The British government has taken steps to halt the prosecution of soldiers responsible for the deaths of civilians in Northern Ireland, most of whom had no connection to paramilitary activities. These killings were part of a ruthless dirty war that commenced in 1970 when Brigadier Frank Kitson, a counter-insurgency specialist, was sent to Northern Ireland. Kitson had spent decades in Britain's colonies refining old, and developing new, techniques which he applied in Northern Ireland. He became the architect of a clandestine war, waged against Nationalists while ignoring Loyalist atrocities. Kitson and his colleagues were responsible for: - The establishment of the clandestine Military Reaction Force (MRF) which carried out assassinations on the streets of Belfast of suspected IRA members; - They unleashed the most violent elements of the Parachute Regiment [1 Para] to terrorise Nationalist communities which, they adjudged, were providing support for the Official and Provisional IRA; - Spreading black propaganda designed to undermine Republican but not Loyalist paramilitary groups; - Deployed psychological warfare techniques, involving the torture of internees; - Sent Kitson's 'Private Army' - Support Company of 1 Para - to Derry where they perpetrated the Bloody Sunday massacre. The British Widgery and Saville inquiries did not hold Kitson and his elite troops accountable for Bloody Sunday. Kitson's Irish War lays bare the evidence they discounted: Kitson's role in the events leading up to and surrounding that massacre; evidence from a deserter from 1 Para who joined the IRA; a deceitful MI5 agent; a courageous whistle blower whom the British state tried to discredit, and much more, all of which points to a motive for the attack on the Bogside. Two Great Chefs: Chicago's Evolution as a Food Mecca John Hogan and Tony Mantuano Come join us as two of Chicago's most acclaimed chefs, John Hogan and Tony Mantuano, look back on their 40+ year careers in Europe and Chicago, and reveal how our city has evolved as a world class food destination since the 1980's, the significant changes in the restaurant industry, the farm-to-table movement, and their vision of restaurants in the future. BIOS Chef John Hogan began his career in the 1979 learning the craft of French cuisine in some of Chicago's finest restaurants. In 1987 he was contacted by Chef Jean Joho at the four-star Everest. Chef Joho took Hogan under his tutelage and groomed him to run the kitchen. Later Chef Joho recommended Hogan to Georges “Kiki” Cuiance, where he spent the next five years developing his style of French food. Kiki's Bistro is where he earned many accolades in both local and national press, He then was tapped by David Burke to run the Chicago outpost of Park Avenue. Later he fulfilled his dream of opening his own French restaurant, Savarin. When he opened Savarin, the Chicago Tribune named Hogan as one of the “Top 10 Chefs in Chicago. Following Savarin, Hogan joined Glenn Keefer, who was a well-regarded Chicago steak house legend and opened Keefer's. After a successful thirteen year run, Hogan took a trip to London with his longtime friend, Tony Mantuano, where they together created the idea of a English style Roast House, River Roast, on the Chicago River. The eatery features whole roasted meats, and a charcuterie program. After being named Chef of the year in 2018 and inducted in to the Chicago Chef Hall of Fame, Hogan decided it was time to move on. He is currently pursuing his vision for the production and distribution of charcuterie, as well as a blues based television show, Chef Tony Mantuano has been credited as being among the first to bring fine Italian dining to Chicago at Spiaggia, one of the country's most decorated Italian restaurants. He is respected as a mentor to others and has received 12 nominations from The James Beard Foundation, winning Best Chef Midwest in 2005. He was also honored by President Obama for his culinary contributions to diplomacy (and cooked at the White House as well!) Most recently he served as Food and Beverage Partner at Yolan, an Italian restaurant in Nashville that was voted the #1 restaurant in America by Food & Wine readers. He is also the co-author of Wine Bar Food, a celebration of the Mediterranean. Chef Bio: Fueled by passion, grit and a knack for artful innovation, David Burke is one of the best known and most respected chefs in modern American cuisine with his signature whimsical, boundlessly creative approach to food. In addition to being an internationally celebrated chef, Burke is a restaurateur, artist, philanthropist, businessperson, author, educator, art collector, puppeteer, minister and a doctor of business administration, honoris causa. David Burke Hospitality Management (DBHM) owns, manages, licenses, and consults with restaurants, hotels, clubs and schools worldwide. Currently, Burke and his DBHM team operate or orchestrate the culinary component of 20 restaurants and a retail- commercial bakery. They also oversee a growing roster of David Burke branded products, including cookware, bakeware, steak sauce, cutlery, and wine. At just 26, Burke's kitchen mastery won him the executive chef position of New York City's legendary River Café, where he earned a prestigious three-star review from The New York Times. While at River Café, he became the first (and remains the only) American to win the prestigious Meilleurs Ouvriers de France Diplome d'Honneur, cementing his status as a leading chef on the global culinary stage. He subsequently won Japan's Nippon Award for Excellence, and the Robert Mondavi Award of Excellence, all of which earned him a place in James Beard's Who's Who of Food and Beverage in America. Burke has been nominated twice for James Beard's Best Chef and was a familiar face on the popular Top Chef TV show. After opening several restaurants with the founder of the iconic Smith & Wollensky steakhouse brand, and having established a remarkable reputation, Burke set his sights on growing his brand. The first building block was the highly regarded David Burke & Donatella, which debuted in 2003. He went on to form a hospitality company that owned and operated numerous award-winning restaurants around the country. It was during this period that Burke gained US patents for several innovations, including his famous Himalayan salt dry aging process for beef. In 2015, he founded DBHM to further expand his footprint and to showcase what had become he culinary, decorative, and operational hallmarks of the David Burke brand. The advent of the Covid-19 pandemic threatened that growth; however, Burke continued to push forward. He created the #Feed the Heroes program, which prepared and delivered more than 100,000 meals to frontline workers and charities. And, rather than retrenching, he opened eight new Burke-branded restaurants in North Carolina, Saudi Arabia and his home state of New Jersey between March 2020 and the send of 2022. A feat that helped earn him an Entrepreneur of the Year Award from Ernst & Young. In New Jersey, where he now has nine restaurants and a bakery, Burke also established the David Burke Scholarship at Brookdale Community College for which his annual donation of $10,000 pays the tuition for two students every year – one a culinary arts major, the other majoring in hospitality management. With the pandemic in the rear-view mirror, he is focusing on building a national presence for what is now Dixie Lee Bakery by David Burke, establishing Red Horse by David Burke as a burgeoning steakhouse brand along with that of The Fox & The Falcon by David Burke. In 2023 he opened the second and third Red Horse, along with the first and second Fox & Falcon. Indeed, 2023 was a banner year for Burke with the opening of six restaurants and being awarded an honorary doctorate in business administration by Johnson & Wales. It also saw him enter the fast casual arena with the December debut of the innovative Park Ave Kitchen by David Burke, a restaurant showcasing two concepts – a 50-seat European-style grab-n-go cafe with service and a chic modern American brasserie for upscale dining. So far in 2024, Burke has opened Bernie's at the Red Horse by David Burke in New Jersey's historic Bernards Inn as a live entertainment venue and launched the G.O.A.T. Pizza brand, with its first Cornelius, NC location, his third brand launch I three years. For decades, heavy metal has been both celebrated for its rebellious ethos and criticized for tolerating reactionary practices, from casual misogyny to far-right ideologies. Yet, as David Burke's compendium from Revol Press, What's Left of Metal, argues, there exists within metal a powerful current of leftist social critique, challenging capitalist systems, authoritarian structures, and the commodification of culture. Metal, Burke and his contributors assert, is more than an outlet for rebellion; it is a space where leftist politics and radical critiques of power can thrive. As the compendium notes, “metal is a space where the contradictions of modern life—alienation, repression, and exploitation—are confronted head-on, yet it is also a culture that has often been co-opted, commodified, and neutralized by the very systems it seeks to challenge.” (What's Left of Metal). This duality raises important questions: how does metal retain its radical potential while being recuperated into mainstream culture? Is there a leftist core to metal's ethos of resistance, or is the genre too compromised by its reactionary tendencies? Our conversation today with David Burke will explore these questions, focusing on the intersection of metal and leftist politics, the genre's potential to contribute to revolutionary praxis, and how metal's critique of society can be weaponized for the left in the contemporary moment of permanent crisis.
