionalization through credentialing. This cross-class alliance pushed a feminist agenda that included unionizing some clerical workers and advancing others who had college degrees into management. But these efforts diverged in the 1980s, when corporations adopted measures to move qualified women into their upper ranks. By the 1990s, corporate support for professional women resulted in an individualistic feminism that focused on the needs of those at the top. Meanwhile, as many white, college-educated women advanced up the corporate ladder, clerical work became a job for lower-socioeconomic-status women of all races. The Rise of Corporate Feminism: Women in the American Office, 1960-1990 (Columbia UP, 2022) considers changes in the workplace surrounding affirmative action, human resource management, automation, and unionization by groups such as 9to5. Baggett's Making No Compromise: Margaret Anderson, Jane Heap, and the Little Review (Northern Illinois UP, 2023) is the first book-length account of the lives and editorial careers of Margaret Anderson and Jane Heap, the women who founded the avant-garde journal the Little Review in Chicago in 1914. Born in the nineteenth-century Midwest, Anderson and Heap grew up to be iconoclastic rebels, living openly as lesbians, and advocating causes from anarchy to feminism and free love. Their lives and work shattered cultural, social, and sexual norms. As their paths crisscrossed Chicago, New York, Paris, and Europe; two World Wars; and a parade of the most celebrated artists of their time, they transformed themselves and their journal into major forces for shifting perspectives on literature and art. Imagism, Dada, surrealism, and Machine Age aesthetics were among the radical trends the Little Review promoted and introduced to US audiences. Anderson and Heap published the early work of the "men of 1914"―Ezra Pound, James Joyce, William Butler Yeats, and T. S. Eliot―and promoted women writers such as Djuna Barnes, May Sinclair, Dorothy Richardson, Mina Loy, Mary Butts, and the inimitable Baroness Elsa von Freytag-Loringhoven. In the mid-1920s Anderson and Heap became adherents of George I. Gurdjieff, a Russian mystic, and in 1929 ceased publication of the Little Review. Holly A. Just experiment, test it out whether it's in, you know, traditional assessment or nontraditional assessment. And so in many ways, we need to just practice that. We need to do that, right? We have this new stuff. So experiment play with it, iterate, see what works And then you kind of go from there. And I think that we all have this desire um from the instructor side for perfection. We want, we think that and I think this is an error. We think that the best way to serve our students is to give them a fully realized polished product, right? Which is the course. But I think the exact opposite is true. I think something changes when you tell students that I'm trying something new, I'm gonna try a different form of assessment and I want your feedback about how it worked. I think that fundamentally changes the feel of the virtual room or actual physical room. So I think that the culture of experimentation is something we need to really, really conserve and prize because that's, that's what we want our students to do. You want them to experiment and play?....sometimes the key to making an assignment A I proof is to create a better assignment.So normally with the essay form, I would spend the first hour looking, not even reading anything, not even like doing like what we all do and what, what we like, you know, giving feedback and engaging with ideas. But going through the Turnitin reports, scanning them, finding information. I would lose an hour to two hours. And then sending emails to students that it came up a 70% on Turnitin. So I'm not doing that anymore. I no longer have that task. So the, the amount of time that I put to create the assignment I save later on at least a little bit.It's not that you're you're saving time but repurposing time and how much better time spent for you and for the students to be engaged in reading their thinking and having conversations about their thinking. That's such a more enriching learning opportunity for everybody involved, the educator and the students versus what we're doing now.What assessment can I create today that I continue to teach? One year, five years, 10 years down the road? They are not supposed to have muscles that are too big, they are not supposed to be too tough, they are not supposed to be too masculine or “look like men,” and they are not supposed to be queer. A former college athlete herself, Michelle J. Manno spent a full season with a highly competitive NCAA Division I women's basketball program as one of the team's managers. In vivid detail, she takes us on the court, on the team bus, into the locker room, and to championship games to show the intense dedication that these women give to the game. She found, perhaps unsurprisingly, that these extremely talented women were strictly policed around the presentation of their gender and sexuality, especially the athletes who were Black. Women's college basketball is big business—top teams bring in millions of dollars in revenue for their schools. Women's NCAA games are broadcast regularly on sports networks, and many of the top players and coaches are household names. Yet these athletes face immense pressure to be more than successful at their sport. They must also conform to expectations about gender, sexuality, and race—expectations that are often in direct contrast to success in the game. They are not supposed to have muscles that are too big, they are not supposed to be too tough, they are not supposed to be too masculine or “look like men,” and they are not supposed to be queer. A former college athlete herself, Michelle J. Manno spent a full season with a highly competitive NCAA Division I women's basketball program as one of the team's managers. In vivid detail, she takes us on the court, on the team bus, into the locker room, and to championship games to show the intense dedication that these women give to the game. She found, perhaps unsurprisingly, that these extremely talented women were strictly policed around the presentation of their gender and sexuality, especially the athletes who were Black. They were routinely monitored, banned from engaging in certain activities, and often punished for behavior that put their queerness, Blackness, and masculinity on display. Convincingly conforming to conventional expectations of gender and sexuality—from the clothes they wore to the people they dated—was yet another challenge at which they needed to excel.
